Step 1
Get a large bowl and add the flour, salt and caster sugar. In a separate bowl or jug, whisk together the egg, milk and oil.
Step 2
Pour the milk and egg mixture into the flour and, using a whisk or fork, beat until you have a smooth batter. Keep mixing until any lumps disappear. Let the batter stand for a few minutes.
Step 3
Heat a non-stick frying pan over a medium heat and add some olive oil. When it's hot, add a ladle of batter. Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown and the pancake has risen.
Step 4
Repeat the process until the batter is used up. I keep the pancakes warm in some tin foil while I am making the other pancakes.
Step 5
Serve with honey and blueberries, topped with yoghurt, or bananas and chocolate sauce.
