These roasted chicken breasts with Boursin are one of the easiest recipes I know how to make, but you won't believe the flavor! Serve with rice or salad for a simple tasty meal in minutes.&nbsp;

Roasted Chicken Breasts with Boursin

chicken breasts (skin-on, boneless or bone-in)

Herb and Garlic Boursin cheese

Preheat the oven to 450 degrees F. Line a baking sheet or roasting pan with aluminum foil.

Create a pocket under the skin of each chicken breast by gently separating the skin from the flesh, with a spoon or fingers. Try to leave the sides attached as much as possible to prevent the cheese from oozing out.

Using a spoon or your hands, stuff about 2 tablespoons of Boursin under the skin of each chicken breast. Replace the skin and squish around to evenly distribute the cheese.&nbsp;

Place the breasts onto the lined baking sheet and roast for 20-30 minutes until chicken is no longer pink. Bone-in breasts will take a bit longer than boneless.

Prosciutto-Wrapped Boursin Chicken

boneless skinless chicken thighs

prosciutto (sliced thin)

pkg Boursin Cheese Spread (with Garlic and Fine Herbs)

kosher salt

cracked pepper

olive oil

milk

flat-leaf parsley

Heat oven to 400°F.

Put the chicken between to pieces of plastic wrap and pound the chicken to an even thickness (~¼- to ½-inch).  

Season chicken with salt and pepper on both sides. Divide the Boursin among the chicken pieces, placing ~1 tablespoon dollop on each. Roll chicken around the cheese and place seam side down in a nonstick or cast iron skillet.

Wrap each chicken roll in a slice of prosciutto. Drizzle with olive oil and sprinkle fresh cracked pepper. 

Bake at 400°F for 20 minutes or until chicken is cooked through and juices run clear.

Once done, transfer chicken from the skillet to a dish or serving plate to rest. Add the milk to the skillet over medium-high heat, whisking until smooth. Simmer up to 1 minute to thicken if necessary. 

Serve the sauce spooned over the chicken rolls, and sprinkle over some parsley.

Creamy Boursin Chicken Recipe

chicken breasts

all-purpose flour

EACH: garlic powder, onion powder, sea salt

butter

chicken broth

Boursin cheese

chives or parsley (to serve)

Dry the chicken well with paper towels. Pound the chicken a few times using the heel of your hand so that it is even in thickness.

Whisk the flour, garlic powder, onion powder, and salt in a shallow bowl then dip the chicken into it to coat.

Heat the oil and butter in a large, non-stick pan over medium heat. Add the chicken and sear until it is golden brown, about 8 minutes. Flip the chicken over, lower the heat to medium-low, and continue to cook until both sides are golden and the chicken is fully cooked, about 10 minutes more. Remove the chicken from the pan.

Add the stock to the pan, turn the heat to medium-high, and let it come to a boil. Add the Boursin cheese and stir until it melts into the sauce. Let the sauce simmer for 5 minutes then return the chicken and any juices to the pan and stir so it coats the chicken. Serve with some minced chives or parsley over the top.

Boursin Chicken

This is such an easy weeknight recipe, you’re going to love making Boursin Chicken and Potatoes during the chilly months!

Boursin Chicken and Potatoes

chicken breasts (trimmed and pounded flat)

oregano

garlic powder

onion powder

¼ tsp kosher salt

½ tsp pepper

olive oil (extra virgin)

potatoes

shallot (minced)

wheel Boursin cheese (5.2 oz block, any flavor)

tbsp Italian parsley (chopped)

Preheat the oven to 425 degrees Fahrenheit.

Pound the chicken flat, season it with the oregano, garlic powder, onion powder, kosher salt, and pepper on both sides.

Next, add a generous drizzle of olive oil to a large pan over medium-high heat.  Sear the chicken breasts on each side for 3-5 minutes (or until a golden crust forms).  Remove the chicken from the pan and set them aside.

Add the halved potatoes to the pan and saute for 5 minutes.  Add the minced shallot and saute for another minute or two.

Remove the potatoes from the pan and then deglaze the pan with the chicken broth.  Turn the heat down to low.  Add the Boursin cheese, whisk it until it’s melted.

Return the chicken and potatoes back to the pan and then bake it in the oven for 10-15 minutes, or until the chicken reaches an internal temp of 165 degrees Fahrenheit and the potatoes are fork tender.

Top with Italian parsley. Serve.
