BRIGADEIRO RECIPE | BRAZILIAN FUDGE BALLS

1x 14 ounces can of sweet condensed milk

chocolate powder,

Tbsp margarine, or butter (plus more for hands)

Sprinkles

Add the condensed milk, the butter, and the chocolate powder to a medium sauce pan and stir.

Cook over medium heat, for approximately 10 mins, stirring repeatedly, scraping the sides and the bottom of the pan with a spatula to avoid burning.

The brigadeiro is ready when you scrape the bottom of the pan, and the brigadeiro takes 2-3 seconds to come back to its place, or when the mixture reaches 205F-208F - You can use a candy thermometer, or just a regular food thermometer to check.

Pour the hot brigadeiro into a a dish, or plate, and let it cool - about 2 hours.

Meanwhile, pour sprinkles in a deep plate or bowl.

When the brigadeiro is cooled, butter your hands, and scoop 1/2 Tbsp to Tbsp portions and roll little balls.

Roll the little balls in the sprinkles.

Keep them in a cool place or in the refrigerator until serving time.

Farofa - Toasted Cassava Flour Recipe

bacon (diced)

c of white yuca/cassava flour

add the bacon to a cold skillet, and heat up over medium heat

when the fat from the bacon begins to melt, add 1 tbsp of butter

when the bacon begins to fry, add the second tbsp of butter

add the onions and sautee until transparent, about 2 mins

add the garlic and fry until golden

add the yuca flour and season with salt and pepper to taste

let it toast, stirring gently and constantly to avoid burning, about 2 mins

Brazilian Black Beans

dry Black Beans

14 oz Smoked sausage

bay leaf

cumin

tsp kosher salt**

black pepper

white vinegar

bacon

olive oil

onion

tbsp Brazilian Sofrito (or 6 cloves of garlic, minced)

Pick, wash, then soak the beans in cold water for 30 mins.

Change the water, and soak in cold water for another 30 mins.

Drain beans, then add them to a pressure cooker or instant pot. Add the sausages and 5 1/2 cups of water.

Close the instant pot, and cook on manual for 30 mins.

After 30 mins, safely release the pressure and open the pan.

Change the now open/uncovered instant pot settings to sauté mode, and let the beans simmer, stirring occasionally.

Season with salt and pepper, add the cumin, the vinegar, and the bay leaf to the pan, stir and continue to simmer for about 15 mins.

Meanwhile, add the bacon to a large skillet over medium to high heat, and let them cook until lightly browned.

Add the olive oil to the skillet, then the onions and sautée until the onions are transparent, 2-3 mins.

Add the garlic to the skillet, stir and sautée until fragrant and lightly golden.

Add the contents of the skillet into the beans, stir and let it simmer until desired thickness is reached.

Brazilian Chicken Stroganoff Recipe

tomato sauce

Add the cubed chicken pieces to a large dish, season with salt and pepper, and set aside.

Place a large heavy bottomed pan or dutch oven over medium to high heat. Add the butter, and let it melt.

Add the chicken pieces and cook them until they start to brown.

Add the onion, and cook until transparent, then add the garlic and cook until fragrant.

Add in the tomato sauce and the ketchup, let it come to a simmer and let it simmer for 2-3 minutes.

Add the cream and simmer uncovered for 5 minutes, and serve!

Brazilian white rice

Fresh parsley, minced

This Brazilian Shrimp Soup (Bobó de Camarão) is an easy Brazilian recipe made with shrimp and vegetables cooked in a creamy yuca and coconut milk sauce. Serve it with rice and farofa and enjoy one of the best seafood soups ever!

Brazilian Shrimp Soup

shrimp (peeled, deveined, and tail removed)

Salt and ground pepper

Blanching: To peel a tomato, first use your paring knife to cut out the stem. Then slice a shallow X in the bottom end. Using a slotted spoon, plunge the tomato into boiling water for about 20 seconds, then plunge it into a bowl of iced water. This will stop the tomato from cooking and further loosen the skin. Remove the cooled tomato and peel away the skin. If using canned diced tomatoes, skip this step!

In a medium bowl, season the shrimp with salt and ground pepper. Drizzle with the juice of 1 lime. Reserve in the fridge.

In a large pot, pour enough water to cover the peeled yuca or cassava, and sprinkle 1 tablespoon of salt. Boil for about 18-20 minutes or until very tender or falling apart. Drain and then when warm enough to handle, remove the woody fiber in the middle of the cooked cassava.

Meanwhile, in a large pan over medium heat,  sautée the onion and bell peppers in 2 tablespoons of dendê oil for about 3 minutes, stirring now and then. Add the tomatoes and sautée for 2 minutes more. Then, add the garlic and ¼ cup green onions or cilantro. Sautée for about 30 seconds.

Blend the sautéed vegetables with the coconut milk and the boiled yuca in the blender until homogenous.

Let the blended mixture cook over medium heat for about 7 minutes, stirring every so often. Add the shrimp, peppers, and the remaining 1 tablespoon of dendê or palm oil. Let cook for about 3 minutes or just until the shrimp is cooked or turned pink.

Remove from the heat, adjust the salt, and add the juice of ½ lime and ¼ cup cilantro or green onions. Stir well.

Serve over white rice. Enjoy our shrimp soup! NOTE: This shrimp soup is even more delicious the next day.

Brazilian Fish Stew

lime juice

frozen pepper and onion strips ((1 bag))

tomatoes, drained ((1 can))

coconut milk ((1 can))

fresh cilantro, chopped ((optional))

Combine the lime juice, cumin, paprika, garlic, salt, and pepper in a large bowl.

Add in the tilapia and mix until coated.

Cover and place in the refrigerator to marinate for 20 minutes or so.

Heat the olive oil in a large skillet or casserole over medium-high heat. Add the peppers and onions and cook until they begin to thaw, about 3 minutes.

Add the tomatoes and marinated tilapia and mix them in.

Pour the coconut milk over everything, mix and cover, and simmer about 20 minutes, stirring occasionally.

In the last few minutes, stir in the cilantro (optional).

When the tilapia is cooked through, garnish with additional cilantro (if desired) and serve.

I made this exactly as written. Looked just like the picture. So so good. I'd make it again and again.
