Grilled Flank Steak Summer Salad Cilantro Lime Vinaigrette

extra virgin olive oil

garlic (finely diced)

Teaspoon kosher salt

Teaspoon black pepper

cilantro

lime

juice of 1 lime

oz flank steak

salt and pepper

avocado

purple onion (diced)

sugar snap peas

cherry tomatoes (halved)

asparagus

yellow pepper (diced)

romaine lettuce

Combine Vinaigrette ingredients in food process and blend for 20-30 seconds.

Taste and make any necessary adjustments per your specific taste.

Place in refrigerator.

Season flank steak with salt and pepper.

Grill your steak on high heat for approx. 2 minutes per side and then move to a cool side and cover the grill.

Let steak continue cooking until it reaches your preferred doneness.

Remove from grill and let rest.

Add lettuce, asparagus, tomatoes, peas, onion, yellow pepper and avocado to your salad bowls.

Cut your steak into strips and place on salad.

Cover with your desired amount of vinaigrette.

Cool down with this classic gin and citrus drink sweetened with sugar syrup.

Ice cubes, to serve

lemon juice

lemon slices,

glace cherry

water,

(1/2 cup) caster sugar

water

Marinated Beef Steak

Hanger Steak

Cup extra virgin olive oil

Worcestershire Sauce

Lemon (Juiced)

Cup Balsamic Vinegar

Cup Soy Sauce

Tablespoon Stone Ground Dijon Mustard

Tablespoon Dark Brown Sugar

Teaspoon Italian Seasoning

Large Cloves of Garlic (minced)

Teaspoon Fresh Black Pepper

Teaspoon Kosher Salt

In a large ziplock bag, add the marinade ingredients. Seal the bag and squish to combine the ingredients. 

Open the bag and carefully drop in the steak.

Allow to marinate in the fridge for 1-12 hours. 

Heat a grill to high heat, and brush grates with oil.

Add the steaks and then turn down to medium high heat.

Cook steaks for 4-8 minutes per side depending on desired doneness and then remove to a plate to rest for 5-10 minutes before slicing.

A little grilled corn and gorgonzola steak salad is the perfect way to end a beautiful summer full of moments and memories. The flavor will knock your socks off!!

Grilled Corn and Gorgonzola Steak Salad

Skirt Steak

Ears Yellow Sweet Corn (Boiled for 5-7 minutes)

Zucchini (sliced and quartered)

Cups Spring Mix

Cup Arugula

Endive Heads (Core Removed and roughly chopped)

Cups Petit Medley Grape Tomatoes (about 8-10 ounce container, tomatoes halved)

Stalk Green Onions (Sliced)

Shallot (Thinly Sliced)

Tablespoons Basil (Minced)

Tablespoons Parsley (Minced)

Clove Garlic (Minced)

Lemon

Crack of Black Pepper

Ounces Gorgonzola Cheese

Cup Olive Oil

Dijon Mustard

Salt and Pepper

In a large ziplock bag, add the marinade ingredients. Seal the bag and squish to combine the ingredients. Add the steak and marinate according to recipe instructions.

Grill the Steak according to the recipe, set aside to rest for 5-10 minutes before slicing.

Meanwhile, heat a gas burner or grill to high heat. Dry off the corn and char on each side. Set aside until cool enough to touch and remove all corn kernels to a bowl.

Set a pan over the burner and heat over medium high heat. Add a drizzle of olive oil and add the zucchini once hot. Sprinkle with salt and pepper and char each side for about 2 minutes per side or until char marks appear. Set aside.

In a large bowl, add the greens, endive, veggies, herbs and lemon zest. Add a pinch of salt and squeeze of the lemon if desired. Toss together. If desired, add some of the dressing and toss again or allow your guests to completely dress themselves.

On a platter, arrange the greens and veggies. Top with sliced steak and sprinkle with cheese. Serve with remaining dressing.

In a mason jar, add all dressing ingredients, add a lid and shake to combine.

For the Dressing

Very good!  Used feta cheese not blue gorgonzola, and we used lite italian dressing.  Good way to use some fresh basil and cilantro from your garden.  Don't leave out the herbs, great addition!
