These Easy Buffalo Chicken Tacos are an easy chicken taco recipe filled with classic buffalo flavor and come together in 15 minutes!

Buffalo Chicken Tacos

hot sauce (such as Frank's Red Hot)

apple cider vinegar

unsalted butter (optional)

garlic powder

Worcestershire Sauce (or a pinch of salt)

chicken

salt

tsp pepper

honey (optional)

tortillas

iceberg lettuce (shredded)

carrots

ranch dressing or blue cheese (plus more for serving)

cheddar cheese (shredded)

In a medium mixing bowl, combine the shredded lettuce, carrots, and 1/4 cup of the ranch or bleu cheese dressing. Toss together until everything is well combined. Cover and refrigerate until the buffalo taco meat has been prepared.

In a medium saucepan, combine the hot sauce, vinegar, butter, garlic powder, and Worcestershire sauce together. Bring to a simmer over medium-high heat. Once simmering and the butter has melted, turn off the heat. Add the honey and shredded cooked chicken to the pan and toss to evenly coat in the sauce.

Heat the flour or corn tortillas in a dry skillet, one at a time, until warmed through and pliable.

Serve

Using tongs, or a slotted spoon, fill the taco shells with the buffalo chicken mixture. Top with the lettuce and carrot mixture and shredded cheese. Feel free to top the tacos with additional dressing, minced chives, or crumbled blue cheese. Serve immedaitely.

Instant Pot Buffalo Chicken Tacos! Buffalo broiled chicken covered with a limey slaw and a smothering of homemade ranch, all tucked into a charred tortilla.

Instant Pot Buffalo Chicken Tacos

1.25 lb boneless skinless chicken thighs

onion powder

salt and pepper

buffalo sauce

cup mayonnaise

cup olive oil

cup water

tablespoon white vinegar

1 clove garlic

teaspoon dried dill (or about 1/4 cup fresh)

cup fresh parsley

teaspoon salt

black pepper to taste

cabbage

cilantro

avocado

limes

Place chicken, seasonings, and buffalo sauce in the Instant Pot. Cook on high pressure for 15 minutes. Allow for natural pressure release for 5-10 minutes. When chicken is done, shred with two forks.

While chicken cooks, make the ranch. Combine everything in a food processor and pulse until smooth.

Transfer shredded chicken and sauce to a baking sheet. Broil for 10-15 minutes until browned and crispy.

Assemble tacos: buffalo chicken, mashed avocado, shredded cabbage, lime squeeze, cheese of choice, and ranch all in a nice fluffy tortilla.

DO NOT FOLLOW THIS RECIPE AS IS, IT WILL BURN IN YOUR INSTAPOT!!!

You need at least a cup of liquid. You should update your recipe so you don't ruin people's dinner and INSTAPOT.

I tried the high setting on my slow cooker for 3 hours and it resulted in slightly tough chicken thighs. I had to wrestle the meat into shreds rather than it falling apart. It still tasted fantastic as thighs are forgiving but next time  I'll cook them for 6-8 hours on low to get that soft, fall-apart texture.  

Amazing recipe and I was so happy I managed to get Frank's Buffalo Wing Sauce from Sainsbury's here in the UK.

I've made this recipe several times and only got burn notice once. I use a little more buffalo sauce and put some under as well as on top of chicken and that seems to work. Tasty!

I loved this! Good recommendation on having faith in chicken thighs! We preferred with crunchy shells. It was a flavor explosion!!!

Made the buffalo chicken last night and WOW!   So tasty and easy.  I didn’t make  tacos with the meat -  just ate it over brown rice.  Used some of the leftover chicken in a salad for lunch today.

I made this tonight for dinner and my husband and I loved it! My husband especially loved the ranch and we agreed that store bought ranch would not have worked in this recipe. I also loved that you had the note on how to adapt the recipe to make it kid friendly! My husband and I love spicy food and we have an infant and keep discussing ways we will have to adjust some recipes at first so he can eat with us as he gets older. Thank you!

This cheese-fried breakfast taco is the perfect way to start your day!

Cheese-Fried Egg-Wrap Breakfast Taco

Large egg wrap ((Trader Joe’s or Eat Crepini))

Tbsp Grated pepper jack cheese (20 g)

Small avocado ((20 g))

Heirloom

Arugula

Salt and pepper

Heat a nonstick skillet over high heat with a spritz of oil spray. Sprinkle cheese right on the pan and cover immediately with the egg wrap, smashing it down and sliding it around just a bit with a spatula. Let it cook on high for a couple of minutes, or until the cheese is brown and crispy and not sticky at all. Remove the wrap from the pan.

Spray with another spritz of oil and crack your egg in the pan. Cook on high for a minute or two, until it’s set. Then turn the heat off and flip it. Let it sit on the hat pan for just another minute or less.

While the egg finishes cooking, smash your avocado on one half of the wrap. Top with sliced tomato, runny egg, and arugula. Season each layer with good salt of course!

Fold the taco closed, and enjoy. Or if you’d like, you can carefully lay the folded wrap back in the pan so the outside is extra warm and fresh.

Super yummy! The browned cheese on the outside of the egg wrap is a MUST! We added 15g of chopped bacon.Thanks for the recipe!! It will be one of our new go to breakfasts!!

I found the egg wraps really boring in the past and this did the trick!  Made a turkey taco with siracha and I love it being crisped up!  TY!

Shaved Pork Tacos with Spicy Mango Slaw

Siete® cassava flour tortillas, tortillas

pork

Of an avocado, chopped ((30 g))

Spicy mango slaw (recipe (75 g))

Tbsp Sriracha mayo ((30 g) recipe below)

Dairy-free sour cream

Tbsp Sriracha ((30 g))

Spray tortillas with a mist of olive oil and sprinkle with salt before heating them in a skillet or right over your stove-top flame (carefully using tongs) to get a char.

Smash avocado on the hot tortillas and top with sliced pork tenderloin. (If it’s leftover, just throw it in the pan with your tortillas for a minute or less JUST to take the cold out. No need for piping hot! That’s what brings the reheated meal flavor.

Top your pork with a big pinch of the spicy mango slaw, and drizzle with sriracha mayo. Enjoy immediately!

My husband made this last night and it quickly has moved to the top of my taco recipes.  My kids even commented on how they don't typically like cabbage, but this was delicious!  He did a 1/2 c of white wine, 1/2 c of water, some vinegar and salt and pepper on the pork in the instapot, but everything else was straight from this recipe.  It will be on our menu now frequently.
