Step 1
Preheat your oven to 375 degrees/F and prepare a 9x12 (you can also use a 9x9) baking dish by spraying with non-stick spray.
Step 2
Prepare your strawberries and rhubarb and place in an even layer on the bottom of the baking dish.
Step 3
In a medium bowl, add the flour, sugar, cinnamon, baking powder, and egg and mix until you get a crumble. I found it was easier to mix with my hand.
Step 4
Sprinkle the crumble over top the strawberries and rhubarb in an even layer.
Step 5
Slice the butter into thin pats and place over the top of the crumble in an even layer.
Step 6
Bake for 40-45 minutes until the top is golden brown.
Step 7
Remove from the oven and serve while warm with a scoop of vanilla ice cream.
