Step 1
Remove the skin from the garlic cloves and ginger.

Grate the ginger and garlic.
Step 3
Mix the ginger, garlic, soy sauce, oil, and brown sugar.

Place the marinade in a container or zip lock bag.
Step 5
Place in the chicken breasts.
Step 6
Ensure the entire chicken breast pieces are covered with marinade mix.
Step 7
Place the bag in the refrigerator and let sit for 5-6 hours, or overnight.
Step 8
Pre-heat the smoker pellet grill to 225°F.
Step 9
Fill with the chosen type of wood chips.
Step 10
Place the chicken on the grill grates, in indirect heat.
Step 11
Smoke until the internal temperatures reach 165°F.
Step 12
Check with a digital thermometer or meat probe thermometer.
Step 13
Once the chicken has cooked, remove it from the grill.
Step 14
Leave it for 10-15 minutes of rest.
