This 5-ingredient coconut curry has broccoli and chickpeas and a creamy coconut curry sauce that comes together super fast.

5 Ingredient Coconut Curry

coconut milk

red curry paste

broccoli

chickpeas,

cornstarch

optional: minced garlic or onion

Saute broccoli (and onion/garlic if you&#8217;re using it) in a tablespoon of oil. After a few minutes, add the coconut milk and let simmer for 5-8 minutes. The broccoli should soften but still be tender-crisp.

Add the curry paste to the pan and whisk it until it combines with the coconut milk. Add the chickpeas.

Bring to a slight boil and add the cornstarch. Boil for about a minute, then reduce heat and let cool slightly. Sauce will thicken as the mixture cools.

So I made this keto with a Keto sweet chili sauce. How is that suppose to help me when it makes you want to eat a entire field of broccoli?

Tastes good but needs a lower oven temperature as it burns easily.

This was quite good, although it really burnt the sheet pan, which we had to throw out. I think next time I'd mix the broccoli with the sauce in the bowl to get better coverage.

Bacon Broccoli Salad is loaded with toppings and the most amazing homemade mayo and greek yogurt sauce. It is the perfect side dish to bring to any party or backyard barbecue! 

Bacon Broccoli Salad

broccoli crowns

bacon ((about 6 slices))

cheddar cheese

onion

sunflower seeds

raisins (golden

mayonnaise

plain Greek yogurt

honey

apple cider vinegar

In a large bowl, combine broccoli, bacon, cheddar, onion, sunflower seeds and raisins and toss to combine.

In a separate bowl, make the sauce. Combine mayonnaise, Greek yogurt, honey and apple cider vinegar together. Whisk or stir ingredients until blended and smooth.

Pour the sauce mixture over top of the broccoli salad and stir until all ingredients get coated.

May serve right away but it is even better if it sits (refrigerated) for 2 hours.

A high-heated oven and a couple of small tips make all the difference in this roasted broccoli that is tender on the inside and crispy with caramelized edges on the outside. The perfect side dish finished with lemon juice, red pepper flakes, and a sprinkle of feta cheese.

Crispy Lemon Roasted Broccoli

Extra-virgin olive oil,

Kosher salt

red pepper flakes,

lemon

feta cheese, (optional)

Set an oven rack in the center and heat the oven to 500 degrees F.

Put a rimmed sheet pan  in the heated oven to heat.

Trim the broccoli stems (remove the tough outer peel) and cut the broccoli into similar size florets.

In a mixing bowl, toss the broccoli with about 4 to 5 tablespoons of extra virgin olive oil and a good pinch of kosher salt.

Carefully take the sheet pan out of the oven. Using a pair of tongs, pick up the broccoli and  quickly, and carefully, arrange the broccoli in one single layer on the pan (leave any excess oil in the bowl). Return the pan to the heated oven.

Roast for 10 minutes on one side until nicely charred. Take the pan out and turn the broccoli over on the other side and cook for another 5 minutes or so until charred.

Arrange the broccoli on a platter. Sprinkle with more kosher salt, red pepper flakes (I used Aleppo pepper). Add zest and juice of one lemon, and if you like a sprinkle of feta cheese.

Insanely Delicious Cheesy Broccoli is savory, crispy, and packed with  flavor! Even the pickiest of eaters will beg for more of this amazing, cheesy side dish!

Heat a large heavy skillet over medium-high heat.

Pour in olive oil to coat the bottom of the skillet. Place broccoli florets into a single layer in the skillet. Season with salt. Cook without stirring 5 minutes, until broccoli is browned on the bottom.

Stir broccoli and let cook again, undisturbed, for 4 to 5 minutes until the other side is browned and broccoli is tender crisp.

Sprinkle in cheese and let melt and bubble and brown. Turn off heat. Sprinkle with red pepper flakes and drizzle with lemon juice just before serving.

Honey Lime Chicken Sheet Pan with Asparagus + Video

chicken thighs (or can use breasts

salt and black pepper (to taste)

lime juice (1 lime)

cilantro

garlic powder

chili powder (leave out if sensitive to spice)

cumin

yellow bell pepper chunks

Side of your choice: rice (pasta, quinoa, farro, potatoes etc.)

4-5 lunch containers

Preheat the oven to 400ºF. Spray a large sturdy baking sheet with cooking spray or for easier clean-up, line with parchment paper or heavy-duty foil.

Place the chicken thighs on the prepared baking sheet. Season with salt and black pepper to taste.

In a small bowl, combine the soy sauce, lime juice, honey, sesame oil, and cilantro together. Drizzle 1/3 of the sauce over the chicken.

Bake for 20 minutes. Meanwhile, combine the seasonings in a small bowl and set aside.

After 20 minutes, remove baking pan from the oven, flip the chicken and place the asparagus, broccoli and bell peppers a long the sides of the chicken. Sprinkle the chicken and vegetables with seasonings and drizzle sauce over the vegetables and some more on the chicken (reserve 1 teaspoon for the end).

Return the oven back to the pan and bake for another 10-15 minutes, or once the chicken is cooked through and has reached an internal temperature of 165ºF. (You may want to remove the vegetables first (so they don't overcook) if the chicken is not cooked through yet, depending on your level of preference.)

Drizzle the chicken with additional sauce and turn the oven to broil for 1-2 minutes, until the chicken has a nice brown color (watch closely so the chicken does not burn).

Sprinkle with chopped cilantro or parsley, if desired and serve hot.

For meal prepping: Make the rice, potatoes, quinoa or pasta while the chicken is cooking. Divide evenly into lunch containers and store in the fridge for up for up five days.

In small bowl, mix together 1/4 cup water with garlic powder, onion powder and mustard powder.

Add the olive oil to a large skillet and heat it on medium high heat. Add broccoli and salt. Cook 2 to 3 minutes until starting to brown, stirring occasionally. 

Reduce heat to medium, and add the water and spices. Cook an additional 4 to 5 minutes until fork tender, stirring occasionally. Taste and add additional salt and black pepper as necessary. Serve immediately.

this is amazing just by itself, i added more plain water overtime to create more steam since mine just werent getting softer (i used a lid too). I took them out just before they were soft and yum!!! i put them on my toast with a poached egg and it was delicious

Love making this recipe! Before I got dry mustard, I would add a teaspoon or two of mustard to the water and it worked so well. The dry mustard really works better though. Great recipe

This was unbelievably tasty for how simple and easy it was. I don't have picky eaters, but some are not vegetable lovers, per se, although they'll eat them. Everyone loved these. This is a keeper and will be made often. Yum!!!

I would say used fresh minced garlic and fresh finely8 chopped onion.  The powder stuff (at least the stuff in my cabinet) was way too salty and it over powered all other flavors.

10 Minute Air Fryer Broccoli Recipe

Season

In a large bowl, toss  broccoli florets with salt, garlic powder, pepper, and olive oil. Use a spoon to distribute oil and seasoning evenly.

Air Fry

Place broccoli in the air fryer tray in a single layer. Air fry at 370°F for 8-10 minutes. Toss halfway through to promote even cooking.

Serve

Serve hot as a side dish to your favorite entrees.

Preheat the oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper.

Chop the broccoli into medium-sized florets, leaving a good amount of the stem for a nice shape (see the photo). In a large bowl, mix the broccoli florets with the olive oil, kosher salt, and Parmesan cheese. Place the shreds that fall onto the parchment paper on top of the florets.

Roast for 15 minutes. Then flip the broccoli and roast about 8 minutes until browned and crispy.

15-Minute Sauteed Broccoli with Garlic and Parmesan

Place a large (12-inch) nonstick skillet over medium-high heat until the pan is hot.

Add the olive oil, broccoli and salt to the pan. Arrange the pieces in one layer on the bottom of the pan as much as possible — this will help them sear better.

Cook the broccoli without stirring 5-8 minutes, until the broccoli is nicely browned on one side. Shake or stir the broccoli around and lower the heat to medium.

Add the water, garlic and chili flakes. Cover the pan and cook 5 minutes, or just until the broccoli is bright green and the stalks can be pierced with the tip of a sharp knife.

Transfer the broccoli to a serving dish. Squeeze the lemon wedges over the broccoli and sprinkle with the grated cheese.
