Cracker Barrel Broccoli Cheddar Chicken

chicken breasts (4 portions, boneless and skinless)

cheddar cheese soup

milk

Ritz Crackers (crushed)

butter

broccoli (frozen)

cheddar cheese

salt

Preheat your oven to 350 degrees. Make can of Cheddar cheese soup mix according to package directions (one can of soup mix to one can of milk). Place chicken breasts in a 9 by 13-inch baking dish. Season the chicken with seasoned salt. Pour 3/4 of the prepared soup over the chicken breasts.&nbsp;

Add broccoli to chicken that has been covered with the cheddar soup. Melt butter and combine with Ritz crackers, sprinkle buttered crackers over the broccoli. Add remaining soup mix, and bake for approximately 45 minutes or until the chicken is done. (Check chicken by cutting the thickest part and look to see that the chicken is uniform in color). When the chicken has been removed from oven sprinkle with shredded cheddar cheese.

Crispy Broccoli Cheddar Melt Chicken

chicken breasts, ((I like thin-sliced breasts))

kosher salt and pepper

garlic powder

eggs, (lightly beaten)

broccoli florets

olive oil

Preheat oven to 400 degrees F. Spray a 9x13 inch pan with nonstick spray.

Season the chicken breasts all over with garlic powder, salt and pepper. Place the eggs in one bowl and the breadcrumbs in another bowl. Dip each piece of chicken in the egg and then in the breadcrumbs, pressing gently so they adhere to the chicken. Place each chicken breast in the baking dish - do not overlap them!

Once the chicken is in the dish, stick it in the oven. Bake it for 10 to 12 minutes.

While the chicken is baking, place the broccoli in a glass bowl. Drizzle with 2 tablespoons of water. Microwave the broccoli for 2 minutes. This helps to steam the broccoli so it can cook quicker in the oven.

Drain the broccoli and drizzle it with the olive oil, then sprinkle with salt and pepper and garlic powder.

Remove the dish from the oven. Gently flip the chicken. Top with three quarters of the cheese. Add the broccoli on top. Sprinkle on the remaining cheese.

Bake another 10 to 12 minutes, or until the internal temperature of the chicken is 165 degrees F.

Remove the chicken from the oven. Slice and serve!

Broccoli Cheddar Chicken

boneless skinless chicken breasts ((2 lbs))

pepper

cheddar cheese soup, condensed

milk (almond milk can be used)

cheddar cheese, shredded

paprika

onion powder

broccoli florets (frozen) (defrosted)

Ritz style crackers (crushed)

Tablespoon butter, melted

Preheat oven to 350°F. Spray a 9X13 inch casserole dish with non-stick cooking spray and set aside.

Place the chicken in the prepared pan, and season the chicken with salt and pepper.

In a mixing bowl, add the milk, cheddar cheese soup, paprika, and shredded cheddar cheese.

Pour half of the cheese mixture over the chicken.

Next, top with the defrosted broccoli florets.

Pour the remaining cheese mixture over the broccoli.

In a small bowl, mix together the crushed crackers and melted butter.  Sprinkle over the top of all the ingredients.

Bake in preheated oven for 45-50 minutes, or until chicken is cooked through and sauce is bubbly.

Creamy broccoli cheddar chicken is an easy and delicious dinner recipe. Seared chicken breasts cooked in creamy cheddar sauce is perfect served over rice.

Easy broccoli cheddar chicken

chicken breasts ((boneless + skinless))

½ tsp pepper

onion (finely diced)

garlic (minced)

oregano

thyme

chicken stock

heavy / whipping cream

lemon juice ((or to taste))

broccoli florets (larger florets, halved)

salt and pepper (to taste

Place a sheet of parchment paper over chicken breasts then gently flatten to 1cm/0.4 inch thick, with a meat mallet or rolling pin.

Drizzle with olive oil and season on both sides with salt and pepper.

Brown the chicken in a large skillet or deep frying pan. Cook until golden brown on both sides and cooked through. Remove from the pan and set aside.

Add the onion and garlic to the pan and cook for 1-2 minutes until fragrant then add the herbs. Cook for another minute.

Pour in the stock, cream and lemon juice and bring to a simmer. Add the broccoli, cover and allow to cook for 3-5 minutes or until the broccoli stems are just tender. Check by piercing them with a sharp knife.

Reduce the heat, add the cheese and allow to melt while stirring. Add the chicken back into the pan, spoon over the sauce, season to taste and serve.

Broccoli Cheddar Stuffed Chicken

Broccoli Cheddar Chicken is a healthy one-pot chicken recipe that is the ultimate healthy comfort food and is packed with greens. Broccoli cheddar anything has my heart, but this one-pot or one-pan chicken recipe has to be one of my favorites. It is excellent on its own or on top of brown rice or quinoa.

One-Pot Broccoli Cheddar Chicken

lb Chicken Thighs

Fresh Broccoli Florets

Yellow Onion (diced)

Chicken Stock

Whole milk (or cream)

Sharp White Cheddar Cheese (grated)

Parmesan Cheese (grated)

Extra-Virgin Olive Oil

Garlic Powder

Salt and Pepper (to taste)

Preheat the oven to 400 degrees F. In an oven-safe skillet, over medium heat, add olive oil, chicken thighs, and diced onion. Season with salt and pepper. Cook for 5 minutes on each side, then remove from the pan.

In the same skillet, add 1/2 cup chicken stock, 1/2 cup whole milk or cream, and 1 1/2 cups of the grated cheddar, garlic powder, salt, and pepper. Simmer for 5 minutes over medium-low heat until the sauce begins to thicken slightly.

Add the broccoli florets and stir into the sauce. Then add the chicken thighs and onions into the skillet. Top with the remaining cheddar and the parmesan.

Bake for 15-20 minutes until everything is bubbly and brown, and the chicken is fully cooked through.

I'm getting ready to make this for the second time in a week.  This was a big hit with all four of my kids (10,8,5,2) so tonight I'm going to make rotini pasta to serve with it.  Thank you for an easy, delicious meal my whole family enjoys!
