Buffalo Chicken Quinoa Bowls

chicken breasts, cooked & shredded

franks red hot sauce (origninal)

cream cheese, softened

quinoa

water

green leaf lettuce

cherry tomatoes, halved

avocados, sliced

red onion

cilantro

optional: drizzle ranch dressing

To a medium sauce pan, add quinoa and water. Bring to a boil. Cover, reduce to simmer and cook for 15 minutes. Turn the heat off and let the quinoa sit there for 5 minutes. Then fluff the quinoa with a fork.

In the meantime, add shredded chicken, franks red hot sauce, and cream cheese to a medium bowl. Mix everything together and make sure all the chicken is coated with the sauce.

Assemble the bowls. Add 3/4 cup of quinoa, 3/4 cup of lettuce, 1/2 cup of the buffalo chicken mixture, cherry tomatoes, sliced avocado, sliced red onion, and fresh cilantro. (optional: drizzle ranch dressing on top)

Loved this so much I am making it again tonight, one week later! I swapped the cream cheese with Greek yogurt to make it a little lighter and it was the perfect substitute. I also sprinkled a little feta cheese on the top before serving. My husband loves buffalo sauce so he loved this dish. Thanks for the recipe... it’ll be one we use often!

I needed to find a simple chicken recipe and found this one.  It was quick and easy.  My husband loved it.  I used another blog tip to shred the chicken with my hand mixer, which then. Add it easy to mix in the cream cheese and the sauce.  Very healthy and filling, but not a heavy meal.  We posted pics on FB, and everyone loved it!

Buffalo Chicken Salad

A creamy, spicy buffalo chicken mac and cheese topped off with a buttery toasted panko.&nbsp;

Buffalo Chicken Macaroni and Cheese

oz dry macaroni noodles

Tablespoons butter ((42 grams))

Tablespoons flour ((24 grams))

milk ((475 milliliters))

salt

pepper

garlic powder

onion powder

mustard

oz cream cheese ((115 grams))

mozzarella cheese

cheddar cheese ((115 grams))

sour cream ((80 grams))

½ cup buffalo hot sauce ((120 milliliters))

chicken ((200 grams))

Tablespoon butter ((14 grams))

olive oil

panko crumbs ((30 grams))

Preheat oven to 350F (175C) and lightly grease a 1.5qt round baking dish or 9x9 square baking dish with butter.

Cook pasta al dente according to package instructions.

Meanwhile, melt butter in a large pot over medium heat.  Once it has melted, add flour and stir until smooth.

Add milk and spices (salt, pepper, garlic powder, onion powder, and ground mustard), stir well and bring to a boil.

Once mixture begins to boil, reduce heat, bring to a simmer, and stir frequently until it is slightly thickened.

Reduce heat to low and add cream cheese, mozzarella cheese, cheddar cheese, and sour cream. Stir until cheeses are melted and mixture is smooth.

Add hot sauce and stir.

Add shredded chicken and cooked, drained pasta noodles and stir until well coated by the sauce.

Pour into prepared baking dish and prepare your Panko topping.

Combine butter and olive oil in a small saucepan over medium heat.  Heat, stirring occasionally, until melted.

Add panko and stir well until the butter and oil has been mostly absorbed.  Continue to stir until panko is lightly toasted and turns a light-medium brown color

Use a spoon to sprinkle over prepared buffalo chicken mac and cheese

Transfer to oven and bake on 350F (175C) for 15 minutes.

Garnish with parsley, if desired, and serve.

Preheat oven to 400°F and spray a large 11 x 8-inch baking dish with non-stick cooking spray.

Add the chicken breasts to your baking dish and drizzle with olive oil. Sprinkle both sides with salt, pepper, and garlic powder, to season.

Prepare your homemade buffalo sauce. In a small mixing bowl whisk together the Frank&#x27;s Red Hot Sauce, melted butter, honey, lime juice, minced garlic, and onion powder. Season with additional salt, pepper, or honey, to taste.

Pour your prepared buffalo sauce over the top of the chicken breasts. Thoroughly coat each chicken breast in sauce (I like to use kitchen tongs to rotate each chicken breast 1-2 times).

Tent your baking dish with foil and transfer it to the oven. Bake, covered, for 20 minutes. Then uncover and continue to bake for an additional 5-15 minutes, or until internal temperature registers 160°F as measured with a digital meat thermometer.

Remove from the oven and allow your chicken to rest for 5 minutes before serving.

Buffalo Chicken Pizza

Whole Wheat Pizza Dough

Buffalo sauce (I used Frank’s)

chili powder

chicken breast

blue cheese (2 ounces—I used gorgonzola; swap feta

red onion (thinly sliced)

green onions (thinly sliced)

Line

Place rack in upper 1/3 of oven and preheat oven to 425 degrees F. Line a large baking sheet with parchment paper or dust with cornmeal or flour.

Whisk

In a large bowl, whisk together the Buffalo sauce, garlic powder, and chili powder.

Toss

Place the dough on a lightly floured work surface and roll into a 11x14-inch rectangle. Gently transfer the rolled dough to a prepared baking sheet. Top with the chicken-sauce mixture, leaving a 3/4 inch border around all sides.

Bake

Sprinkle on the mozzarella, blue cheese, and red onion. Bake for 15-18 minutes, until the crust is crisp and golden. Sprinkle with the green onion. Slice and serve.

We love to grill and this grilled buffalo chicken recipe is so easy but really packs a ton of buffalo flavor.  Each bite is tender and delicious.

Buffalo Chicken recipe

ranch dressing (dry packet)

buffalo sauce

Place chicken, ranch dressing packet, and buffalo sauce in a freezer bag.

Marinade at least one hour.

Remove from the bag and place on the grill.

Cook on high heat for 2 minutes, flip and then turn to medium heat.

Cook until chicken is cooked through. About 20 minutes.

Serve immediately.

These Shredded Buffalo Chicken Wraps are the ultimate no-fuss lunch! They&#039;re also a perfect opportunity to use up some leftovers you&#039;ve got knocking about in the fridge and couldn&#039;t be any more delicious if they tried!

Shredded Buffalo Chicken Wraps

4x 10" Flour Tortilla Wraps

(~300 grams) Cooked Shredded Chicken ((see notes))

/ 125 milliliters Buffalo Sauce, (or as needed (see notes))

tbsp Blue Cheese Sauce ((see notes))

Carrot, (peeled, grated and squeezed with your hands to remove moisture)

Iceberg Lettuce, (finely sliced)

Red Cabbage, (finely sliced)

In a medium-sized bowl, combine 2 packed cups (~300g) shredded chicken with 1/2cup/125ml buffalo sauce.

Lay out your wraps and in the bottom centre stack in this order: blue cheese sauce, lettuce, carrot, cabbage, buffalo chicken.

Fold over the bottom of the wrap to cover the filling. Fold in the sides and tightly roll into a mini burrito/wrap. Enjoy!

The use of blue cheese and that hot sauce sounds interesting. And I also like the crisp fresh veggies. Is there a milder alternative to the hot sauce?
