These Cranberry Brie Bites are going to make a deliciously festive addition to your holiday gathering! With melted brie stuffed inside puff pastry, topped with cranberry sauce, candied pecans, and sea salt, they are the easiest yet impressive appetizer of the season. Make more because they will be gone in seconds!

Cranberry Brie Bites

oz Brie cheese ((½ (8-oz) round Brie cheese))

puff pastry ((You can substitute it

cranberry sauce

pecans

walnuts

cooking spray

flake sea salt

thyme ((optional; you can substitute it with rosemary))

Gather all the ingredients.

Cut the Brie cheese in half if you haven’t already and place the half in the freezer for 20 minutes (Store the other half in the fridge for another use). Placing the Brie cheese in the freezer for 20 minutes makes it easier to cut. Generously grease a mini muffin pan with cooking spray.

Take out one frozen puff pastry sheet and place it on a working surface sprinkled with a bit of flour. Leave it out for 10 minutes or so (depending on the room temperature) and when the puff pastry sheet is a bit softer, unfold and continue to have it thawed.

Roll the puff pastry sheet out into a 10 x 14-inch (25 x 36-cm) rectangle.

Cut the sheet crosswise into 6 even strips.

Then cut the sheet lengthwise into 4 even strips. You should have 24 squares (each square will be about 2 ½ inches on each side).

Separate the squares and press them gently into the muffin cups.

Remove the rind only from the side edges (I keep the top and bottom). The rind is edible and barely noticeable once the Brie is baked. However, I like to remove the side edges so the corner pieces don’t have too much rind.

Cut chilled Brie cheese into 24 pieces. It’s easier to cut the creamy Brie into cubes when it’s chilled and has a firm texture.

Place in 1 piece of Brie and top with a teaspoon of cranberry sauce to each pastry-lined muffin cup.

Chop candied pecans and walnuts.

Top with a teaspoon of chopped walnuts. Chill for at least 30 minutes. The cold temperatures will firm up the pastry, which will help the butter in the dough will melt more slowly. If you are making ahead, wrap them in plastic wrap and store in the refrigerator for up to 3 days.

Preheat oven to 375ºF (190ºC). Bake the bites in the preheated oven until golden brown, 18 to 20 minutes, or until the pastry is golden brown and the cheese and cranberry sauce are bubbly.

Remove from the oven, let cool in the pan for a few minutes. Transfer the bites to a serving plate and garnish with sea salt and thyme (optional).  Serve warm or at room temperature.

You can store leftovers in an airtight container in the refrigerator for up to 3 days. If you like to freeze them, let them cool completely, then arrange them in a single layer on a baking sheet, and leave them in the freezer until harden. Then store the frozen pieces in an airtight container in a single layer or a ziplock bag for up to 2 months.

To Store

Place (keep them frozen) bites in a mini muffin tin or on a baking sheet lined with parchment paper and bake at 350ºF (177ºC) until warmed through. For frozen bites, reheat directly from frozen at 350ºF (177ºC) in the oven until warmed through.

Brie cheese, (rind mostly removed and cheese diced)

Preheat oven to 375˚F.

Line a baking sheet with parchment paper and set aside.

Unroll the puff pastry on a clean work surface and brush with about a tablespoon of melted butter.

Add the diced brie, cranberries, and nuts evenly over the pastry.

Drizzle honey over cheese, cranberries, and nuts.

Starting at the long end, roll the pastry up as tightly as possible.

Brush the roll with remaining melted butter.

Using a sharp knife, cut into 12 pinwheels.

Transfer pinwheels to previously prepared baking sheet.

Bake for 18 to 22 minutes, or until cheese is melted and pastry is golden.

Remove from oven and let stand couple minutes.

Transfer to a serving plate.

Dust with powdered sugar and serve warm.

Pear & Brie Cheese Salad Skewers

Slice pears into quarters and remove seeds and stem. Cut quarters into roughly 1/2-inch cubes.

Cut brie cheese into similar-sized, 1/2-inch cubes. TIP: I found that leaving the rind on made the skewers a little less sticky to handle!

Take a small (4-inch) skewer, and thread a piece of pear, a bundle of arugula, and then a piece of cheese onto it. Place skewer on a serving platter and repeat until all cheese and pears are used up.TIP: fold the arugula in half to make it a smaller bundle and thread the skewer onto the rind part of the cheese!

Gently press a few pieces of chopped walnuts onto the brie cheese so that they stick. Drizzle balsamic glaze overtop of skewers and enjoy!

Baked Brie with Maple Bacon

brown sugar (packed)

wheel ((16 ounces) Brie cheese)

Assorted crackers

Preheat the oven to 325 degrees F. Line a baking sheet with foil and top with a piece of parchment paper.

Arrange the bacon strips on the prepared baking sheet and bake for 10 minutes.

While bacon is cooking, whisk together the brown sugar, maple syrup, black pepper and cayenne pepper in a medium bowl until smooth. Reserve.

Remove bacon from the oven, blot excess grease with paper towels, and brush the slices generously with the glaze. Return to the oven and cook for 5 minutes. Remove from the oven, turn the strips over and blot with paper towels. Apply the rest of the glaze to the bacon strips and return to the oven. Continue cooking until bacon is golden brown and crispy, about 8 to 10 more minutes. (Your cooking time may vary depending on the thickness of the bacon, so watch carefully.)

Remove the pan and do not turn off the oven. Cool the bacon on the pan for 5 minutes. Blot excess grease with paper towels and transfer to a fresh piece of parchment paper to cool. Discard the foil and parchment paper from the pan and line with a fresh piece of parchment.

Using a sharp knife, cut off the top rind of brie cheese. (It doesn’t have to be perfect, but try to remove most of the upper rind so the bacon topping can soak in.)

Place the Brie cheese on the prepared baking sheet. Place in the oven and bake until the cheese is soft and just starting to melt, about 10 minutes.

Crumble or chop the candied bacon in small pieces. Remove the cheese from the oven, cool for 3 minutes, and use a large spatula to carefully transfer the cheese to a serving platter. Top with the bacon mixture.

Surround with crackers and serve warm. 16 servings.
