1 1/2 cups (300 grams) jasmine and wild rice blend 1/3 cup (80 milliliters) mirin 2 tbsp rice vinegar 1 tbsp tamari or soy sauce 1/4 tsp sesame oil 1 tbsp lime juice 1 small red chilli, seeded, fi nely chopped 1 telegraph cucumber, halved, sliced on the diagonal 2 (about 380 grams) smoked chicken breast fillets, finely shredded 1/4 cup chopped mint, plus extra leaves to garnish 1/4 cup chopped coriander, plus extra leaves to garnish 1 small red onion, very thinly sliced 1/2 cup chopped roasted peanuts Sweet chilli sauce, to serve Lettuce leaves (optional), to serve

Cook the rice according to packet instructions (approx 15 min). Drain, rinse in cold water, then drain again.
Step 2
Place mirin, vinegar, tamari, oil, juice and chilli in a large bowl. Add cucumber, chicken, herbs, onion, peanuts, and rice and toss to combine. Serve with extra mint and coriander and sweet chilli, with lettuce leaves to wrap if desired.
