A very tender and moist beef roast made effortlessly in the crockpot.

Crockpot Mississippi Roast (low carb)

beef roast (either chuck roast or outside round)

beef broth

5-6 Pepperoncini peppers (plus ½ cup juice)

butter

parsley

onion powder

garlic powder

dill weed

salt

Combine dried seasonings in a small bowl.

Massage outside of beef roast with seasonings. Place in the bottom of a 6qt slow cooker.

Pour beef broth in the sides of the slow cooker. Add 6-8 pepperoncini peppers and 1/2 cup of liquid from the peppers.

Place 1 stick of butter on top of the beef, cover and cook on low 8-10 hours or high 4-5 hours or until beef is fork tender.

Remove beef from the slow cooker and using a fork, gently pull apart large chunks of beef. Stir into juices.

Serve over mashed cauliflower and drizzle with juices from the slow cooker.

Keto Pork Chops al Pastor - featuring rich and smoky grilled pork chops finished with a beautiful and delicious compound butter studded with pineapple, red onion, cilantro and lime zest!

Keto Pork Chops al Pastor - Low Carb

pork

chipotle peppers

cumin

cloves

oregano leaves

apple cider vinegar

salted butter (1 stick), softened

pineapple

red onion

garlic

cilantro

lime zest

granulated erythritol sweetener (optional)

Combine the chipotle peppers, cumin, cloves, oregano, salt, vinegar and oil in a small blender cup and blend until smooth.

Cover and marinate in the refrigerator for at least 2 hours, or overnight.

Remove the pork chops from the refrigerator 30 minutes before ready to grill.

Prepare and preheat the grill to about 400 degrees Fahrenheit.

Grill the pork chops over direct heat for about 3 minutes per side, or until a thermometer inserted in the thickest part reads 145 degrees.

Remove to a clean platter and top each pork chop with 2 tablespoons of the butter mixture.

For the pork chops:

Combine all of the butter ingredients in a medium bowl and blend with a fork or spatula until fully mixed.

Store leftover butter in an airtight container in the refrigerator for up to 5 days, or in the freezer for up to 3 months.

If frozen, thaw for 30 minutes before using.

These were sooo good! The butter is a must. I will be adding this to my weekly menu.

Really delicious! Even my picky 5 year old liked the meat (she didn't try the butter)! We will add this to our regular rotation!

Absolutely delicious!  Just the right amount of spice to not be overpowering but give nice flavour.  I did have to do some subs in the butter topping because I'm allergic to pineapple.  I used an equal amount of granny smith apple instead.  Maybe not as juicy as pineapple would have been, but still delicious and worth every carb.  Also subbed fresh parsley for the cilantro because it's what I had on hand. Thanks for a new go-to for my recipe box.

This is a recipe I go to frequently cause its SO GOOD! Its one of our top favorite meals. Have made it several times and cant get enough. I have repeatedly shared this recipe with friends and family. I have even made this with chicken thighs and is equally amazing. I'm sure the topping would even be delicious on fish! Gonna have to try that next

These keto thumbprint cookies have all the flavor and texture of your favorite classic thumbprint cookies!  Low carb and gluten free.

Keto Thumbprint Cookies - Low Carb

egg,

salted butter, softened

almond flour

baking powder

powdered erythritol sweetener

vanilla extract

walnuts

sugar free strawberry preserves

Preheat the oven to 375 degrees Fahrenheit.

Combine the egg, butter, almond flour, salt, baking powder, erythritol and vanilla in a medium bowl.

Mix well with a fork until a dough is formed.

Form the dough into 1.5 inch balls and roll in the walnuts to coat.

Remove from oven and press a small dent into the center of each cookie.

Place approximately 1 teaspoon of jam in each cookie dent.

Return to the oven and bake an additional 10 minutes.

Remove and transfer to a rack or platter to cool for 30 minutes.

Cookies MUST be fully cool to stay together &#8211; until then they will be quite fragile, so handle gently when transferring.

They look amazing and I can't wait to cook them for a Christmas treat. Now to show for the best looking low carb jam I can find.

I just. Add them and they are delicious!   I think I will cut down the sweetener (I used Swerve confectioners) to 1/2 cup next time and maybe add some unsweetened coconut with the walnuts.   Delicious cookies!

These cookies were Ahmazing!! I didn’t have crushed nuts so did not roll them, my tops were browner, which is probably why. Like you, I used Smuckers SF strawberry jam, oh yum! I made 11 cookies and they were large and wonderfully soft. I put a small 92%cocoa  Lindt square on 4 of the cookies, midway along with the jam on 6. My husband and I enjoyed the chocolate last night after dinner and the strawberry cookie this morning with coffee.  I will make your recipe many more times, for sure. Next time I will soften my butter, not melt it (had to put it in fridge for a few minutes) ?

Can you use Stevia? Would it effect the carbs?

I agree with another comment about the erythritol being too much. I think next time (and there will definitely be a next time) I will use allulose, which is a little less sweet and seems to dissolve a little easier. The other change I would make is to roll the raw balls in an egg wash before the walnuts. It helps them stick better. Also be sure to bake for the full 18 minutes. The recipe was a little confusing on this point.   I had snickers SF raspberry and it was yummy. Will try the strawberry next time.

I made these this past weekend and I followed the recipe to a T. Either the baking time stated is too long or the temperature is too high, because all my cookies burned on the bottom. They were also way darker on the top than I would have liked them to be. If I were to change anything, do you recommend that I lower the temperature or that I shorten the baking time?

Our family and friends all love this recipe. We have even made this recipe without rolling the dough in nuts for a simpler version since my teen isn't a huge fan of pecans or walnuts. They are the perfect vessel for any sugar free jam. These are so very close to the texture and flavor sugary thumbprints that I grew up!!  I'm really thankful to have these as a healthier option that takes me back to fond childhood memories without any guilt.

After a year on keto (and 50 lbs lighter 👏) I was delighted to run across this overlooked recipe in my saved 'cookies' file. Have meant to make it a few times but this week was the time apparently. And OMG by FAR the best, the VERY best cookie recipe!! I thought my husband was going to cry when he ate one lol. He has also, sometimes a bit reluctantly, joined me in the keto platform but he truly misses his old friends ice cream and cookies. These cookies have hit the mark..now if he could just find keto bubblegum ice-cream 🙄 Thank you so much for all your wonderful recipes, you never let us down, but this one truly hit it out of the park!  I have one tiny tip for everyone; roll your ball of dough in the nuts each time as the dough is a little warm from your hands and the nuts cling better. If you make all the balls first they start to dry out a tiny bit, it's still workable but you have to 'encourage' the nuts to cling.

This rich and hearty keto beef stew &amp; cheesy biscuit crust is going to satisfy all of your keto comfort food cravings!  Low carb and Atkins friendly.

Keto Beef Stew &amp; Cheesy Biscuit Crust

avocado oil, oil

lbs stew beef, cut into 1 inch pieces

coconut flour

onion, chopped

garlic, chopped

celery

radishes, cut into 1/2 inch pieces

Worcestershire sauce

whiskey

water

dijon mustard

thyme leaves

xanthan gum (to thicken)

granulated erythritol sweetener

xanthan gum

almond milk

cheddar cheese

Combine the coconut flour, salt and pepper in a medium sized bowl.

Add the raw beef pieces and mix well to coat the meat thoroughly.

Heat 2 tablespoons of the oil in a large, heavy bottomed sauce pan.

Add the beef and cook over medium high heat to brown, stirring occasionally for about 5 minutes.  Remove the meat from the pan.

Add the other tablespoon of oil to the pan, then add the garlic, onion, celery and radishes.

Saute, stirring occasionally, for about 5 minutes, or until softened and fragrant.

Add the Worcestershire sauce and whisky to the pan and cook an additional 2 minutes.

Add the cooked beef back to the pan, along with the water, dijon mustard, parsley, and thyme &#8211; then stir well.  Cover and simmer for 1 hour over low heat.

Remove the cover and whisk in the xanthan gum.

Turn the heat up to medium, and simmer uncovered for 15 minutes to reduce.

To make the beef stew:

Place the butter in a medium-sized microwave safe bowl.

Microwave on high, uncovered, for 30 seconds or until melted.

Add the sweetener, almond flour, coconut flour, salt, garlic powder, baking powder, xanthan gum, egg, fresh thyme, almond milk and cheddar and mix well with a fork.

To make the cheesy biscuit dough:

Transfer the beef stew to an oven safe casserole or cast iron pan.

Top with 8 scoops or balls of biscuit dough.

Bake at 375 for 25 minutes &#8211; or until the tops are golden brown and have puffed up slightly.

Remove from the oven and cool for 10 minutes before serving.

To assemble:

This was very delicious!  I made the stew portion in a pressure cooker, 20 minutes on high, and finished in the oven as written.  I didn’t have whiskey, but I did swap water for mushroom stock.  The biscuits were light and very flavorful.

Made this last night. Simply amazing. Worth all the time and effort.

I’m just getting back into the swing of keto and wanted to make something my boyfriend would love as well. Stew is one of his favourites and I was assumed he would find it just ok but he ate almost half the recipe! He really loved the biscuits on top and how well it went with the dish. I ended up adding half a cube of beef bullion but otherwise this was a perfect fall meal. Thanks so much!

Finally got a chance to make this, on our first snowy day in NYC. It was fantastic! Only modifications I made were using rosemary instead of thyme and arrowroot instead of xanthan gum. Seriously perfect meal for a cold day stuck inside.

When I found out about radishes as a swap for potatoes - I was in heaven!  No surprise that you are using them!!  It's actually chilly here in Florida and I do love a comfy stew!  It will probably get made this week!

Made this tonight and the hubs and I agreed, we will look forward to having this again! Only two of us so I halved the recipe and still enough for one of us to have lunch!!  I did use homemade beef bone broth instead of water, and a splash or two of red wine. Make sure your pan size is appropriate, because my pan was a little too big and so my gravy dried out more than it should have. My mistake, hope you learn from it.  Flavor was wonderful! I love a good beef stew, but this didn't thrill anyone in my family and took sooo much time. Maybe I reduced it a bit too much, but it tasted just meh. And the biscuits disintegrated so that it looked like brown much by the time it was served up. Also seemed like too much salt. Apparently, this is just me, though, so maybe I did something wrong.

These biscuits are the best! I baked them separately and they are now are favorite bucuits! The stew was really good, but next time I’ll leave out Worcestershire sauce and whiskey and just use beef broth. The beef is so tender and really good.

Like all of your recipes, it was greatly appreciated and loved by everyone here :) For the Dijon I used an incredible truffle honey Dijon from Trader Joe’s. I also did swap out whiskey for red wine, and I added a can of diced tomatoes as well. The thyme and cheddar cheese in the biscuits were perfect. They kept their shape and fluffiness without issue. My family loved this recipe - the meat was so tender. I didn't have any whiskey, so I just left it out. Some of my biscuits turned mushy, but I think it was because I wasn't patient enough to reduce the stew as much as I should have. Even my 12 year old said this needs to be made again!

I’m making this for a 2nd time, because it’s sooo good.  It is very time consuming, so I chopped, prepped, and got my dry ingredients measured out the night before. Love this stew!  I've started making it in 9 oz ramekins, perfect portion size.  I sub turnips if I don't have the radishes on hand.  I also added 1/2 tsp Old Bay seasoning to the biscuits the last time I made it, and got pretty darn close to the taste of the cheddar bay biscuits from a certain sea food chain restaurant.  Great recipe!  Thanks for sharing it with us.

Changed up a bit.  Added cabbage instead of radishes.  Added extra garlic too.  Added beef broth instead of water.  Used heavy cream instead of almond milk in the biscuits.   Also added bay leaf to stew.  Smells so good and looks yummy.  Can’t wait to dig in.  Trying to figure out how to add picture of finished product.

Oh Melissa, yet another great recipe. Thank you. I live in UK and my son introduced us to Pieminister when it opened in Bristol, I think your recipe gives them a good run for their money.  Really tasty and loved the biscuit/dumpling.  We live on a narrowboat and in the cold weather have our coal/wood burning stove going day and night at the moment.  Cooked the stew slowly on top the stove for a few hours, so yummy.

Made this for dinner tonight and it was the perfect warm dish for a cold and rainy Michigan evening. I substituted beef broth for water and left out the whiskey because I don’t have any but followed the rest of the recipe and it was delicious, will definitely make again!

I made the keto beef stew &amp; cheesy biscuit crust and it was delicious! I changed things up a bit though. I normally freeze soups and stews for single meals to save time later. I made the cheesy biscuit crust into cheesy biscuits to freeze and reheat separately. I like crispy crunchy toppings. The stew freezes really well, and you definitely think you're eating potatoes rather than radishes!

The flavors in this recipe are so good, I come back to again and again.  I do find I modify to cook in instant pot and usually leave out coconut flour because of texture it gives, and thicken with a bit of of glucommanan or xantham gum.  Biscuits are usually made to the side, but are still delicious,
