Step 1

Heat a large soup pot over medium-high heat and add the olive oil. Once hot, add the onion, garlic, ginger, turmeric, and salt and sauté for 3-4 minutes, stirring frequently.

Step 2

Add the bell pepper, carrots, and celery and sauté for another 3-4 minutes. Add the chicken broth and shredded chicken and raise heat to high. Once boiling, reduce to medium-high and simmer for 10 minutes.

Step 3

Once soup has simmered, add the kale and stir until wilted. Add lime juice and cilantro and stir to combine. Season to taste with salt and pepper. Serve with extra cilantro and lime wedges!
