Step 1

Preheat oven to 180°C/350°F (fan-forced).

Step 2

In an oven proof pot (with a lid) or Dutch oven add the butter, onions and celery. Bake in the oven for 5 minutes.

Step 3

Add the garlic, rice, broth (or stock), boiling water, carrots, corn, and tuna. Mix well to combine.

Step 4

Cover with a tight fitting lid (or foil) and bake for 30 minutes.

Step 5

Remove the lid (or foil) and mix in the capsicum, broccoli, lemon juice, zest, mustard and half the cheese. Place the remaining cheese on top. Bake for another 20 minutes.

Step 6

Serve with a leafy green side salad or vegetables.

Step 7

Re-heat, covered in a low oven until just hot.

Step 8

Store in an airtight container in the fridge or freezer.
