Make up a batch of these Green Chile Burritos for supper or to stash in the freezer at a later date. Either way, you'll eat good and cheap.

Green Chile Burritos

burrito-size flour tortillas

Refried Beans

oz jack cheese (shredded) (you can use cheddar, too (2 cups))

green chiles (chopped)

onion (finely chopped (about 1/2 cup))

hot sauce (to taste)

On a flat working surface, lay out a tortilla. Spread 1/4 cup beans in a line down the center. Sprinkle on a small handful of cheese. Sprinkle a spoonful of chiles over the cheese as well as a teaspoon of onions. Add hot sauce to taste.

Roll up the tortilla over the filling, tucking in the sides as you go.

Continue until all the burritos are filled and rolled.

The filled burritos can be placed in a ziptop freezer bag and frozen. Or you can heat them and serve them right away. We like to heat them on the griddle, turning to crisp all sides.

Spicy Bean Burritos

¼ tsp kosher salt

water chicken

(15 oz) can black beans,

(15 oz) can pinto beans, drained and rinsed

¼ cup plus 2 tbsp salsa

lime

flour tortillas (burrito size), warmed

Shredded cheese (cheddar, pepper jack, Monterey jack,

tomatoes

Shredded lettuce

cilantro

scallions,

Nonfat Greek yogurt sour cream

Heat the oil in a large nonstick skillet...

Heat the oil in a large nonstick skillet over medium heat. Add the garlic, chile powder, jalapeños, cumin, and salt, and cook until fragrant, about 1 minute. Add the beans and broth, and bring to a boil. Reduce heat to medium-low, and allow to simmer 10 minutes. Remove from the heat, stir in salsa. Mash the bean mixture lightly with a slotted spoon or fork to desired consistency.

Spoon about ⅓ cup of the bean mixture...

Spoon about ⅓ cup of the bean mixture down the center of each tortilla. Top each serving with desired toppings and roll the burrito tightly. Slice each burrito in half and serve immediately.

These bean and rice burritos are great for lunches on the go. Make them in the morning for later in the afternoon, or freeze the extras for another day.

Bean and Rice Burritos (Freezer Meal) Recipe

green pepper (sliced thin)

red pepper (sliced thin)

onion (sliced thin)

Tablespoons olive oil (divided)

refried beans

wheat tortillas

brown rice

salsa

shredded cheese

In a skillet over medium heat, cook peppers and onion in one Tablespoon olive oil until browned and soft (about 10 minutes).

While the peppers and onions are cooking, heat refried beans in the microwave so they’re easy to spread.

Preheat oven to 375 degrees.

Top each tortilla with an equal portion of beans, rice, peppers, onions, salsa, and shredded cheese.

Tuck in the sides of each tortilla, then roll up and place seam-side down on a foil-lined baking sheet. Brush the tops with olive oil, then bake for 15 minutes or until they start to turn light golden brown.

Bean and Cheese Burritos

chicken broth

¼ tsp chili powder

garlic powder

oregano

¼ tsp ground cumin

red enchilada sauce

cheddar cheese (shredded)

flour tortillas (10 inch)

Preheat

Preheat oven to 350℉. Spray a large baking sheet with cooking spray and set aside.

Cook Beans

In a medium size pot, add the refried beans and heat over medium heat.

Add broth

Stir in the chicken broth to get desired consistency, should be smooth and not thick or chunky, the amount needed can vary depending on the brand of beans you are using. 

Season

Add in the seasonings and stir to combine. Taste and adjust as needed.

Layer

Lay one tortilla flat on a clean work surface. 

Spread a layer of refried beans, about 1/3 cup, then top with 2 tbsp of the red sauce. Sprinkle with shredded cheddar cheese. 

Fold

Fold the bottom and top of the tortilla over while rolling to form the burritos. Lay the folded burrito on the baking sheet, seam side down. 

Continue until all burritos are filled and rolled and on the baking sheet. 

Bake

Bake for 8-10 minutes, tortillas will be slightly tanned and crisp on the bottom. 

Cool

Let cool for several minutes before serving, filling will be hot. 

Serve with additional red sauce or favorite hot sauce, sour cream, or guacamole.
