Step 1

Line Varoma dish with a piece of baking paper, leaving a few holes exposed so steam can circulate.

Step 2

Place eggs, salt and pepper into a bowl, then lightly beat and pour into prepared Varoma dish.

Step 3

Place simmering basket onto mixing bowl lid and weigh rice into it. Rinse rice until water runs clear. Place water into mixing bowl, then insert simmering basket with rice. Place Varoma dish with egg into position, secure Varoma lid and cook 15 min/Varoma/speed 1. Carefully set Varoma with egg, aside, and stir rice with spatula, then continue to cook the rice 3-5 min/100°C/speed 4 or until rice is just cooked (see Tip). Transfer rice into a thermal serving bowl or other large bowl and cover to keep warm. Using spatula, cut egg into strips, then add to rice and stir to combine. Cover to keep warm. Clean and dry mixing bowl.

Step 4

Place spring onions/shallots (white part only) into mixing bowl and chop 3 sec/speed 5. Scrape down sides of mixing bowl with spatula.

Step 5

Add oil and ham, then cook 5 min/120°C/speed , without measuring cup.

Step 6

Add prawns, peas, corn and soy sauce, then cook 3-5 min/120°C//speed , without measuring cup, until prawns are cooked through. Transfer into bowl with rice and egg. Finely slice spring onions/shallots (green part only), then add into bowl with rice mixture and stir to combine. Season with extra salt and pepper to taste, then serve.
