Coated in a seasoned breading and then air-fried until tender and crispy, this Air Fryer Eggplant recipe is sure to be loved by the whole family!

Air Fryer Eggplant

eggplant (or two small)

salt

bread crumbs

parmesan cheese (grated)

Italian seasoning

garlic powder

eggs (beaten)

marinara sauce (for serving)

Slice eggplant into ⅓&quot; slices. Sprinkle with salt and let sit 20 minutes.

While eggplant is sitting, combine bread crumbs, parmesan cheese, Italian seasoning, and garlic powder in a small bowl.

Whisk egg with 1 tablespoon water in a second bowl.

Quickly rinse the eggplant and pat dry.

Dip each eggplant slice into the flour, then into the egg and finally into the bread crumb mixture. Spray each side of the eggplant with cooking spray.

Preheat air fryer to 380°F.  Place in a single layer in the air fryer and cook 5 minutes. Flip over and cook an additional 5-7 minutes or until tender and crisp.

Serve with warm marinara sauce for dipping.

Crispy and flavorful, this air fryer eggplant is one of our favorite side dishes! I also like to make it into a full meal by serving it over pasta with marinara sauce, fresh herbs, and dollops of cashew cream.

Preheat the air fryer to 370°F.

Sprinkle the eggplant slices with salt on both sides and place in a large colander to drain for 30 minutes.

In a shallow bowl, whisk the egg. In a medium bowl or rimmed plate, combine the panko, almond flour, pecorino, salt, and several grinds of pepper.

Pat the eggplant slices dry, dip them into the egg, and then into the panko mixture. Place on a plate as you work and then drizzle the slices with olive oil. Place in a single layer in the air fryer and air fry for 17 to 20 minutes, or until crisp and golden brown, flipping halfway through cooking. Work in batches if necessary.

Make the eggplant a full meal by serving it with pasta, scoops of tomato sauce, dollops of cashew cream, basil, red pepper flakes, and drizzles of olive oil.

Crispy Air Fryer Eggplant Rounds

Slice eggplant- After washing and patting dry, slice eggplant into 1/4 inch thick rounds.

Prepare

Prepare breading mixture- In three shallow bowls, add the 1) flour 2) beaten eggs and 3) panko, parmesan cheese, oregano and salt.

Bread

Bread the eggplant- Place the eggplant in the flour. Turn to coat several times until the eggplant is fully coated in flour. Use tongs to gently shake off excess.Next, place in the egg mixture. Use a second set of tongs to carefully turn the eggplant until it is fully coated in the eggs. Hold it above the plate to allow excess egg to drip off.Lastly, place in the parmesan/panko mixture. I find it easiest to use a spoon to gently press the breadcrumbs onto the egpplant, then turn it over a few times until fully coated.Place breaded eggplant slices on a clean plate and repeat with remaining slices until they are all coated.

Cook

Cook- Heat your air fryer to 400°F. Spritz the breaded eggplant slices with oil and arrange in the air fryer in a single layer. Cook for 5 minutes, or until the slices are golden brown and crispy *see note 3

Sweet &amp; Sticky Air Fryer Eggplant

Preheat your air fryer (if it requires it) to 400F.

Cut the eggplant into 2 inch pieces that are about 1/2 inch thick. I did a combo of triangles and rectangles. 

Place the eggplant in a large bowl and toss with 3 tablespoons agave nectar and 3 tablespoons sesame oil.

Arrange the eggplant pieces in your air fryer basket or tray in a single layer. Make sure they aren&#8217;t touching.

Place the basket or tray into a preheated air fryer and air fry for 8 minutes.

While the eggplant is air frying, whisk together the sauce with the remaining 2 tablespoons agave nectar, 1 tablespoon sesame oil, soy sauce, and hot sauce.

After the 8 minutes, if you are using trays, switch the trays so the eggplant cooks evenly.

After the 5 minutes, use tongs to flip the eggplant and brush the other side with the sauce.

Air fry for another 3 &#8211; 5 minutes until caramelized and golden-medium brown.

Transfer to a plate or bowl and garnish with scallions and sesame seeds.

ok soooo i thought i hated eggplant but i’ve been making this every week since the recipe hit my inbox. it’s THAT good!!!! i love it as a side with pad thai or fried rice. 
but honestly i have an eggplant sitting on my counter and i plan on making it for lunch for myself tomorrow 😂

I’ve honestly been skeptical about air fryers in the sense that they’re one of those kitchen items that aren’t necessary.

Feeling lazy… I found this recipe and tried to give my mum’s air fryer a try. I have to say, there is no way I would have ever gotten this texture and taste with an oven given the time and effort I put into this.

Might just be a regular meal for me. Felt a veggie dish so I just ate it over a bit of rice.

I love taking veggies and making them into snacks, and I love air frying anything I can. This Air Fryer Eggplant is both of those, and is delicious!

The first and foremost thing to do is to properly clean the air fryer. Make sure that your Air Fryer is ready for cooking a delicious meal.

Next, take a medium size eggplant and cut the top green part of the eggplant. Now cut the eggplant in the shape of small cubes of about one inch. Make sure to cut all the cubes of eggplant to a similar size.

After that, carefully take the cubes of the eggplant and put them in a fresh and clean mixing bowl. Once you are done with transferring the slices of eggplant, add the oil, and then sprinkle the spices, herbs, and salt.

Once all the spices and herbs are in the mixing bowl, toss the slices to make sure that every slice of the eggplant is coated with it.

Now that our eggplant is ready to be cooked, preheat your Air Fryer for 10 minutes, and transfer the eggplant slices in it carefully. Set the temperature at 400℉.

Leave it for at least 10 to 15 minutes for it to be cooked properly. Usually, 15 minutes is more than enough for the eggplant slices to be tenderly cooked on the inside and crispy on the outside.

Finally, let’s garnish it with some cilantro, perhaps squeeze some lime on top, and eat up!
