This Omelet Tortilla Breakfast Wrap takes a classic omelet and cooks it with a tortilla right in the skillet. Then simply roll it up and you have an easy on-the-go breakfast.

Omelet Tortilla Breakfast Wrap

bacon

eggs (beaten)

salt

black pepper

white mushroom

garlic (minced)

baby spinach (about 20 leaves, chopped)

salsa

Place bacon in a cold non-stick skillet the size of your tortilla.  Cook over medium heat until brown and crisp, about 5 minutes.  Transfer to a paper towel lined plate.  Once cool, chop bacon into small pieces.

Meanwhile, in small bowl add eggs, salt and pepper, to taste. Mix and set aside.

Add mushrooms to skillet with bacon drippings and sauté 1 minute.  Add garlic and sauté 30 seconds more.

Spread garlic and mushrooms in an even layer then add beaten eggs to the pan.  Swirl the pan to create a round omelet shape, similar to the size of your tortilla.

Top with the spinach and chopped bacon then place the tortilla on top of the omelet and press gently with your hands, using the uncooked part of the egg as a sort-of glue.  Allow to set for about 10 seconds.

Run a flat spatula along the outside of the omelet, carefully releasing the edge to prepare for flipping.  Quickly flip the omelet and cook, tortilla side down for about 1 minute more, or until tortilla is browned and beginning to crisp.

Transfer to a plate and carefully roll up the tortilla.  Place seam side down and cut in half.  Serve with fresh salsa or hot sauce, if desired.

Lightly brush a non-stick pan or your griddle with cooking oil. Preheat to medium heat and place the wrap seam-side-down in the pan.

This easy potato flatbread requires just ONE ingredient - a potato, for a wheat-free, gluten-free, yeast-free, paleo flatbread - perfect for making quick and healthy wraps or pizza!

The Ultimate ONE Ingredient Potato Flatbread (gluten-free potato bread)

pre-cooked potato (use more if wanted)

Prepare the potato. I use pre-cooked potatoes for this recipe so cook according to your favorite method: boiled, steamed, baked, etc.

Use a potato ricer or grater to mash the potato to form the potato dough.

Cut out two large pieces of parchment paper and place the potato between both layers. Using a rolling pin, roll the potato out into your flatbread size. The thickness of the &#039;dough&#039; can vary. I find that I prefer the results at 2-3 mm.You can aim to make it similar in size to regular tortillas or go a bit rustic with it, as I did.

Remove the top layer of parchment paper and optionally spray/brush with a little oil. I've tried this recipe with both methods but I didn't notice much of a noticeable difference, so it might be worth saving on the calories.

Bake the potato flatbread in the oven for around 10 minutes at 400ºF/200ºC or cook in an Air Fryer for 8-10 minutes at 350ºF/180ºC. The potato should look cooked with some lightly browned spots.

Allow the wrap to cool just enough to handle and use it as you would any other wrap by filling it up with your fillings of choice - then enjoy!

These are so quick and easy to make that I usually prepare the potato flatbread when needed. However, if you happen to make too many, I imagine they could be stored in the fridge for 1-2 days.Reheat the potato flatbread in a microwave or oven until warmed through.

Cut from the center of the tortilla to the edge so that when you flip either side of the cut upwards, it will fit snug against the edges of the tortilla.

Decide the number of sections you want &amp; add the fillings. For most of these breakfast wraps, I use four fillings/sections, which is the easiest to plan out. Just visually divide the wrap into four sections. If you imagine that the cut you made in the tortilla is a clock hand pointing down to 6, then the four sections would be 1-3,3-6,6-9, and 9-12. You can do something similar with 2 or 3 sections. Use the images/video as a reference. Once you&#039;ve divides the tortilla into sections, then add your fillings to each section. If you are adding eggs, make sure to prepare them in advance (boiled eggs, scrambled eggs, or fried eggs are great additions to a breakfast tortilla). Check the blog post for suggested ingredient combinations.

Fold the tortilla – begin by folding the wrap upwards from the right side of the cut you made until it covers an entire section of filling and then repeat (left and then down) until you have a completely folded tortilla. You can also do this from the left side of the cut and move up, right, and down when folding.

Optional – heat to create breakfast quesadillas by placing it in a sandwich press/grill pan or a large skillet/pan, you can make a crispy, melty, delicious breakfast quesadilla in minutes.
