Ground Beef and Asparagus Stir Fry

lb lean ground beef (90% lean)

asparagus

water

tomatoes

tsp minced garlic

tsp sesame oil

cornstarch

beef broth

hoisin sauce

tbs reduced-sodium soy sauce

In a large skillet or wok, cook beef over medium heat until no longer pink; drain and set aside. In the same pan, stir-fry the asparagus, water chestnuts and garlic in oil for 5 minutes or until crisp-tender.

In a small bowl, combine cornstarch and broth until smooth. Stir in the hoisin sauce, soy sauce and ginger. Pour over vegetables. Return beef to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in tomato. Serve with rice if desired.

Cook the udon noodles according to package instructions. Transfer the noodles to a colander and rinse with cold water.

Heat the oil in a wok or large skillet over high heat. When the oil is shimmering, sauté the mushrooms for 3 minutes until they start to soften and brown.

Add the asparagus, and continue sautéing for 3 minutes. The asparagus will turn bright green.

Stir in the peas. Continue sautéing for 2-3 minutes until the peas are cooked through, the mushrooms are browned and the asparagus is crisp tender.

Stir in the garlic, ginger, white parts of the scallions, red pepper flakes, salt and pepper. Cook until fragrant, about 30 seconds.

Stir in the udon noodles and the soy sauce, giving the noodles a couple minutes to warm up.

Fold in the green scallions and sesame seeds.

An easy asparagus and mushroom stir-fry with savory garlic sauce! A great side dish for your Asian-inspired meals.

Asparagus Mushroom Stir-Fry

mushrooms (I use cremini)

green onions

Tbsp. toasted sesame oil (*oil-free option below)

vegetable broth

Tbsp. tamari (or soy sauce)

cornstarch (or arrowroot)

Make the sauce: Mince garlic, and add all sauce ingredients to a small bowl. Stir to combine and set aside.

Halve or quarter the mushrooms (wiped clean). Cut asparagus into 1-inch pieces, woody ends removed. Slice green onions.

In a large skillet (or wok) over medium-high heat, add sesame oil.*

When hot, carefully add the mushrooms and cook for 3-4 minutes.

Add the asparagus and green onions. Cook another 3-4 minutes, stirring often.

Re-stir the sauce, then add to skillet. Stir well and cook for 2-3 minutes (or until vegetables are desired tenderness).

Garnish with sesame seeds and spoon any remaining sauce over the vegetables before serving if desired.

I'm a teenager who wants to get more into cooking and WOW. This recipe is amazing!!! Very easy, and I put a lid over the pot during step 6 and let it simmer for about 7 minutes. So great and I'll come back to this one!!!

I made this tonight. About halfway through prep I realized that my mushrooms were moldy. I tossed them and made this with broccoli, asparagus, and carrots. I added one glug of maple syrup to balance the flavor. So easy and pretty yummy. Saving this recipe!
