Step 1

Take one pound of ground beef and form it into two half-pound patties (8 ounces each) that are 1.5-2 inches thick.

Step 2

Preheat oven to 200 degrees F. While the oven is preheating, let the burgers sit at room temperature for 15-20 minutes to take off the chill.

Step 3

Pat the meat dry with a paper towel. Season the burger patties with your favorite seasonings.

Step 4

Place the burgers on a wire rack over a baking sheet and place it in the oven.

Step 5

Cook the burgers for about 30-45 minutes or until the burgers reach the desired temperature. Burgers will be rare at 120F and medium at 130F. Cook for longer if you'd like them to be medium well or well done.

Step 6

Remove the beef from the oven and place foil over the top for 15 minutes.

Step 7

Add cooking oil to a large pan or cast iron skillet. Turn the heat to high and let it get hot. Sear the burgers on each side for 60-90 seconds on each side, or until nice and browned all over.

Step 8

Remove the beef from the heat and add foil back to the top. Let it rest for 5 minutes before enjoying it.

Step 9

Turn the grill or smoker to 200F and let it preheat with the lid on.

Step 10

Once preheated, place the burgers on the grill or smoker and cook for about 45 minutes or until they reach an internal temperature of 120-130F.

Step 11

When they have reached the desired temperature, remove them from the grill or smoker and place foil over the top. Let them rest for 5 minutes while you prepare to sear them.

Step 12

Turn the grill or smoker to high heat, around 500F. Sear the burgers on each side for 60-90 seconds or until nice and browned all over.
