Dip each zucchini slice in butter, then breading.

Arrange in a single layer in air fryer basket or rack.

Air fry at 390 degrees F, for 15 to 17 minutes, or until golden brown.

Preheat the air fryer to 370°F.

Use a clean kitchen towel to pat dry the zucchini and set aside.

In a small bowl, whisk the egg. In a medium bowl, combine the panko, almond flour, Parmesan, salt, and several grinds of pepper.

Dip the zucchini slices into the egg and then into the panko mixture. Place on a plate as you work and then drizzle the slices with olive oil. Place in a single layer in the air fryer and air fry for 11 to 13 minutes, or until crisp and golden brown.

Serve immediately (they’ll become less crispy as they sit) with marinara for dipping, if desired.

Air fryer Zucchini No Breading

Cut zucchini into even bite-sized pieces and set aside. I have cut zucchini into half moon and then halved them further. These are not thin as chips or batons like fries. Though you can do those shapes as well. Time varies depending upon the shape. No need to peel the skin.

Mix together garlic powder, pepper powder and salt.

Coat the zucchini with the spice mix. Spray with olive oil or add olive oil and mix well.

If you are looking for low oil cooking then skip oil and just sprinkle a few drops of water on the zucchini to allow the spices to adhere to it.

Preheat air fryer at 390F or 200C for 5 minutes.

Put in the cut zucchini with spice mix in the basket. Air fry at 390F for 5-6 minutes till it looks nicely roasted and is cooked.

You can shake the basket midway for even cooking. The zucchini pieces shrink slightly on cooking.

I did 2 batches of cooking and the second batch took me about a minute less of air frying time. Pretty quick and easy way to make delicious roasted zucchini in air fryer.

You can make zucchini fries with the same recipe. The cooking time will be more as batons are larger in size.

Serve it as a vegetable side and enjoy your healthy treat.

Preheat air fryer to 375 degrees.

Cut zucchini into 5 inch x ½ inch thick sticks. We cut our zucchini in half lengthwise and then cut each section into thirds. Set aside.

Place eggs in a bowl and whisk.

In a second bowl, place flour, garlic salt and pepper in a bowl and mix. (If you used Italian seasoned crumbs you may want to reduce the amount of added seasoning.)

Add the Panko into a third bowl.

Dip zucchini sticks in flour, then eggs, back into the flour and back into the eggs. Last dip them into the Panko.

Spray the rack of the air fryer with oil. Place the sticks in a single layer on the rack. Spray the sticks with olive oil spray and then fry for 13-14 minutes. Sprinkle with freshly grated Parmesan cheese.

Place each quarter against the cutting board, flat side down, then cut crosswise into 3/4-inch thick half-moons so that you have chunks that are about 3/4 inch in size each. Place in a large mixing bowl.

Toss

Drizzle the zucchini with the oil. Toss to coat.

Sprinkle

In a separate bowl, stir together the panko, Parmesan, flour, salt, onion powder, and pepper. Sprinkle over the zucchini, then toss to coat the zucchini as evenly as possible.

Preheat

Preheat the air fryer to 400 degrees F. Place half of the zucchini in the air fryer basket in an even layer (no need to coat it with nonstick cooking spray).

Air fry

Air fry zucchini for 7 to 9 minutes, shaking a few times throughout, until the breadcrumbs are golden and the zucchini is tender but not mushy. Transfer to a serving plate or a parchment-lined baking sheet if keeping warm in the oven. Repeat with remaining zucchini.

Cut Zucchini

Preheat your air fryer to 390°F.

In a large mixing bowl, combine zucchini, olive oil or spray, garlic powder, onion powder, salt, pepper, and parmesan cheese. Mix until zucchini is fully coated.
