Preheat Traeger Grills or Pitt Boss or whatever pellet grill you’re using to 225 degrees F.

Season pork chops. First, pat them dry with paper towels. Then drizzle olive oil on pork chops, rubbing it all over. Then sprinkle all over with BBQ rub, including the edges. Massage in the spices.
Step 3
Smoke bone in pork chops. Add them directly to the grill grates and close the lid of the pellet grill. Hit the “super smoke” feature button on the Traeger if that’s your preference for extra smokey flavor.
Step 4
Remove smoked bone-in pork chops when done to your desired temperature (or a few degrees before reaching the done temp). In the Sip Bite Go demonstration, the bone in pork chops were removed from the Traeger at 140 degrees F, so they could be covered in foil and come up to 145 degrees F (medium) while resting. Use an internal read thermometer to know when they’re done. Exactly how long to smoke bone in pork chops depends on how thick they are and how hot the grill remains during the smoke time (whether or not you’re opening the grill and heat is escaping). Finish smoked bone-in pork chops by resting them for about 10 minutes. Serve with your favorite condiments.
