You&#x27;ll love these easy to make and DELICIOUS buckeyes, creamy, perfectly sweet peanut butter balls dipped in chocolate.

peanut butter (smooth, 240 grams)

tbsp unsalted butter (70 grams)

sugar (240 grams)

tsp vanilla extract (5 milliliters)

semisweet chocolate (340 grams)

tbsp coconut oil (30 milliliters, optional)

Cream the peanut butter and butter together with the vanilla extract.

Add powdered sugar and mix on low until combined. Scrape down bowl and mix again.

Pinch off tablespoon sized pieces and roll into balls. About 20g if you&#x27;re weighing.

Transfer balls to a baking sheet and chill until firm. At least 20 minutes.

Add chocolate and coconut oil to a medium bowl and melt on 50% power in the microwave. Stir to combine and set aside to cool to room temperature.

Use a skewer or toothpick to dip the peanut butter balls into the chocolate. Leave a bit of the peanut butter exposed for that signature buckeye pea look.

Chill to allow the chocolate to firm up and enjoy. If you want to remove the holes left from the skewers, run a small knife or spatula over the tops.

Buckeyes are like peanut butter balls that didn’t get all the way dipped in chocolate. They’re no bake, SUPER-EASY to make and ultra snackable. As an added bonus you can make them in advance and pull them out of the fridge at a moment’s notice.

A simple Buckeye recipe for deliciously decadent peanut butter chocolate candies.

Easy Buckeye Recipe

peanut butter (not "natural" peanut butter) ((475 grams))

salted butter (softened (113 grams))

Tablespoons brown sugar* (packed)

vanilla extract

sugar

oz dark chocolate melting wafers ((340 grams))

Combine peanut butter and butter in the bowl of a stand mixer and beat until well-combined. &nbsp;

Add brown sugar and vanilla extract. &nbsp;Stir well.

Gradually add powdered sugar until completely combined. &nbsp;Scoop into Tablespoon-sized balls and roll with the palms of your hand until smooth and round.**

Place on wax-paper lined cookie sheet and freeze for 15-20 minutes. &nbsp;

While peanut butter balls are chilling, prepare your chocolate according to package instructions. &nbsp;Pour into a deep dish (I use a wide cup). &nbsp;

Remove peanut butter balls from freezer, spear the top of each peanut butter ball with a toothpick and, holding the toothpick, dip each buckeye ball into the melted chocolate.

Return to cookie sheet and remove toothpick. &nbsp;Use the pads of your fingers to smooth over the toothpick mark. &nbsp;

Allow chocolate to harden before eating and enjoying.&nbsp;

Buckeye balls are best kept refrigerated.

Buckeyes are an easy, no-bake classic confection that tastes better than Reese’s and look like dipped truffles. This simple recipe makes a delicious chocolate coated candy dressed as Ohio’s official tree nut.

(½ 8-ounce package) cream cheese (softened)

Use a stand or hand mixer to blend together the peanut butter, cream cheese, vanilla and salt in a medium sized mixing bowl until fully combined and fluffy, about 3-5 minutes.

Gradually beat in the powdered sugar, using a spatula to scrape down the sides of the bowl as needed. You should have a light, tan, soft dough.

Cover a baking sheet with parchment paper.

Form 1 inch balls out of the dough and place them on the cookie sheet. The dough will be slightly soft but it should hold its shape once formed.

Place a toothpick in the top of each ball and place them in the freezer for 20 minutes.

When you are ready to coat the Buckeyes, prepare a second baking sheet by lining it with parchment paper.

Melt the chocolate chips and oil together in a shallow bowl in the microwave. Microwave in 20 second increments, stirring between each cooking time, until completely melted. It should take 1-2 minutes to melt all of the chips.

Remove about 6 Buckeyes from the freezer and place them on the prepared baking sheet. Dip them, one by one, in the melted chocolate, using the toothpick.

Give them a little swirl in the chocolate to cover all but a small circle of the filling, allow the excess to drip off and then place them back on the baking sheet.

Remove another 6 Buckeyes from the freezer and repeat steps 8 and 9. Continue until all Buckeyes have been dipped in chocolate.

Remove the toothpicks from the tops of the Buckeyes and smooth over the hole using a toothpick, an offset spatula or your finger.

Return the Buckeyes to the freezer until set, up to 1 hour, and then place in a covered container in the refrigerator until ready to serve.

Buckeyes can be served straight from the refrigerator or at room temperature.

Buckeye Brownie Cookies

fudge brownie mix (19.5 ounce or family size)

cornstarch

butter, melted

cream cheese, softened

Preheat oven to 350 degrees. In a medium bowl, combine first 6 ingredients with a hand mixer. (The dough will be a little sticky.)

Scoop the dough onto an ungreased cookie sheet. Smooth the edges of each to form a round cookie. Bake for 12 minutes.

Meanwhile, mix powdered sugar and peanut butter in a medium-sized bowl. Form the mixture into about 1 inch balls (1 for each cookie). Set aside.

As soon as the cookies come out of the oven, press a peanut butter ball lightly into the center of each cookie. The peanut butter mixture will soften slightly. Cool for about 5 minutes, then transfer to a wire rack.

Melt chocolate in a microwavable bowl in 30-second increments. Spoon about 1/2 a tablespoon of melted chocolate on top of each cookie so it covers the peanut butter ball. Let the chocolate set. Store in an airtight container.

Use electric beaters to cream together the butter and peanut butter.&nbsp;&nbsp;

Slowly add the powdered sugar until you get a smooth consistency.&nbsp; Add the vanilla and mix.

Form the dough into about 10 dozen small peanut butter balls.

Place the peanut butter balls on a parchment lined baking sheet and put them in the freezer for at least 30 minutes.

When the balls have had a chance to freeze, melt the chocolate melting wafers&nbsp;according to package instructions.

Use a toothpick to dip and coat each peanut butter ball in chocolate. Allow excess to drip off and then place them on a parchment covered baking sheet and allow them to set.&nbsp;

Store in an airtight container in the fridge or freezer.

Add the peanut butter, butter, and vanilla to a large bowl or stand mixer and cream together for 30 seconds.

Sift 3 cups of the powdered sugar into the bowl and beat until smooth. If the mixture is still too soft, beat in an additional 1/2 cup. The mixture should stick together but not be sticky, moore of a set fudge texture.

Chill the mixture in the refrigerator for 30 minutes.

Line a cookie sheet with parchment paper and portion the peanut butter mixture out with a medium cookie scoop and roll into balls. Place them on the cookie sheet and chill in the freezer for 20 to 30 minutes.

Just before removing the balls from the freezer, melt the chocolate melting wafers in a wide glass on 30-second intervals, stirring between each, until fully melted.

Use a toothpick to spear the balls and dip them in the melted chocolate. Use a fork to help remove the toothpick from the ball and place back on the parchment paper.

Use your finger or a paring knife to lightly cover the hole from the toothpick.

Allow to set until the chocolate hardens.

These brown butter rice krispie treats are incredibly simple to make yet so insanely delicious. Rich, nutty brown butter transcends these treats into another realm. A helping hand from vanilla bean paste and malted milk powder elevates the flavor profile here, making these signature crispy treats not like ya average!

Brown Butter Rice Krispie Treats

(2 sticks) good-quality, salted butter (I use Kerrygold)

malted milk powder

vanilla bean paste vanilla extract

crispy rice cereal

Line a 9&#215;13 inch baking pan with a piece of parchment paper or foil with enough overhang on the sides for easy lifting. Then set aside.

In a large, heavy bottomed pot/dutch oven that is lightly colored on the inside, melt the butter over medium-low heat. Once the butter melts, it will get foamy and you will hear it bubbling as it cooks. Then it will take on a clear, light golden color. Note: Do not leave the pot unattended during the browning process as it can burn very quickly. 

Stir the butter every so often, scraping up any bits as you stir. Then the butter will turn deep brown and have a nutty aroma with brown bits on the bottom. Once achieved, remove from heat.

Immediately add in the 20 ounces of mini marshmallows, malted milk powder, and vanilla. Stir the mixture together vigorously until the marshmallows melt through. The residual heat in the pot should achieve this, if not, return the pot back to the stovetop burner and heat on the lowest setting until the mixture is smooth.

Remove from heat and fold in the crispy rice cereal. Stir everything together to fully combine, making sure that all the cereal is nicely coated. Lastly, add in an additional 1.5 &#8211; 2 cups more of mini marshmallows and quickly stir to combine with the mixture. Note: these marshmallows do not need to be melted through.

Quickly empty the mixture into the prepared baking pan. Use a piece of parchment paper or rubber spatula to evenly press the mixture (slightly firm but not packed too tight) into the pan up to the corners.

Allow the mixture to sit in the pan for at least 30-45 minutes. Once set, remove from the pan, and cut into squares. Enjoy!

I use the inside of the butter wrapper to press down the mixture. I can't to try this wpversion!

I am obsessed with the ones sold at Starbucks.  These are even better. I made them last week and have request to make 2 more batches.  If anyone is wondering they can be frozen. Just sit them out and allow them to come to room temp to enjoy.

Y’all. This recipe is bomb AF! Rice Krispie treats has been one of my favorite sweets since I was a little girl and this recipe is next level! I don’t do the add in with the extra marshmallows, but the brown butter, malted milk powder, and vanilla bean paste just take these over the top. Made them twice in a week and my family and friends devoured every bit. Thank you Quin! 

WOW! I usually don't use a recipe to make rice krispies but after trying this one with brown butter and malted milk powder, I am in AWE! I made them to impress a friend and it was successful. The brown butter really upgrades these. This is my new go-to quick dessert for when I have guests over and only a little time.
