How to make ginger tea with fresh ginger and leftover ginger juice pulp - an excellent immune-boosting tea with less than five ingredients and around 10 minutes to make!

How To Make Ginger Tea (Two Methods + Flavor Options)

filtered water

3.5 oz ginger (fresh)

lemon (sliced)

honey (or another natural sweetener (optional))

In a small saucepan, bring the water to a boil over medium-high heat.

Meanwhile, clean and chop your fresh ginger into 1-2&quot; pieces. I use roughly 1-2 slices of ginger per cup of tea.If you use non-organic ginger, you will want to first peel it.

Add the ginger to the saucepan* and stir, then reduce the heat to a low simmer and leave this to simmer for five minutes. You can leave it for slightly longer if you want even stronger tea.

Strain the tea into mugs/teacups and then add a thin slice ( or two) of fresh lemon to each cup ( or even some lemon juice) and a drizzle of honey. Stir well and enjoy it!

Using Fresh Ginger:

Whenever I make ginger juice, I save the pulp into teaspoon-sized servings in an ice-cube tray. Once frozen, I pop them into a silicone bag and remove them as needed.

When making this tea, remove 1-2 tsp sized pieces of pulp from the freezer and place it in a tea strainer.

Pour the boiling water over the pulp and then leave to steep for 5-10 minutes. The flavor of ginger pulp tea will differ from that using fresh ginger. Not only because of the change in the steeping method, but also the texture of the ginger.

Once steeped, add lemon slices and honey and enjoy your honey ginger tea!

In just 10 minutes, creamy ricotta cheese is whipped to perfection and served with honey, lemon and fresh herbs for an ultra flavorful combination. Store-bought whole milk ricotta, or homemade whole milk ricotta work wonderfully! Serve as dip, spread, or easy crostini appetizer.

Whipped Ricotta with Herbs and Honey

whole milk ricotta (the freshest you can get)

Tablespoon fresh mint (roughly chopped)

parsley (finely chopped)

lemon zest

olive oil (additional for baguette slices)

honey

sea salt (to taste)

black pepper (to taste)

Baguette (sliced, if using)

Place the ricotta in a small mixing bowl. Using a hand mixer with a whisk attachment or beaters, whisk ricotta for 2 minutes until it&#039;s smooth and creamy; you may still see tiny bumps of ricotta, this is ok. Place the whipped ricotta in a serving bowl or spread on a plate.

In a separate bowl, stir together the mint, parsley, lemon zest, olive oil, honey, and salt. Pour the herb and honey mixture on top of the whipped ricotta. Top with freshly ground black pepper as desired. Serve with grilled baguette slices, crackers, or vegetables.

Grilled Baguette: to serve with grilled baguette slices, brush olive oil on each side of baguette slices, and place on a grill pan over medium-high heat for 1-2 minutes on each side, until toasted. Sprinkle with salt and serve.

Crostini: Preheat the oven to 375°F. Spread the baguette slices on a baking sheet. Drizzle with olive oil (don’t drench them, dry areas are ok), and turn them over, spreading them in the olive oil a bit to coat, and flipping to coat as well. Sprinkle the slices with salt and pepper.  Toast in oven for 5-7 minutes, flipping halfway through. Watch carefully so they don’t burn.

Grilled Baguette or Crostini

Fill a small pot with enough water to submerge the kidney.

Cover and bring water to a boil over medium high heat.

Reduce the heat, add kidney and leave the lid cracked to allow heat to escape.

Thick and rich cream cheese with cucumber and fresh dill make these the very best vegan cucumber sandwiches you&#039;ll ever try!

Vegan Cucumber Sandwiches with Dill

vegan cream cheese

dill (thick stems removed and chopped)

green onion (thinly sliced)

garlic powder

onion powder

salt + pepper (to taste)

cucumber (thinly sliced (approx. 18 slices))

whole grain sliced bread

Add the cream cheese with the dill, green onion, and all the seasoning to a small mixing bowl. Mix to combine. Taste for salt and pepper and add more, if needed.

Optional: Use a sharp knife to slice the crusts off your bread for classic cucumber sandwiches. Or leave them on for added texture and fiber.

Generously spread the herbed cream cheese on 3 slices of your sandwich bread, then arrange the sliced cucumbers on top and sprinkle a little salt and pepper on your cucumber slices if desired.  Place the remaining 3 slices of bread on top of the cucumbers.

Cut each sandwich into halves or quarters and serve.

This traditional fatteh recipe (fatte) is so easy to make in around 10 minutes, with just chickpeas, pita, protein (soy mince) , yogurt and spices.

Simple Fatteh (Pita with Herby Chickpeas and Yogurt)

garlic

cinnamon

Prepare the chickpeas. I had some frozen ones and left them to thaw out while getting the rest of the ingredients ready. *

Mix the yogurt, mint, salt and smashed garlic.To make the dip more runny, add 1/4 to 1/2 cup fresh water.

Pan fry the pine nuts in the olive oil for 2 minutes.

Add the soy mince and spices and cook for another 2-3 minutes, or until cooked through.

Cut the flatbread into pieces and lay them on a baking tray.

Toast the bread in the oven, 2 minutes on each side. Keep an eye on it, so it doesn&#039;t burn.

Assemble the fatteh - add the toasted bread over the chickpeas, then cover with the yogurt dip, add the soy mins. Top with parsley.

This is a recipe for a traditional fatteh (fatte). It is so easy to make with just chickpeas, pita, protein (soy mince), yogurt, and spices, and takes just 10 minutes to put together.

This easy Air fryer mushrooms recipe without breading makes the juiciest and the most delicious mushrooms you&#039;ll have in a matter of minutes. They make a healthy vegetable side dish or snack!

Air Fryer Mushrooms

mushrooms (baby bella or white button)

salt

½ tsp black pepper

soy sauce

tbsp butter

Gently wipe the mushrooms clean with a kitchen towel to remove any dirt.

Cut the mushrooms in half. If they&#39;re big, cut into quarters. We want all the pieces the same size. Transfer the mushrooms to a large bowl.

Add garlic powder, salt and pepper and toss to coat. Pour in olive oil and soy sauce and toss so the mushrooms get coated evenly.

Preheat Air fryer to 360F.

Place mushrooms in the air fryer basket in a single layer and cook for 8 to 10 minutes until crispy on the edges. Shake the basket halfway through.

Transfer the air fried mushrooms to a serving dish and drizzle with melted butter and stir to mix. Garnish with chopped parsly and serve warm.

These tasty Air fryer stuffed mushrooms are an easy appetizer or a snack. Filled with a delicious cream cheese filling and topped with more cheese, they&#039;re cheesy, garlicky, and irresistible! Plus they get done in 10 minutes in the Air fryer.

Air Fryer Stuffed Mushrooms

mushrooms

panko breadcrumbs

mozzarella and cheddar cheese mix (grated)

Wipe the mushrooms clean with a kitchen towel to remove any dirt. Remove the stem and clean the inside of the mushroom with a small spoon to make room for the cheese stuffing.

In a small bowl, mix together cream cheese, bread crumbs, parsley, garlic, salt and black pepper.

Use one or two tablespoons of cream cheese mixture to stuff the mushrooms. Top the stuffed mushrooms with a mix of grated mozzarella and cheddar cheese.

Preheat air fryer to 360F.  Place mushrooms in the air fryer basket in a single layer and air fry for 8 to 10 minutes until mushrooms are soft and cheese is melted and gooey.

Transfer the air-fried stuffed mushrooms to a serving plate and garnish with chopped parsley.

A deep-dish style cake made in a mug in four easy steps and 10 minutes...enjoy warm with ice cream!

10 Minute Gooey Vanilla Peach Mug Cake

brown sugar

salted butter

vanilla extract

all-purpose flour

old fashioned oats

baking powder

1. Melt 1/2 tablespoon butter in a (10-12 ounce) microwave-safe mug with 3-4 peach slices and 1 tablespoon brown sugar for 30 seconds to 1 minute. 2. In a bowl, whisk 1 tablespoon melted butter with 1 tablespoon brown sugar, the egg, and vanilla. Add the flour, oats, baking powder, and salt, stirring until just combined.3. Spoon the batter over the peaches in the mug. Do not stir. Place the remaining peach slices on top. Sprinkle with 1 tablespoon of brown sugar and a pinch of cinnamon. Add 1/2 a tablespoon of butter. 4. Microwave on full power for 1 minute 45 seconds to 2 minutes (I always do 2 minutes). Serve with ice cream. ENJOY.

Spicy Blackberry Margarita Sour

blackberries

jalapeño

silver tequila

orange liquor

lime juice

egg white ((optional))

1. Run a lime wedge around the rim of your glass and coat in flaky salt. 2. In a cocktail shaker or glass jar, add the blackberries, jalapeños, lime juice, and honey. Muddle all of the ingredients together, squashing everything to release the juices from the fruit. 3. Add the tequila and orange liquor. Fill with ice and shake until combined. Strain into a glass, then pour back into your cocktail shaker. Add ice and the egg white, if using. Shake vigorously until fizzy on top, about 1 minute. Strain into a glass. Drink and enjoy!

These easy garlic chili oil noodles combine your noodles of choice (gluten-free, vegan, low-carb) with an aromatic garlic, ginger, soy sauce, and chili oil sauce for a simple 10-minute meal! Top up with extra veggies and protein for more of a meal if preferred.

Easy Garlic Chili Oil Noodles (10 Minute Meal!)

oz noodles (glass noodles, rice, ribbon, ramen, udon, even spaghetti/linguine)

oil oil

soy sauce (dark, regular, or reduced-sodium)

Tbsp sesame oil

Tbsp rice wine vinegar (or Chinese dark vinegar)

tsp ginger (grated)

chili

cayenne pepper (optional)

green onions/scallions (keep 1-2 for garnish)

Tbsp sesame seeds (+ a sprinkle for garnish)

Add the neutral cooking oil to a small saucepan and heat over medium heat until it begins to &quot;sizzle.&quot;

Meanwhile, peel and grate or mince the garlic and ginger (refer here for the easiest methods of peeling garlic and ginger) and finely chop the spring onions.

Step 1: Mise en Place

Once all the garlic chili oil ingredients are prepared, place them in a small heat-proof bowl and pour the hot oil over them. It will sizzle and smell wonderfully aromatic as it cooks the ingredients – voila, the chili oil sauce is ready!Alternatively, you can add the ginger and garlic directly to the pan and cook until fragrant (20-30 seconds) and THEN remove them from the heat and mix in the remaining ingredients. This will yield slightly crispier and fragrant ginger/garlic.

Step 2: Prepare the Garlic Chili Oil

Meanwhile, cook your choice of noodles according to their package instructions. For example, glass ribbon noodles require just 3 minutes. Most fresh noodles require just 2-4 minutes, while dry noodles need up to 5-7 minutes to be ready.

Once cooked, drain the noodles in a colander, add them to the chili oil sauce and then toss well to thoroughly coat.

Top the chili noodles with some additional sliced spring onions and a sprinkle of sesame seeds, and enjoy!For an alternative method, you can combine the sauce and noodles in a pan and stir-fry for a minute or two to infuse the noodles further with the sauce and cook away some of the liquid.

Step 3: Cook and Assemble the Chili Oil Noodles

Make ahead: you can prepare the garlic chili oil 2-3 days in advance and store it covered in the refrigerator (the oil will solidify when chilled and melt at room temperature or when reheated). Then reheat before adding to the noodles. These chili garlic noodles also work really well with leftover proteins and veggies, so feel free to use any meal-prepped ingredients.Store: allow the spicy garlic noodles to cool and then store in an airtight container in the refrigerator for 3 days. I haven’t tried freezing the cooked noodles and I don’t recommend it.Reheat: you can reheat the garlic chili oil noodles in the microwave or on the hob until heated through.

Prepare Ingredients for Shirataki Chicken

First of all, prepare all the ingredients for shirataki chicken noodles. Cut your chicken into small pieces and chop an onion. Slice your mushrooms and cut asparagus as well.

Coconut Oil and Onion

On the cooking pan, add coconut oil and let it melt. Add your chopped onion and let it caramelize.

Chicken, Salt, and Pepper

Once your onions are caramelized, add chicken pieces, salt, pepper, and cook the chicken until almost done.

Mushrooms

Once you see the chicken is done, add your sliced mushrooms and mix while still cooking.

Asparagus

Freshly cut asparagus added to the pan towards the end will ensure the asparagus is not overcooked.

Shirataki Noodles

Once your Shirataki noodles are thoroughly washed, you can add them directly into the dish as they will soak up all of the flavors from the chicken stir fry.

Make crispy hash brown patties in the Air fryer from frozen without any oil. They&#39;re ready in 10 minutes and make a great breakfast side dish!

Air Fryer Frozen Hash Brown Patties

Preheat Air fryer according to the manufacturer&#39;s instructions. Or at 400F for 3 minutes.

Brush the Air fryer basket with oil or use a non aerosol spray. Place hash browns in the Air fryer basket in a single layer. I used 4 patties.

Air fry hash browns for 5 minutes and flip them and cook for another 5 minutes until golden brown.

Serve the crispy hash browns warm. If you end up making more than one batch, you can place all the patties in the Air fryer and warm them up for one or two minutes.

On the outside, it&#039;s eerie and oh-so spooky, but take a sip, and it&#039;s perfectly sweet with a touch of spice!

Jack Skellington's Haunted White Russian

dark brown sugar

pumpkin butter ((optional))

pumpkin pie spice

(1/4 cup) vodka

(1/4 cup) Kahlua

espresso (or use black coffee)

(2-4 tablespoons) half and half or cream

1. To make the brown sugar syrup. In a medium pot, combine 1/2 cup water, the brown sugar, pumpkin butter, and pumpkin pie spice. Bring to a boil over high heat. Boil 3-5 minutes, then remove from the heat. Stir in the vanilla. Let cool. Keep in the fridge for up to 2 weeks. This makes enough for 6 drinks.

2. To make Jack Skellington&#39;s Haunted White Russian. Fill your glass with ice. Add the vodka, Kahlua, espresso, and syrup. Stir. Add the half and half and stir to combine. Garnish with cinnamon, if desired.
