Add your chickpeas & reserved brine to a bowl and mash them together.

Step 2

Add the tahini, oil and lemon juice.

Step 3

Mix them together, thoroughly.

Step 4

Now add the garlic, cumin & cayenne pepper.

Step 5

Season with salt & pepper.

Step 6

Mix again and do a taste test.

Step 7

Add more tahini or lemon juice to suit your taste.

Step 8

Add to a bowl and sprinkle the top with chilli flakes.

Step 9

Serve as a hummus dip for a snack or as part of your meze table alongside other dishes.
