Baked Halibut and Asparagus

Preheat oven to 400 F.&nbsp; Line half sheet with parchment paper.&nbsp;

Place halibut fillets in the middle of the baking sheet, and asparagus around it.&nbsp;

Brush halibut and asparagus with olive oil. Generously sprinkle with salt and cracked black pepper.

Spread minced garlic on top.

Top with freshly shredded parmesan cheese.

Bake for about 15 minutes until halibut is cooked through and flaky.

Sprinkle with freshly chopped parsley.

One pan Mediterranean Baked Halibut Recipe with Vegetables

In a large mixing bowl, whisk the sauce ingredients together. Add the green beans, tomatoes, and onions and toss to coat with the sauce. With a large slotted spoon or spatula, transfer the vegetables to a large baking sheet (21 x 15 x 1 inch baking sheet, for example). Keep the vegetables to one side or one half of the baking sheet and make sure they are spread out in one layer.

Now, add the halibut fillet strips to the remaining sauce, toss to coat. Transfer the halibut fillet to the baking sheet next to the vegetables and pour any remaining sauce on top.

Lightly sprinkle the halibut and vegetables with a little more seasoned salt.

Bake in 425 degrees F heated oven for 15 minutes. Then transfer the baking sheet to the top oven rack and broil for another 3 minutes or so, watching carefully. The cherry tomatoes should begin to pop under the broiler.

When ready, remove the baked halibut and vegetables from the oven. Serve with your favorite grain, Lebanese rice, or pasta. It's a great idea to add a hearty salad like this Mediterranean Three Bean Salad. 

I'm new to eating/cooking fish, and this recipe is so easy yet flavorful and healthy. It's one of my husband's favorites (and mine!).  I've found it's forgiving if I don't have quite the right herbs on hand or if I use different vegetables. Thank you for sharing such a winning weeknight recipe!

Super easy to prepare. I used broccoli crowns and small chunks of zucchini and thin slices of potato. Added a bit more oil and fresh, finely chopped parsley, basil and chives. Baked on pan for 20 mins + 2 additional minutes under broiler.  Served with Forbidden Black Rice. Excellent!

We made this recipe tonight.  It was very easy to prepare.  We had nearly everything except for the green beans which we substituted broccolini (we would have used the green beans if we had them on hand).  It didn't take long at all to cook and the flavors were a perfect match for each other.  We had couscous on the side.

It plated perfectly, as well.  Simply beautiful colors and flavors.  Everything in the meal is good for you.  Very healthy.

I'm a huge fan of sheet pan dinners and this one will be a favourite whenever I can get the freshest fish. I added some tiny potatoes  — no bigger than the tomatoes — and put them in first for about 5 minutes before adding everything else. Delicious!  I grew up in the Middle East and love Mediterranean flavors, so I will be trying more of Suzy's recipes.

What a delicious and simple recipe.   I’ve made it several times, and it’s great every time.  I cook the vegetables first for about 8-10 minutes before putting in the  halibut.  Then add it and cook at 325 for 12 mins, then broil for 3 mins maximum.  It comes out perfectly.   Thanks for the great recipe.

I brought home 30 lbs. of halibut from Alaska last year and have tried many different halibut cooking methods and recipes since. This recipe is my favorite! Not being an oily fish, I learned the hard way that halibut is easy to overcook and it gets dry and tough. Suzy's recipe adds the right amount of olive oil to keep the halibut moist and tender. It's an easy recipe to prepare, cook and clean up. I didn't have ground coriander but the internet suggested caraway seeds and cumin as a reasonable substitute so I used a 50/50 mix of those two spices and it worked well. I only had cherry tomatoes on hand so used those cutting each in half. Halibut fillets can be thin on the outer edge and pretty thick on the other side so I cut off the thin side and sliced the thicker part across the middle so I had three equal sized boneless pieces. The recommended cooking time was perfect! I toasted a couple pieces of crusty bread to go with and together they made a perfectly delicious and healthy supper! Definitely worthy for serving to guests! Thanks Suzy!!

Your recipe was delicious as usual. I substituted asparagus for the green beans, as that was what I had.  Another time I would start the onions off in the oven 5 minutes before the green vegetable and tomatoes to make sure they are roasted just a little bit more - just personal preference.  I also cooked the fish in a separate dish so that I could whip it out of the oven as soon it was done - hate overcooked fish.

Very easy to make.  The halibut was very tasty, moist and juicy.

The flavors were outstanding. I would have given this 5 stars, but the fish turned out overcooked. I think 15 minutes in a 450 degree oven is too long for fish, not to mention the broiling at the end (which was necessary to caramelize the veggies). I think next time I'll marinate the fish for 20 minutes and grill it separately while the veggies cook in the oven. And definitely using fresh dill weed!

I was not able to get halibut where I live so I substituted tilapia and for the veggies I used zucchini, yellow squash, red peppers, and onions...DELISH!  My 17 year old even ate it all!  Thank you!  Will be making again!

Loved this recipe I am always looking for quick fish ideas.  A few tips..I put parchment paper down on the sheet pan for easy clean up...tossed each veggie individually and then placed on the pan and finally I only used 1/2 cup of olive oil and it was plenty.  Will make again for sure!

Tried this tonight and had to amend the recipe due to lack of decent extra virgin olive oil and only one lemon.  I had a small bottle (approx 2/3rds cup) of Greek Kokkino dressing (which is mostly olive oil with red wine vinegar and greek oregano) - so used that instead of olive oil and the little bit of vinegar absolutely shone through.  Also had to use red onions and shallots instead of white onions and they really 'popped' with extra-yummy flavor!  This dish was a HUGE hit with my wife, who is a bit picky when it comes to fish texture and 'fishy taste' and the halibut was just perfect for this Mediterranean sauce.  I might be tempted to marinate the fish a little next time, to allow the flavors to penetrate more, but overall this was an unqualified success.  Thank you for this and i'll be searching for more of your recipes in the future, versus random google search by ingredients.

Loved this, I used sea bass as this was what I had and added some cut up gold Yukon potatoes and kalamatas. I think I’ll use this dressing on all my roasted veggies from now on, so good! So good on the fish as well!

I tried this recipe last night except instead of green beans I used fresh asparagus.  I also used frozen (thawed) halibut.  Since it was just me and I used 2 smaller pieces of halibut I cut the sauce recipe in half.  I also just used cherry tomatoes, no onions.   It was DELICIOUS!!!  I cooked orzo for a side with some more lemon juice and parsley and drizzled a little bit of the extra sauce over it after plating.  Great dish!  I will make this again!

Baked Halibut Recipe

halibut fillet

tbsp butter

tsp minced garlic

paprika

sea salt

½ tsp black pepper

lemon

chopped parsley

First, preheat oven to 400 degrees Fahrenheit.

Place halibut in baking dish.

In a small bowl, combine melted butter, minced garlic, paprika, sea salt and black pepper.  Pour this mixture over halibut.

Bake for 12 to 13 minutes or until fish is opaque and no longer transparent.

Finally, remove from oven.  Garnish with sliced lemon and chopped parsley if desired.

Baked Halibut with Lemon and Rosemary (Greece)

halibut steaks

onions, chopped

garlic, mashed

extra virgin olive oil

tomatoes,

lemon juice

tbsp mustard

tsp pepper

Preheat oven to 350 degrees F.

Heat olive oil in a frying pan on medium heat. Add onions and garlic and sauté for 5 minutes.

Add the tomatoes, lemon juice, rosemary, mustard, salt and pepper. Sauté for 5 more minutes. Remove from heat.

Place the halibut steaks in one layer on a lightly oiled baking dish. Cover with rosemary mixture.

Cover baking dish with foil and bake for 30 minutes or until fish is cooked through and flaky.

Halibut filets are breaded and cooked in the air fryer until they are a perfect medium. Simple and impressive dinner!

Air Fryer Parmesan-Crusted Halibut

Halibut is a mild and meaty fish that both seafood lovers and skeptics will enjoy, particularly with this savory blend of Italian seasoning, garlic, and fresh lemon and dill–think coastal Greek-Italian. The fish is baked in the oven for an easy, crowd-pleasing dinner that comes together quickly enough for a weeknight, but the halibut makes this recipe very dinner party-worthy. If you’d like a more budget-friendly fish, you can swap with any sturdy white fish, like cod, fluke, flounder, or turbot. Either way, serve with a fresh seasonal side.

Baked Halibut with Lemon and Dill

Extra virgin olive oil

Kosher salt

Black pepper

Italian seasoning

garlic powder

Aleppo pepper or red pepper flakes, (or more to your liking)

Get ready. Set a rack in the middle of your oven and preheat to 425°F. Lightly brush a sheet pan with thin layer of olive oil.

Season the halibut fillets. Sprinkle the fish all over with salt and pepper (about 1/2 to 3/4 teaspoon each), Italian seasoning, garlic powder, and Aleppo pepper or red pepper flakes (if using). Arrange on the prepared sheet pan.

Roast. Drizzle the fish with extra virgin olive oil. Cut half of the lemon into thin slices and arrange them on top of the fish (keep the other half of the lemon aside for now). Bake on the middle rack of the heated oven until the thickest part of the fish flakes easily at the touch of a fork, for 10 to 15 minutes.

Finish and serve. Remove from the oven and squeeze the remaining lemon all over the fish. Sprinkle on the dill and serve immediately.

Mediterranean Baked Halibut

halibut,

sundried tomatoes, chopped

garlic cloves,

fresh basil, chopped

kosher salt and fresh pepper

Preheat oven to 425 degrees F/ 220 C. Mix together chopped sun-dried tomatoes, mayo, garlic, and oregano.

Place parchment on top of a baking sheet, then place the fish on top, skin side down. Sprinkle fish with a tiny bit of kosher salt and freshly cracked black pepper. Spread the mayonnaise/tomato mixture over the top of the fish.

Bake at 425 for 15-17 minutes. My fish was about 1 1/2" thick and took 15 minutes. Remove from oven and top with fresh chopped basil. Enjoy!

This green curry halibut combines tender, baked fish with a creamy coconut curry sauce for a bold and flavorful meal. Ready in 30 minutes!

Thai Green Curry Halibut

long grain white rice

vegetable oil

tsp kosher salt

13.3 oz can coconut milk (divided)

tbsp Thai green curry paste

lime juice and zest

cilantro leaves (chopped, divided)

Preheat oven to 400°F. Zest half of the lime and extract juice, set aside.

Bring 1/2 cup of coconut milk and 1 cup water to a boil. Add rice and turn to simmer. Cover and steam for 18 minutes. Let rest 5 minutes. Fluff with fork and add half of the chopped cilantro leaves. Stir to mix and keep warm.

In a small bowl whisk together the remaining coconut milk, Thai green curry paste, remaining chopped cilantro, lime juice and zest. Set aside.

In a large baking dish coated with cooking spray or oil, add halibut and drizzle with some oil. Massage oil over fish and season with salt and pepper.

Top each Alaska halibut filet with the coconut curry sauce. Bake uncovered for 12 to 15 minutes, until Alaska halibut flakes easily when tested with a fork. Drizzle with pan coconut curry sauce and serve over coconut rice.
