Put two small tumblers in the fridge to chill overnight. Put 30g of the chocolate in a shallow bowl and melt in the microwave in short bursts. Dip the rim of the chilled glasses in the melted chocolate, then stand them upright so it gradually drips down the sides. Return to the fridge until you're ready to serve.

Fill a cocktail shaker with ice, then pour in the coffee-flavoured liqueur, vodka, Irish cream liqueur and double cream. Shake until the outside of the shaker is very cold.

Put a few ice cubes in the prepared glasses, then strain in the cocktail. Finely grate over the remaining chocolate and serve with a paper straw.

In a medium microwave-safe bowl, combine the heavy cream, Baileys, butter and salt. Microwave on high power until the mixture comes to a boil, 70 to 80 seconds. Watch that it doesn't boil over. Add the chocolate and let sit for about 30 seconds to melt. Using a whisk, stir until the chocolate is completely melted and the mixture is glossy and smooth. Refrigerate until completely firm, about 3 hours or overnight (to speed this chilling process up, pour the mixture into a wide, shallow bowl or pie plate). 

Place your coating(s) on a plate. Remove the chilled truffle mixture from the refrigerator. If you've had the mixture in the fridge for longer than 3 hours, you may need to let it sit out at room temperature for 10 to 15 minutes so it's malleable enough to work with.

Using a small spoon, scoop out about 2 teaspoons of the chocolate mixture. Dust your fingertips with the cocoa powder or the confectioners' sugar/cocoa mixture. Use your fingertips to shape into a rough ball. Quickly and gently roll in your palms to form into a smooth ball, then roll in your topping of choice. (If the chocolate starts to melt from the warmth of your palms, drop the truffle into the cocoa or confectioners' sugar/cocoa mixture and lightly coat, then continue rolling. You may need to wash your hands in cold water from time to time.) Place the truffles in a single layer on a plate or in a storage container, cover, and refrigerate. Remove from the refrigerator about 10 minutes before serving (keep in mind that they'll get too soft if left out at room temperature for too long). The truffles will keep for a couple of weeks in the refrigerator. They can also be frozen for up to two months.

Tip: If using confectioners' sugar for coating your truffles, mix it with an equal amount of cocoa powder for best results. When used alone, the cornstarch in confectioners' sugar can give the truffles a slightly "off" taste.

Fudgy chocolate brownies with the great flavor of Irish Cream!

Irish Cream Brownies

brown sugar

powdered sugar, (sifted)

Preheat the oven to 350 degrees F. Spray a 9x9-inch pan with nonstick spray, line with parchment paper and spray the paper too.

In a medium bowl, whisk together the flour, salt and baking powder; set aside.

In a large microwave-safe bowl, add the chocolate chips and the butter. Microwave in bursts of 30 seconds until the butter is melted and the chocolate begins to melt too. Whisk the chocolate into the butter until nice and smooth. Let it cool down for a few minutes.

Use an electric hand mixer to add the sugar, Irish Cream and eggs to the chocolate mixture and beat until mixed well. Add the dry ingredients, and beat just until combined.

Scrape the brownie batter into the prepared pan. Bake for 40 minutes, or until the top cracks slightly and a toothpick instead into the center comes out slightly gooey on the bottom of a toothpick. Remove the brownies from the oven and immediately brush the warm brownies with more Irish Cream. Let the brownies cool.

PREPARE THE BROWNIES:

Place the butter in a saucepan and heat until melted. Remove from heat and add the Irish Cream and whipping cream. Whisk in the powdered sugar. Pour the frosting on top of the brownies and quickly spread the frosting evenly to the edges to cover the brownies completely. Refrigerate until set. Chilled brownies are easiest to cut. Store brownies in a covered container. They&#039;re best if eaten within a couple of days.

Prvo skuhamo kremu : u dijelu mlijeka pjenjačom razraditi šećer, gustin i pudinge. U vrhnju, likeru i ostatku mlijeka rastopiti čokolade, potom zakuhati gustu kremu! Prebaciti u veliku posudu, prekriti površinu kreme prozirnom folijom i staviti na hlađenje.

Zakuhati sve sastojke za preljev i staviti na hlađenje dok pripremamo biskvite :

Natopiti mljevene keksiće u rumu. Istopiti maslac i čokoladu, mješajući malo prohladiti (minuticu - dvije). Pjenasto istući žumanca sa šećerom i vanilijom, umiješati kuhačom istopljeni maslac sa čokoladom, natopljene keksiće i mljevene lješnjake sa praškom za pecivo i cimetom. Možete dodati i malo allspice mješavine začina (ili začina za medenjake), odlično šmeka u ovoj torti.

Istući čvrst (ali ne krut) snijeg od bjelanaca sa zerom soli, dodati limunov sok i tući dok snijeg ne postane sjajan i gust. Lagano ga umiješati kuhačom u smjesu od žumanaca (prvo olakšamo smjesu sa žlicom - dvije snijega, potom umiješamo ostatak). Razdijeliti u 3 jednake zdjelice. Dno okruglih kalupa za pečenje obložiti pek-papirom (promjera 26cm), pažljivo razmazati smjesu. Peći svaki biskvit u zagrijanoj pećnici na 165*C cca 20 minuta.

Na pladanj postaviti prvi biskvit, lagano ga natopiti. Dok se preljev upija, izmiksati pjenasto maslac i sjediniti ga s čokoladnom kremom. Želatinu pripremljenu po uputstvima s pakiranja otopiti i umiksati u kremu. Istući slatko vrhnje u šlag, lagano ga kuhačom umiješati u kremu. Odvojiti mali dio za ukrašavanje i premaz uokolo torte, ostatak podijeliti na 3 jednaka dijela.

Filati kore, premazati dio sačuvane kreme uokolo torte i zagladiti špatulicom uronjenom u vrelu vodu. Staviti u hladnjak na nekoliko sati, najbolje preko noći. Otopiti kuverturu sa uljem za glazuru i preliti preko torte, zagladiti. Ukrasiti ružicama, opet vratiti u hladnjak da očvrsne.

Za čokoladni obruč otopiti kuverturu (na pari) i išarati po dvije trake pek-papira, prethodno izmjerene da odgovaraju dimenzijama torte. Staviti ih u hladnjak da očvrsnu, potom pažljivo prisloniti sredinu trake na tortu i sa obje ruke lagano sljubiti s ivicama torte. Ponoviti sa drugom trakom, spremiti u hladnjak na cca 30 minuta. Maknuti pek-papir i to je to! Uživajte! P.S. - obruč možete napraviti i od bijele kuverture :)

Mix together coffee, Baileys, more of the cream, and rest of the condensed milk mixture. Now, fill each popsicle mold almost to the top with Baileys mixture.

Roughly chop chocolate. Heat remainder of cream in a small saucepan over low heat, add chocolate, and stir until melted. Now, add chocolate to each popsicle mold. Close your popsicle mold and insert popsicle sticks. Place in freezer for approx. 4 – 6 h.

Remove from freezer and carefully hold popsicle mold under warm water to release popsicles. Enjoy with a glass of Baileys!

Crisp, sweet pastry with a creamy filling and a crunch of honeycomb, this luxurious tart is sure to bring some Christmas cheer and will get guests talking!

Heat oven to 180C/160C fan/gas 4 and put a baking sheet on the middle shelf to heat up. Unroll the pastry, then use to line a 22cm fluted tart tin. Leave about 1cm of pastry overhanging and trim the rest. Line the case with baking parchment (scrunch it up first to make it more pliable) and baking beans. Place on the hot baking sheet and bake for 15 mins, then remove the beans and parchment and return to the oven for another 5 mins or until biscuity brown. Trim the sides of the pastry case with a serrated knife and discard the trimmings.

Pour the cream into a saucepan, scrape out the seeds from the vanilla, add these along with the pod and heat until steaming. Meanwhile, whisk the whole eggs, yolks and sugar in a large bowl until smooth. Pour the Irish cream into the cream, then the cream mixture onto the eggs and mix well. Strain the mixture through a sieve and into a jug.

With the tart case still on the baking sheet, carefully pour the custard into the tart. Reduce the temperature to 150C/130C fan/ gas 2 and bake for 30 mins until the filling has just set but still has a slight wobble in the middle (the tart will continue to set a little once out of the oven ). Cool to room temperature, then chill in the fridge for at least 2 hrs.

Whip the remaining cream, sugar and Irish cream until it just holds its shape. Pile into the centre of the tart, leaving a border of custard exposed around the edges. Scatter with crumbled honeycomb, if you like, and serve immediately.
