This creamy taco soup recipe is loaded with ground beef, flavorful taco spices, corn, beans, and you can dress it up with all your favorite toppings! 

Creamy Taco Soup

beef

red bell pepper (chopped)

chicken broth

garlic powder

onion powder

cumin

smoked paprika

chili powder

(12 fluid ounce) can corn (drained)

(15 fluid ounce) can black beans (drained & rinsed)

(8 ounce) block of cream cheese ((I used Philly))

Salt & pepper (to taste)

Toppings (optional): grated cheddar, avocado, cilantro, tortilla strips, etc.

Take the cream cheese out of the fridge to let it soften up.

Add the ground beef to a large soup pot over medium-high heat. Brown the beef and drain the fat.

Add all the ingredients except for the cream cheese and salt &amp; pepper.

Increase the heat to high and bring the soup to a boil. Turn down the heat so it&#x27;s simmering gently for 8 minutes. While the soup cooks, prep your toppings.

Cut the cream cheese into smaller pieces and add it to the soup. Let it melt in (you may have to stir it a fair bit until it&#x27;s fully dissolved). Season the soup with salt &amp; pepper and serve with toppings as desired.

beef (I use 90% lean)

onion (finely chopped)

red bell pepper (seeded,

taco seasoning

can diced tomatoes (do not drain)

tomato sauce

can diced green chiles (drained)

beef broth

can black beans

can pinto beans (drained and rinsed)

corn

salt and pepper

toppings such as cilantro, tortilla strips, sour cream, avocado and shredded cheese

Heat the olive oil in a large pot over medium high heat. Add the ground beef.

Cook for 5-6 minutes, breaking up the meat with a spatula.

Add the onion and bell pepper and cook for an additional 3-5 minutes.

Add the taco seasoning, diced tomatoes, tomato sauce, chiles, beef broth, black beans, pinto beans and corn to the pot. Bring to a simmer.

Simmer for 15 minutes. Taste and add salt and pepper if needed. Serve immediately with toppings of your choice.

avocado, thinly sliced

In a large stock pot or Dutch oven, heat oil over medium high for 2 minutes until the oil is sizzling hot. Add ground beef and cook for 5-7 minutes until browned. Make sure to break up the beef into small pieces to help with even browning.

Add onion, jalapeño, and garlic. Stir well to combine and continue to cook for 3-4 minutes until tender. Stir in paprika, cumin, and crushed pepper until evenly mixed.

Add crushed tomatoes and beef broth. Season with salt and pepper to taste. Cover the lid and let it simmer over medium heat for 10 minutes, stirring occasionally.

Add black beans and corn. Stir well to mix and cook until heated through, about 2 minutes.

Serve immediately and add toppings including tortilla chips, cilantro, lime juice, avocado, and cheddar cheese.
