How to Cook Smoked Pork Chops

Pork Chops (smoked)

Tbl. Olive Oil

Salt (if desired)

Pepper (if desired)

Heat a skillet to medium-high heat. Add Olive oil or vegetable oil.

Add the Smoked Pork Chops. Cook approximately 4 minutes. Until they start to caramelize.

Turn and cook the other side another 3-4 minutes. Let sit a few minutes so the juices stay in the meat.

Serve

These smoked pork chops are thick, bone-in chops coated in homemade BBQ spice rub and smoked at low temperature until tender and juicy. An easy and unique dinner option that's packed with flavor!

Smoked Pork Chops

water (divided use)

kosher salt (do not use table salt)

sugar

allspice

fennel seeds (lightly crushed)

peppercorns

bay leaf

garlic (crushed)

thyme (or 1 teaspoon dried thyme)

olive oil

BBQ rub

Pour 1 cup of boiling water into a large bowl that will fit all of the pork chops. Make sure the bowl will fit into your refrigerator.

Add the salt and sugar to the water and stir until dissolved

Add the allspice, fennel seeds, peppercorns, bay leaf, garlic and thyme to the bowl.

Add 7 cups of very cold water to the bowl and stir to combine

Place the pork chops in the bowl, making sure that they're completely submerged. You can add more water if needed.

Cover the bowl and place it in the refrigerator for at least 6 hours, or up to 24 hours.

Remove the pork chops from the brine and pat dry with paper towels

Preheat an electric smoker to 250 degrees F. Load apple wood chips into the smoker.

Preheat a grill, skillet or grill pan to medium high heat

Drizzle the olive oil over the pork chops, then rub the BBQ spice onto both sides.

Place the pork chops on the grill or grill pan and cook for 2-3 minutes per side or until just slightly charred.

Place the pork in the smoker and cook for 45-60 minutes or until a thermometer inserted into the thickest part of the pork chop registers 145 degrees F.

Let the pork chops rest for at least 5 minutes, then serve.

These smoked pork chops are so easy and so delicious!  An optional brine and a quick rub and you are good to go!

Easy Smoked Pork Chops

pork chops (bone in, 1/2 to 3/4 inch thick)

black pepper

paprika

brown sugar

salt

dry mustard

cayenne pepper

Option step - brine pork chops.  See notes for link to brine recipe.

Preheat wood pellet grill to 225 and fill with your favorite wood pellet - we used hickory.

Combine rub ingredients in a small bowl.

Pat pork chops dry and sprinkle generously with rub, patting it int.  Let pork chops sit for 30 minutes at room temperature.

Place chops directly on grill and cook until temperature reaches 145.  (Mine took an hour and 15 minutes.

You can flip the pork chops about half way through if you&#39;d like, but with the excellent heat circulation, I usually don&#39;t bother!

Let rest for 5 minutes before serving.

Prepare smoker to 250 degrees F according to manufacturer's directions.

Sprinkle rub on both sides of pork chops. How much you apply is really up to how much you'd like on your pork chops!

Place pork chops on prepared smoker. Smoker for about 1 hour or until the internal temperature of the pork chop reaches 145 degrees F.

Remove pork chops from smoker and let rest for about 5-10 minutes. Serve.

Thick cut Bone-in Pork Chops

Your Favorite BBQ rub

Your Favorite BBQ sauce ((optional))

Apply the BBQ rub to your pork chops on both sides and let the rub &quot;soak in&quot; for about 20-30 minutes while you start up your pellet grill.

Fill the hopper with pellets, turn on and run the pellet grill through the start up process, clearing out th white &quot;start-up&quot; smoke.

Turn the heat on the pellet grill to 300°F. If your pellet grill has the option to open any holes or vents in the drip pan for more direct heat, go ahead and do this.

Once the pellet grill is at 300°F, place the pork chops in the cooking chamber on the grill grates, over the direct heat is applicable.

Close the lid, if using any direct heat, flip the pork chops about every 10 minutes until they are finished cooking.

Optional: After about 10-20 minutes, brush the pork chops with BBQ sauce and close the lid. After 10 minutes, flip and brush the other side.

When the internal temperature of the smoked pork chops have reached 145°F, remove them from the pellet grill.

Let the pork chops rest for about 10 minutes before serving to let the juices distribute.

Preheat Traeger Grills or Pitt Boss or whatever pellet grill you’re using to 225 degrees F.

Season pork chops. First, pat them dry with paper towels. Then drizzle olive oil on pork chops, rubbing it all over. Then sprinkle all over with BBQ rub, including the edges. Massage in the spices.

Smoke bone in pork chops

Smoke bone in pork chops. Add them directly to the grill grates and close the lid of the pellet grill. Hit the “super smoke” feature button on the Traeger if that’s your preference for extra smokey flavor.

Remove

Remove smoked bone-in pork chops when done to your desired temperature (or a few degrees before reaching the done temp). In the Sip Bite Go demonstration, the bone in pork chops were removed from the Traeger at 140 degrees F, so they could be covered in foil and come up to 145 degrees F (medium) while resting. Use an internal read thermometer to know when they’re done. Exactly how long to smoke bone in pork chops depends on how thick they are and how hot the grill remains during the smoke time (whether or not you’re opening the grill and heat is escaping). Smoking bone in pork chops takes about 70-90 minutes in my experience, but exactly how long to smoke bone in pork chops will depend on how thick they are and how many times you open the grill, allowing heat to escape.

Finish smoked bone-in pork chops

How To Smoke Traeger Pork Chops

Learn how to make smoked pork chops on a pellet smoker. These delicious pork chops make the perfect main course using a pellet grill.

Traeger Smoked Pork Chops

Combine the seasoning mix and evenly distribute over the meat. Then, place the meat in the refrigerator, uncovered for 4 to 6 hours.

Preheat your smoker to 225° F. Place the seasoned meat on the the smoker and allow to smoke to an internal temperature of 145°. About 60 to 90 minutes, depending on the thickness of the chops.

(Optional) Slather a bit of the BBQ sauce on each porch chop and reverse sear at the end.

Tend the meat loosely with foil and allow to rest at least 5 minutes before serving. Serve with optional barbecue sauce.

Smoked pork chops don&#x27;t have to be something you have to just eat outside of home thanks to these simple directions and ingredients you too can smoke your own pork chops on your home smoker or big green egg.

bone-in, 1¼ inch thick pork chops

garlic

apple cider vinegar

water

wood chips

pork seasoning salt

barbecue sauce

Begin by preparing the brine by combining the brown sugar, salt, mustard, and garlic clove which has been smashed with the backside of a knife. Heat the vinegar to a just start to boil. Pour over the dry ingredients and then add the water. Stir to dissolve the sugar and salt. Let come to room temperature.

Place the pork chops in a large bag or bowl and cover with the brine. Refrigerate for at least 30 minutes but can set overnight.

30 minutes before grill time, soak the woodchips and get the Big Green Egg coals going. When the smoker is hot, adjust the temperature to a steady 250°.

Drain the woodchips and then add to the grill, spreading them out. Place the diffusing plate in the grill over the coals and chips. Place a drip pan with water or brine in it on the diffuser. Place the grill grate on top.

Remove the pork chops from the brine. Rinse them off and pat them dry.

Season with the pork salt.

Place on the 250° smoker. After 30 minutes, flip the pork chops and place a digital thermometer in them. Smoke until the internal temperature is 145°.

Remove from grill and place on a plate and cover for 10 minutes to rest.

Serve with barbecue sauce.

Smoked Pork Chops (Reverse Sear Method)

Tbsp brown sugar

garlic (pressed)

Worcestershire sauce

tsp dried marjoram (heaping, finely ground, see note)

tsp kosher salt

tsp black pepper (finely ground, see note)

Rub the pork chops with Worcestershire sauce and let sit for about 15 minutes while you are starting your grill. Dry the meat with a paper towel, then evenly apply the salt, sugar, spices and the garlic.

Now, place the chops on preheated grill/smoker and smoke over indirect heat at about 200F-225F for about an hour to 1 ½ hours, until the internal temperature of the pork chops reaches 130F.

Move the pork chips over to direct heat and sear over high heat on both sides until the internal temperature reaches 145F.

Remove the chops from the grill/smoker, cover with foil and let rest for 5 minutes before serving.
