This easy Portuguese piri-piri chicken is perfect for the barbecue. You can prepare it the day before, then cook it in just 30 minutes!

Piri-piri chicken

chicken (about 1kg/2lb 3 ounces), spatchcocked

milliliters/1¾fl oz red wine vinegar

130 milliliters/4fl oz hot vegetable stock

This chunky Greek salad recipe is quick to make and packed with protein. The wholemeal pitta makes a high-fibre accompaniement.

A spiced yoghurt marinade makes this chicken gyro tender and full of flavour. The name gyro comes from the Greek word for ‘turn’: meat is cooked on a vertical spit which turns in front of a heat source. For this version, you don’t need a spit: cook the chicken on a couple of large skewers, and if the weather isn’t looking bright enough for a barbie you can cook it in the oven.

This spicy, tangy Indian salad, also known as kachumber is delicious served with raan lamb or curry.
