Use up the leftovers in your fridge with these fast and tasty Pineapple Sriracha Breakfast Bowls. Easy and customizable to fit what you have on hand. 

Pineapple Sriracha Breakfast Bowls

rice (preferably jasmine rice)

soy sauce*

tsp sriracha*

sesame oil*

pineapple

green onion, sliced

Salt and pepper

Reheat the cooked rice in the microwave, then season with soy sauce, sriracha, and a splash of sesame oil.

Roughly chop the pineapple pieces and thinly slice the green onion. Stir them into the seasoned rice.

Fry the egg, seasoning it with salt and pepper, and leaving the yolk slightly runny. Top the seasoned rice bowl with the egg and enjoy.

This almond butter breakfast bowl proves once and for all that breakfast can be tasty and healthy at the same time. With creamy greek yogurt, savoury almond butter, and a load of sweet toppings, you're sure to be adding this to your weekday routine. 

Almond Butter Breakfast Bowl Recipe

plain greek yogurt

Place greek yogurt in a bowl: 

Measure 1/2 cup of plain yogurt and place it in a bowl. The higher the fat content, the creamier the yogurt. I generally use organic, 2% greek yogurt..

Sprinkle granola on top of yogurt

 Add 2 tablespoons of glutenull quinoa granola on top of the yogurt. You can replace this with another brand or homemade granola. Just watch the sugar content on the granola you select, as these can often be full of hidden sugars. 

Slice a

 banana and place in a row across yogurt: Place sliced banana across the top of the bowl. I use 1/2 a banana to lower the sugar content.

Add a handful of frozen or fresh berries of your choice

Place berries next to the banana on top of the yogurt. I use raspberries and blueberries most frequently. 

Top with almond butter and cacao nibs: 

Finally, top the bowl with1 tablespoon of almond butter and 1 tablespoon of cacao nibs.

I didn't have that granola brand so I used a different one. It turned out great. I don't know why I haven't thought of adding almond butter to my yogurt parfaits before? Delicious. Thanks!

Start your day off right with a healthy turkey Chorizo Breakfast Bowl – perfect for making ahead if you need a fast and easy breakfast on the go!

Chorizo Breakfast Bowls

olive oil

salt

garlic powder

black pepper (to taste)

olive oil spray

turkey chorizo (heated through)

eggs

kosher salt

tbsp crumbled Mexican cheese (queso blanco, queso fresco)

avocado (from 1 small haas)

cilantro or scallions (for garnish)

Cholula hot sauce (for serving)

Preheat the oven to 425F.  Spray a 9 x 12 or large oval casserole dish with oil.

Add the potatoes, 1 tablespoon oil, 3/4 teaspoon salt, garlic powder and black pepper and toss.

Bake until tender, tossing every 15 minutes, about 45 to 55 minutes.

Meanwhile, heat a large nonstick skillet over medium-low heat, spray with oil and cook the eggs in batches sunny-side up, until the whites are just set, about 2 to 3 minutes for a runny yolk, or longer if a firm yolk is desired.

To serve, divide the potatoes in 4 bowls, top each with 1/3 cup chorizo, 2 fried eggs, crumbled cheese, 1 ounce avocado and garnish with scallions or cilantro.

Breakfast Bowls are an easy and delicious breakfast recipe the whole family enjoys!

Easy Breakfast Bowls

oz bag of tater tots

lb breakfast sausage

bacon

milk

cheddar cheese

Gravy Packet (or ingredients below to make gravy)

tbsp butter

tbsp flour

Cook tater tots in an air fryer at 400 degrees for about 20-25 minutes.

Brown sausage in a skillet over medium high heat. Before the sausage is browned add the 6 chopped up pieces of bacon to the skillet with the sausage. Stir well and cook until sausage is browned and bacon is cooked through.

Remove the the sausage and bacon from the skillet and drain grease. Set aside.

In a bowl, whisk together 6 eggs, a splash of milk, salt, and pepper. Cook eggs to your liking in the skillet.

Once eggs are cooked, add the sausage and bacon back to the skillet with the eggs. Top with 1 cup of shredded cheese. Let sit on the stove or pop under the broiler for just a minute to melt the cheese.

Make a white gravy packet or make homage gravy. To make gravy, melt 2 tbsp of butter in a skillet over medium heat. Add 2 tbsp of flour and stir until well incorporated and starting to thicken. Add 1 1/2 cups of milk and stir consistently until you get a consistency you like. Season to taste with salt and pepper.

Build breakfast bowls by adding tater tots, gravy, eggs, bacon, and sausage to a bowl.
