Apple Banana Carrot Baby Led Weaning Muffins

A delicious way to introduce peas to baby. Mild peas paired with a fresh hint of mint - a mouth-watering combo!

Pea Baby Puree (stage one)

zucchini (roughly chopped)

mint leaves (roughly chopped)

In a medium saucepan, bring 2″ of water to a boil over medium heat. Place the zucchini in a steamer basket, and place over boiling water. Cover and steam for 5 minutes.

Add in the peas, and steam for and additional 3-5 minutes. Reserve steamer water. Let cool slightly.

Add the zucchini, peas and mint leaves to a blender or food processor and puree for 1 minute or until you have achieved desire texture. If puree is too thick, add in 1/4 cup of the reserved steamer water until you have the right consistency.

To a bowl, mix together the oat flour, baby cereal, banana, ricotta, eggs, coconut oil, apple, coconut, baking powder, lemon zest, cinnamon and a pinch of salt.

Preheat your waffle iron and lightly grease. Add 1 cup of batter to the centre of the waffle iron and cook according to manufacturers directions.

To serve, top off the waffles with a drizzle of greek yogurt and a sprinkle of berries, if desired.

Cut a banana in half. Use a knife to gently cut around the peel about 2 inches down, leaving some of the peel on so that the banana is easy for baby to hold and less slippery.

Preheat oven to 400 degrees and line a rimmed baking sheet with foil. Wash and dry the sweet potato. (You don&#39;t need to peel it.) Cut in half, then cut lengthwise into strips. (Each strip should be about the size of your finger.) Place into a bowl and toss with the olive oil. Preheat oven to 375 degrees F. Place the butter or oil into a pie plate or baking dish. Warm in the oven for a few minutes to melt. Remove from oven. Slice the apple into approximately 1/2-inch slices and discard the core. Place into the baking dish with the oil and toss to combine. Add cinnamon if desired. Bake for 28-34 minutes, or until tender when poked with a fork.Let cool slightly and serve.

Preheat the oven to 400 degrees F. Place the broccoli onto a rimmed baking sheet and toss with the olive oil, coating and mixing well until all of the florets are a little shiny and coated with oil. Roast for 15-18 minutes or until tender. Let cool slightly and serve.

Warm the oil in a large skillet over medium heat. Add the green beans and stir. Cover and cook for about 8 minutes. Remove cover and taste one to see if it’s soft enough. Cook for an additional minute or two as needed.

A simple fish pie recipe that’s quick and easy to prepare. Portion into ramekins and freeze for quick toddler meals or cook in a big dish for the perfect family supper

1kg Maris Piper potatoes, peeled and halved

plain flour

spring onions, finely sliced

fish

Dijon mustard

½ a 25 grams pack or a small bunch chives, finely snipped

sweetcorn

Heat the oven to 200C/fan 180C/gas mark 6.

Put 1kg potatoes, peeled and halved, in a saucepan and pour over enough water to cover them. Bring to the boil and then simmer until tender.

When cooked, drain thoroughly and mash with a splash of milk and a knob of butter. Season with ground black pepper.

Put 25g butter, 25g plain flour and 4 finely sliced spring onions in another pan and heat gently until the butter has melted, stirring regularly. Cook for 1-2 mins.

Gradually whisk in 400ml milk using a balloon whisk if you have one. Bring to the boil, stirring to avoid any lumps and sticking at the bottom of the pan. Cook for 3-4 mins until thickened.

Take off the heat and stir in 320g-400g mixed fish, 1 tsp Dijon or English mustard, a small bunch of finely snipped chives, handful of sweetcorn and handful of petits pois. Spoon into an ovenproof dish or 6-8 ramekins.

Spoon the potato on top and sprinkle with a handful of grated cheddar cheese.

Pop in the oven for 20-25 mins or until golden and bubbling at the edges. Alternatively, cover and freeze the pie or mini pies for another time.

Cauliflower chicken nuggets (10-12 months)

400 g skinless, boneless chicken thighs

tomato paste

60 g gluten free plain flour

milk

extra virgin olive oil

Place Parmesan into mixing bowl and grate 20 sec/speed 8.

Add quinoa flakes and chop 3 sec/speed 8. Transfer into a shallow bowl and set aside.

Place cauliflower and parsley (optional) into mixing bowl and chop 3 sec/speed 6. Scrape down sides of mixing bowl with spatula.

Add chicken, tamari and tomato paste and blend 7 sec/speed 7. Scrape down sides of mixing bowl with spatula.

Shape heaped tablespoons of mixture into nuggets (approx. 20 in total) and transfer onto a plate. Set aside (see Tips).

Place a shallow bowl onto mixing bowl lid and weigh flour into it. Combine egg and milk in a separate shallow bowl. Coat nuggets in flour, then egg mixture, then reserved quinoa crumb. Cover with plastic wrap and place into refrigerator until ready to fry.

Place a frying pan over medium-high heat and add oil. Working in batches, fry nuggets for about 6-8 minutes turning occasionally, until golden brown on all sides and cooked through. Serve topped with Parmesan shavings (see Tips).

Salmon Fritters with Sweet Potato (Baby Led Weaning Recipe)

salmon

sweet potato (cooked)

onion (diced)

garlic (minced)

tbsp fresh ginger (minced)

oats

baby spinach (minced)

Preheat oven to 350 F.

To a large skillet,  heat a tablespoon of olive oil and add the onion, garlic and ginger. Saute for 2-3 minutes until soft then add to a food processor.

Return the pan to the heat and add in the spinach. Cook until wilted, about 2 minutes. Set aside

To the food processor, add the salmon, egg, cooked sweet potato flesh (discarding the skins), onion, garlic, ginger and oats. Pulse until the mixture comes together, then add in the spinach. Pulse just until you see it mixed through.

Oil your hands and add another coating of oil to the pan. Roll the mixture into finger like fritters and pan-fry until golden brown. Transfer to a baking sheet. Continue with the remaining fritters, then finish in the oven until cooked to an internal temperature of 145 F, about another 10 minutes. Serve at room temperature or warm.
