Step 7
Heat a broad non-stick pan and place the sesame seeds in it. Dry roast the sesame seeds for 1-2 minutes on a medium flame till they are slightly darker in color and start releasing a nutty aroma. Since the seeds heat up very fast, make sure to keep on stirring them to avoid burning. Transfer to a plate to cool completely. Transfer the cooled seeds to a small mixer jar. Then add the olive oil. These two ingredients are the basic ingredients for a tahini. Since this is a dip, we are also adding other flavors to complement this paste, like lemon juice. Then finally add the garlic and salt. Close the lid and blend this to a coarse paste. The coarse sesame seed paste brings out a different textural element that goes well with the smooth curd. Tahini is an essential middle eastern paste that is used in many of their food items. You can look at the recipe of how to make tahini paste here. Once blended, add the tahini paste to the whisked curd. Mix this well till the entire paste is incorporated well with the curd. Spoon the Tahini Dip (Tahini Sauce) into a bowl. Garnish Tahini Dip with fresh parsley and refrigerate before serving. For all the flavors to really shine through, let the Tahini Dip sit in the refrigerator for atleast 30 minutes before serving. Serve Tahini Dip (Tahini Sauce) as a part of a Lebanese meal or as a dip with Lavash and Pita bread.
