This blackened cod recipe combines a bold smoky blackened seasoning with firm but flakey and mild cod fish, pan seared to perfection! Perfect for blackened cod tacos or served up with some roasted vegetables.

Blackened Cod

oz filet cod

tbsp oil

tbsp smoked or sweet paprika

Thoroughly mix smoked paprika, onion powder, garlic powder, black pepper, kosher salt, brown sugar, cayenne, dried basil, dried oregano, dried thyme to create blackened seasoning. Store any unused portion in an airtight jar.

Blackened Seasoning

Dry each cod filet with a paper towel to remove any excess moisture.

Rub each cod filet with about 1 tsp oil.

Evenly sprinkle blackened seasoning on all side of cod filet. You can use your hands to be sure blackened seasoning is coating all sides of the cod.

Pour remaining oil into sauté pan and heat to medium high.

Once oil is hot, plate your cod filets into the saute pan.

Cook each side for approximately 3-4 minutes or until cod fish is thoroughly cooked through.

Preheat the grill to 400-450°F. Use a paper towel to pat the Mahi Mahi fillets to remove any excess moisture. Then brush them with olive oil on all sides.

In a small bowl, combine the smoked paprika, onion powder, salt, pepper, sugar, garlic powder, dried thyme, dried or oregano, and cayenne pepper. Mix well. Sprinkle the blackened seasoning over the Mahi fillets on all sides. Gently rub to make sure the blackened seasoning sticks to the oil.

Once the grill is hot, place the Mahi steaks on the hot grates and grill for 4-5 minutes, until the fish releases easily from the grates. If it&#39;s sticking, it&#39;s most likely not quite ready to flip.

Flip the fish and continue to grill for another 3-4 minutes, for a total of 7-9 minutes cook time. Allow the fillets to rest for 2-3 minutes before serving.

In a small bowl, combine blackened seasoning. Rub seasoning all over the chicken generously.

Heat oil in a large nonstick skillet over medium-high heat. Once the skillet is nice and hot, carefully add chicken.

Cook the chicken for about 3-4 minutes until the bottom is blackened(not burnt, see photo). Flip chicken over and cook for another 3-4 minutes until blackened. The chicken should be cooked through to an internal temperature of at least 165 degrees.

When done, remove chicken from skillet. Serve blackened chicken with your favorite side dishes or chop up and serve in a burrito or tacos!

Blackened Seasoning & Chicken

My husband says that this is about as manly as a salad can get. It is fresh, crisp, colorful and loaded with meat. My favorite thing about this salad is the wonderfully contrasting textures as you work your way through it.

Blackened Steak Salad 

olive oil, divided

celery salt

oregano leaves

butter

romaine lettuce, shredded

spinach leaves

blue cheese crumbles

grape tomatoes, halved

orange bell pepper, sliced

yellow bell pepper, sliced

In a large mixing bowl, toss the steak strips in 2 tablespoons of olive oil. In a small mixing bowl, combine the paprika, garlic powder, onion powder, thyme, cayenne pepper, basil, cumin, celery salt and oregano. Sprinkle the seasoning over the top of the steak and toss in the bowl until all the meat is evenly coated. Set aside.

In a large sauté pan, heat the remaining 2 tablespoons (30 ml) of olive oil and the butter over medium-low heat. Add the onion, garlic, and sea salt and black pepper to taste. Sauté until the onion is a nice caramel color, about 20 minutes. Add the mushrooms an and sauté until they are soft and have released their liquid, about 10 minutes.

While the onion is caramelizing, divide the romaine and spinach among 4 plates. Top each plate of lettuce with one quarter of the blue cheese crumbles, tomatoes, orange and yellow bell pepper and avocado. Line each topping in its own individual row.

Heat the oven on broil. Line the steak strips in a single layer on a broiling pan. Broil on high for 5 minutes, or until the meat has reached the desired level of doneness.

Divide the cooked steak strips evenly among all 4 plates. Top with the caramelized onion and mushrooms.
