Damn Good BLT Pasta Salad with Creamy Jalapeño Cashew Dressing

For the pasta salad:

bacon

pasta

tomatoes

½ medium red onion, thinly sliced

romaine lettuce

While the cashews are soaking for your dressing, I suggest chopping all your veggies and having them ready to go. You can also cook your bacon: add bacon to a large skillet or pan and place over medium heat, cook bacon on both sides until crispy and golden brown. If the pan starts to smoke at any point, simply lower the heat. I always cook my bacon on medium low heat. Once bacon is done, blot with a paper towel to absorb excess grease, then chop into bite sized pieces and set aside.

Next cook your pasta until al dente, drain and then place in a large bowl. Add all of the jalapeno cashew dressing, then stir together to combine. Next add the chopped bacon, corn (I prefer grilled or sauteed), halved cherry tomatoes, sliced red onion, romaine lettuce and avocado. Gently toss again, then taste and adjust seasonings as necessary, adding more salt and pepper if you’d like. Serves 6, or 4 as a larger meal. Garnish with extra corn, tomatoes, red onion, avocado and bacon.

Bring a large pot of salted water to a boil over medium heat and cook the pasta according to package instructions for al dente. Drain and rinse with cold warer. Set aside.

In a large frying pan, add bacon and cook until crispy.

Remove from the pan and place on a paper plate lined with paper towels to absorb any excess grease.

While the bacon is cooking, make the ranch dressing.

Add mayo, milk and dry ranch seasoning to a medium bowl. Stir to combine.

In a large bowl, add all ingredients, toss to coat evenly.

Best served chilled.

Garnish with sliced green onions and cilantro.

For the Ranch Dressing

BLT Pasta Salad is an easy make ahead side or main recipe, with torn romaine, thick-cut bacon, and sweet cherry tomatoes in a creamy garlic-herb dressing.

Cook the pasta.

Cook macaroni (8 oz.) according to directions in salted water. Drain and rinse with cold water. Shake to remove as much excess water as possible. While the pasta is cooking, prep the rest of the ingredients (cook the bacon, chop the veggies, etc.).

Mix the dressing.

In a large bowl, mix together the mayonnaise (1/2 cup), milk (2 tablespoons), apple cider vinegar (1 tablespoon), garlic powder (1 teaspoon), fresh chopped parsley (1/4 cup), three sliced green onions, kosher salt (1/2 teaspoon), and black pepper (1/4 teaspoon). If making ahead of time, reserve half the dressing in a separate container (see notes).

Mix the pasta salad.

Add the cooked and cooled pasta, the cherry tomatoes (2 cups), and the torn romaine lettuce (3 cups) to the bowl with the dressing. Mix together until dressing coats everything.

Serve.

Serve garnished with reserved bacon, parsley, and green onions if desired.

In a medium mixing bowl, combine dry ranch dressing mix, mayonnaise, and sour cream. Use a whisk to mix together. Cover with plastic wrap and refrigerate for 30 minutes.

Cook rotini pasta per package directions. Drain, rinse with cold water, and drain again. Place in a large mixing bowl.

Add cooked and chopped bacon, red onion, cheddar cheese cubes, avocado, cherry tomatoes, parsley, and romaine lettuce. Pour dressing mix over ingredients. Use tongs to gently toss salad until well coated.

Serve immediately.
