In a blender, combine the peeled banana, eggs, oats, baking powder and salt.

Allow to blend until the mixture is as smooth as you want it and blended well. Allow the batter to stand for 10-20 minutes until thickened slightly.

Heat a non-stick frying pan over medium heat.

Fry spoonfuls of the batter until golden brown on both sides.

Serve with a drizzle of maple syrup and fresh fruit of your choice.

Banana Oatmeal Pancakes

Greek yogurt (plus 2 tablespoons)

milk (or substitute milk of choice))

If you&#039;d like to keep the pancakes warm between batches, preheat the oven to 200 degrees F.

Grind

Place the oats in the bottom of a blender. Process a few times to grind. Add the mashed banana, Greek yogurt, milk, eggs, honey, baking powder, cinnamon, salt, and nutmeg. (See notes to make this recipe in a food processor instead.)

Blend

Blend on high speed, stopping to stir a few times as needed, until the batter is very smooth and well combined, about 2 minutes. Let the batter rest for 10 minutes.

Cook

Heat a griddle or skillet over medium-low. Brush lightly with olive oil or melt a little butter in the pan. Pour 1/4 cupfuls of batter onto the hot griddle into the shape of a heart and cook for 3 minutes, until the edges look dry (bubbles may not form on top). Flip and continue to cook for 1 to 2 additional minutes. Repeat with the remaining batter, adding a little more oil to the pan between batches as needed. Transfer the pancakes to the oven to keep warm between batches until ready to serve, if desired. Serve warm with desired toppings.

Banana Oat Pancakes

Heat oven to the "warm" setting. If your oven does not have a warm setting, set to 200 degrees. This is so you can place your cooked pancakes in the over after they finish so they stay warm.

Whisk milk, pureed banana, vanilla, coconut oil, and ground flax seeds in a small bowl, whisking enough to incorporate the flax seeds. Set aside and let sit for 5-minutes.

Lightly coat surface of pan with a very small amount of oil (I use a cast iron skillet, so oiling is not necessary if you use one too)

Heat the skillet to medium-high heat.

Add oat flour, baking powder, cinnamon, and salt to a large bowl. Mix until combined.

Slowly add wet ingredients to the dry ingredients, mixing well until incorporated.

Ladle about 1/3 cup of the pancake mixture into the center your pan.

As each pancake finishes, place it in the heated oven to keep warm.

Continue making until the batter is done, placing pancakes on a covered oven-safe plate in the oven as they finish to keep them warm.

Serve with maple syrup and optional fresh berries and/or slices bananas.
