Step 1
Generously season steak on both sides and let sit out until your BBQ is ready.
Step 2
Build a small fire so that you can keep the temps around 250°. You want to use indirect heat! Add a couple of chunks of your favorite wood. I used hickory.
Step 3
Cook/smoke your tomahawk to an internal temp of 119°. This took me about 1.5 hrs but it will depend on your cooker and what temps you are running at. Using a thermometer is really key!
Step 4
Take the tomahawk steak off and place a grate near the fire and let it get nice and hot.
Step 5
Sear each side of the steak for 3 - 5 minutes. Keep a close eye on it so it doesn't burn. These are very fatty so flames will happen!
Step 6
Let rest for 10 minutes before slicing. You can top it with your favorite compound butter for extra richness but these beautiful steaks will be delicious either way!
Step 7
This is for a medium rare steak. Adjust times and temps to your preferences.
