Cook the rice according to packet instructions (approx 15 min). Drain, rinse in cold water, then drain again.

Place mirin, vinegar, tamari, oil, juice and chilli in a large bowl. Add cucumber, chicken, herbs, onion, peanuts, and rice and toss to combine. Serve with extra mint and coriander and sweet chilli, with lettuce leaves to wrap if desired.
