Heat tomato juice and pour over bulgur wheat and cover with plastic wrap and let sit for 15 minutes, or until wheat is soft.

Step 3

In a sauté pan heat the olive oil and add the onion and garlic, sauté till soft.

Step 4

Add the carrots and celery and sauté 7 minutes until vegetables are tender.

Step 5

Add the peppers and sauté 5 minutes more.

Step 6

Now add the beans and all the spices.

Step 7

Taste and adjust for heat.

Step 8

Add the bulgur wheat and taste again.

Step 9

Serve hot topped with some chopped red onion and chopped raw tomato and some shredded cheddar cheese.
