Apple Spice Cake with Caramel Sauce

Preheat oven to 350 degrees. Prepare an 8x8 dish with baking spray.

In a large mixing bowl, combine melted butter and sugars. Then add vanilla, cinnamon applesauce, dark rum, and then eggs. Make sure you add the eggs last to prevent them from getting warm from the melted butter.

Then add the baking soda, kosher salt, cinnamon, and flour. Stir until just combined, and then gradually add diced apples and mix.

Pour the cake batter into the baking dish and smooth out evenly. Bake for 35-38 minutes, or until done in the center. Remove to cool slightly.

Meanwhile, make caramel sauce. In a small saucepan, melt butter and add brown sugar. Stir well and then add vanilla and heavy cream. Whisk until well mixed and slightly bubbly. Remove and add the sea salt. Pour into a glass jar (or other small dish).

To serve, slice cake into 9 equal pieces. Serve warm with a spoonful of caramel sauce.

Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg and salt in a bowl.&nbsp;

Cream butter, sugar and eggs with a mixer. Combine with flour, add buttermilk and vanilla and mix. Fold in chopped apples and nuts with a spoon. Spray or line a 10 x 15 jelly roll pan (this is a regular baking sheet with a lip all the way round it)

I usually just line mine with aluminum foil.Spread cake mixture in pan. Bake in a preheated 350 degree oven for 25 to 30 minutes. Let cool and frost

Mix all ingredients together with mixer. Spread over cooled cake.

Sift flour with baking soda, salt, cinnamon and nutmeg.

Add flour mixture to creamed mixture. Mix until just combined.

Stir in apples, raisins, and nuts.

Pour the batter into the greased and lightly floured large bundt pan.

Bake at 325 degrees oven for 1 hour.

Remove the cake from the oven

Cool the cake in the pan for 10 minutes.

Remove the cake from the pan to a wire rack.

Cool the cake to room temperature before drizzling it with icing.

Cake Instructions

Combine all ingredients in a small bowl and mix with a mixer until smooth.

Spread the frosting over the cake. Sprinkle lightly toasted chopped walnuts on top if desired.

Preheat the oven to 350 degrees F and generously grease a 10 to 12-inch Bundt pan or tube pan.

Whisk together the flour, baking powder, baking soda, cinnamon, allspice, salt, and cloves in a bowl. Reserve 1 tablespoon of the flour mixture to mix into the chopped apples and set aside.

Combine sugar, oil, room temperature eggs, and vanilla in the bowl of a stand mixer fitted with the paddle attachment or a large bowl using an electric mixer. Beat until well combined and smooth. Gradually stir in the flour mixture until blended.

Toss chopped apples with reserved flour mixture.

Pour 1/3 of the batter into the prepared pan. Sprinkle with 1/2 of the apples and half of the walnuts. Alternate layers of batter and filling, ending with a final layer of batter.

Bake for 55 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in the Bundt pan for 10 minutes before turning out onto a wire rack to cool completely.

Preheat oven to 350 degrees

Grease and flour a baking dish.

In the mixing bowl of a stand mixer, add the cake mixes, spices, oil, eggs, vanilla and buttermilk.

Start the mixer on low speed, increasing to medium speed,

Mix for five minutes.

Fold in the diced apples and pour into the prepared cake pan.

Pour the batter into your baking dish.

Bake 35 to 40 minutes.

Insert a toothpick in the center of the cake if it comes out clean it is fully baked.

Place the cake to the side to cool.

Prepare the frosting as directed.

In a small saucepan add your milk over medium heat.

Add the flour into milk, stirring constantly, until it thickens.

Remove from heat and let it cool to room temperature.

I made this cake twice! OMG it is so good and so moist! I couldn't get the orange cake mix so I used the whole spice mix, added orange extract and omitted allspice so it wouldn't be too spicy. Delish! I also added a thin layer of emulsified orange marmalade between cake and frosting. Yummy! Candied orange peel sprinkled on top. Adding this to my recipe book! Over the moon about it!

Caramel Apple Spice Bundt Cake

butter (60 grams)

+2 tablespoons all-purpose flour (300 grams)

ginger

unsalted butter, softened (114 grams) or 1 stick

brown sugar, packed (175 grams) [1 cup less 2 tablespoons]

sugar (100 grams)

apple butter (430 grams)

caramel, room temperature (225 grams)

cream cheese, room temperature (225 grams)

Heat the cream until hot to make it easier to mix with the sugar syrup.  Set aside.

Place the water, sugar and corn syrup in a 2 quart saucepan.

Stir over medium high heat until the sugar is dissolved completely. Bring to a boil. Cover the pan with a tight fitting lid for 3 minutes. Remove the lid and continue boiling.  Alternatively, wash the sides of the pan down with a natural bristle pastry brush dipped in cold water.

Boil without stirring until the mixture becomes a medium golden color.  Swirl in the pan to even out the color.

Remove from the heat and immediately add the butter to the saucepan and stir until melted.

Pour the hot cream in all at once and stir. If some of the cream lumps up, don&#39;t worry.

Clip a thermometer onto the side of the pan if possible. Return to medium high heat and bring to a hard boil.

Continue to boil until the thermometer reaches 228°F. Cool to room temperature. To cool it quickly, after it comes to temperature, pour it onto a rimmed sheet pan where it will spread out and cool while you prepare the cake.

This yields 2 cups are about 1 pound.

Caramel

Preheat the oven to 350°F with the rack in the center of the oven. Have the bundt pan nearby.

In a medium bowl, combine the flour, baking powder, baking soda, spices and salt. Whisk to mix.

Place the softened butter, oil, brown and granulated sugars in the bowl of a mixer fitted with a paddle attachment. Beat until completely combined.

Add the eggs and vanilla and incorporate into the mixture, scraping often and into the bottom of the bowl.

Mix in half of the apple butter, followed by half of the flour. Repeat with the remaining apple butter and flour.

Spray the bundt pan well with a non-stick baking release. Dollop the batter evenly into the pan. Smooth it out.

Bake for 40 to 45 minutes or until a cake tester comes out clean. Place the pan on a cooling rack and allow to cool for about 15 to 20 minutes. Place a round cake cooling rack over the top of the bundt pan and carefully flip it over to release the cake. Allow it to cool completely before finishing.

Apple Spice Bundt Cake

It is important that the ingredients are at room temperature. Place them in the bowl of a mixer fitted with the paddle attachment.

Beat them on low to bring them together and then on medium high until they are completely combined. Scrape the sides and bottom often.

Caramel Cream Cheese Frosting

Fit a pastry bag with a 1/2&quot; plain pastry tip. Fill the bag and pipe the frosting onto the cake as shown in the pictures above.

Let the frosting set up briefly and the cake is ready to cut and serve. It can be held at room temperature for a day and then refrigerated if held longer. Bring to room temperature to serve.

Alternatively, omit the frosting and dust with powdered sugar.

Preheat oven to 350 degrees. Spray two 9-inch cake pans with cooking spray and line bottoms with parchment rounds. Set aside.

In a large bowl, whisk together the flour, sugars, baking powder, baking soda, cinnamon, nutmeg, and salt, until well combined. Add in the eggs, vegetable oil, applesauce, and vanilla; beat with an electric mixer on low speed until smooth. Fold in the diced apples using a spatula until evenly combined.

Pour even amounts of the batter into the prepared cake pans (it&#39;s helpful to use a kitchen scale for accuracy if you have one). Bake in the middle rack of oven for 35-40 minutes until a deep golden brown color. You will know the cake is done when a toothpick inserted in the center of the cake comes out clean.

Cool on a wire cooling rack; remove the cakes from their pans after about 15 minutes of cooling, peeling off the parchment and then let cool completely, about an hour.

While the cake cools, make the frosting. In a large mixing bowl, cream the softened butter using an electric mixer. Gradually add in the powdered sugar, two tablespoons of milk, vanilla, and cinnamon. Continue mixing until desired consistency is reached, adding an additional tablespoon of milk if needed.

To frost the cake, place one of the cooled cake rounds on a pedestal or serving plate. Add about ⅓ of the buttercream on top and spread over cake layer. Carefully place on the second, top layer of cake. Scoop the remaining frosting on the top of the cake and use a spatula to spread out the frosting over the top and sides of the cake. To give the cake a more rustic look, while rotating the cake, use a flat edge bench scraper to scrape off the side frosting on the cake. Place any remaining frosting on the top of the cake and use a butterknife to create waves and swirls on top if desired.

Cinnamon Buttercream Frosting

This cake was outstanding! I sprinkled a little cinnamon on top to make it pretty and brought it to a party.  There was nothing left. I was a litle (okay, alot) indimidated when one of the guests at the party was the pastry chef at a very famous Bay Area restaurant and brought her desserts, but I didn't need to be.  The cake spoke for itself.  This will forever be in my rotation. I have never had just an okay recipe from you.

This is a wonderful cake which will now be a Christmas tradition in our household!  I made my own applesauce which was so easy and better than store bought.

I made this recipe with vegan substitutes and it came out AMAZING! The edges were all caramelized goodness, the buttercream was simple and delicious and the cake held up really well with vegan egg replacement (flax seeds)! I definitely impressed my friends haha

I bake often and had never baked an apple cake before.  I decided this recipe fit the plan for mixing up a quick cake for a party.  The cake was absolutely delicious!  Every person said the same thing…moist, warm flavor and going on the list of favorite recipes.  I did not use nutmeg as I’m not a fan.  I added an additional 1/2 tsp of cinnamon instead.  For the icing I used my standard cream cheese icing which was perfect for the “ warmth” of the cake.  I will definitely bake this again!
