Preheat oven to 400 degrees F.

Toss mushrooms with 1/4 cup olive oil. Place on a sheet pan, round side up, and roast for 10 minutes. Flip mushrooms and roast for 5 more minutes. Remove from oven, drain any excess liquid off pan and blot any excess moisture off mushrooms. Sprinkle with salt and pepper.

Place crackers in a food processor and process until they are fine crumbs.

Mix the cracker crumbs, cheese, garlic, parsley, thyme, salt, pepper, and cayenne in a medium bowl. Add 2 tablespoons of olive oil and stir to combine. Add a bit more oil if necessary, until the mixture holds together.
Step 6
Fill each mushroom with filling, using your fingers to pack it in tightly.
Step 7
Bake for 20 minutes, until filling is golden brown. Cool for a few minutes then serve.
