Caesar Salad Recipe

French Baguette (cut in half and thinly sliced (1/4" thick))

Tbsp extra virgin olive oil

tsp minced garlic (2 small cloves)

Tbsp grated parmesan cheese

lemon juice

tsp red wine vinegar

Preheat oven to 350˚F. Cut the baguette in half lengthwise through the top of the baguette then slice diagonally into 1/4" thick pieces. Place the breads onto a baking sheet.

In a small bowl, combine 3 Tbsp extra virgin olive oil and 1 tsp of finely minced garlic. Drizzle the garlic oil over the croutons and sprinkle the top with 2 Tbsp grated parmesan cheese.

Toss until evenly coated. Spread in a single layer over the baking sheet and bake at 350˚F until light golden and crisp (10-12 minutes), or to desired crispness.

How to Make Croutons:

In a small bowl, whisk together garlic, dijon, Worcestershire, lemon juice and red wine vinegar.

Slowly drizzle in extra virgin olive oil while whisking constantly.

Whisk in 1/2 tsp salt and 1/8 tsp black pepper, or season to taste.

How to Make Caesar Salad Dressing:

Rinse, dry and chop or tear the romaine into bite-sized pieces. Place in a large serving bowl and sprinkle generously with shredded parmesan cheese and cooled croutons. Drizzle with caesar dressing and toss gently until lettuce is evenly coated.

An eggless Caesar salad recipe gets a kick in the pants from a dose of wasabi paste, smoked salmon, nori crisps, and crunchy vegetables. 

Wasabi Caesar Salad

garlic,

If you have a mortar and pestle, work together the garlic, anchovy and salt to a paste. Work in the wasabi, then the mayonnaise. Slowly drizzle in the oil, stirring or whisking constantly to form an emulsion, then stir in the tamari and lemon juice. (Otherwise, put the garlic through a press, mince the anchovy as finely as you can, and whisk in the remaining ingredients as described.) Taste, adding more wasabi, lemon, salt, or tamari if you feel the dressing needs it. The flavors will come out as the dressing sits. Cover and chill until needed, or up to 1 week.

Make the dressing:

In a large bowl, combine the lettuce, cucumber and radishes. Drizzle with the dressing (it will be thick) and use clean hands to toss until evenly coated. Gently toss in the smoked salmon, parmesan and avocado. Sprinkle with the sesame and nori strips and serve immediately.

In a large serving bowl, combine romaine lettuce, parmesan, and croutons.

In a medium mixing bowl, combine the salad dressing ingredients. Use a whisk to mix together and stir to combine. (Note that caesar dressing is typically thicker than other dressings. If this recipe is too thick for you, whisk in 1/2 tablespoon of water to thin it out a bit).

Drizzle salad with caesar salad dressing and toss gently to combine. Serve immediately.

Roasted Broccoli Salad with Miso-Caesar Dressing

broccoli

Worcestershire sauce ((or tamari))

Preheat oven to 425ºF.Arrange broccoli florets on about two-thirds of a large rimmed baking sheet. Add diced bacon to remaining space, and scatter shallots over bacon. Toss broccoli in 2 Tbsp. olive oil, and season to taste with salt and black pepper. Roast for 30 minutes, tossing everything once after 20 minutes.Transfer contents to a bowl, leaving any residual bacon grease on the pan. Add panko breadcrumbs to pan, tossing in residual bacon fat. Place pan in the oven to toast breadcrumbs until golden, about 3 to 4 minutes, rotating the pan once halfway through. *Watch closely to avoid burning

Meanwhile, prepare dressing by combining mayonnaise, lemon juice, miso paste, anchovy paste, Worcestershire sauce, and garlic in a bowl; mix to combine. Gradually stream in olive oil, whisking constantly, until smooth. Season with a few grinds of black pepper.

To the bowl with roasted broccoli mixture, add toasted breadcrumbs, grated cheese, and dressing; toss to combine. Serve warm or closer to room temperature.

Classic Caesar salad that I have regular requests for at our barbeques. It's simply the best.

Place all dressing ingredients in high-powered blender or food processor and process until very smooth, taking the time to scrape down the sides of your container as needed. Add up to 4 tablespoons additional water to achieve your desired consistency.

Dressing

Add the oil to a small saucepan until it is 1/4 inch deep.

Heat the oil over high heat, until shimmering. To test if the oil is ready, add a caper. It should sizzle immediately. If it doesn’t, the oil isn’t hot enough.

Add the capers to the pan and fry until golden and crispy, about 2-3 minutes. Remove with a slotted spoon and spread out on a paper towel lined plate.

Fried Capers

Preheat your oven to 375 degrees.

Add bread cubes to a large bowl and drizzle with olive oil. Toss to coat. Sprinkle in Italian seasoning, garlic power, salt and pepper. Toss to coat.

Spread the bread cubes out in a single layer on a baking sheet.

Bake for 15-20 minutes, tossing once during cook time.

Croutons

Place your chopped lettuce in a bowl and toss with 1/2 cup of the dressing, add more or less to suit your taste. Top with avocado, croutons and fried capers.

To Serve

A simple chopped salad inspired by the greatest salad of all time – the chicken caesar.

Chicken Breast

Sourdough

Tenderstem Broccoli

Romaine Lettuce

Parmesan

Capers

Mayonnaise

Heat the oven to 180°C. Put the two chicken breasts on a tray and drizzle with a little olive oil. Season well and slide into the oven and bake for 20 mins, until cooked through. Set aside until cool.

Tear the bread into chunky croutons, whack on a baking tray and drizzle with olive oil. Season with salt and pepper. Slide into the oven for 15 mins.

Bring a pan of salted water to the boil, drop in the Tenderstem broccoli and cook for 2 mins, then remove and set aside on a plate to cool.

Add the romaine lettuce halves to a board with the cooked chicken, Tenderstem broccoli and parmesan cheese. Chop together, then slide into a large bowl. Combine the dressing ingredients, then add the croutons and capers and drizzle with the dressing. Toss well then tip onto plates. Top with an extra grating of parmesan cheese.

Lovely dressing but I did add a little bit of garlic to it as well.

Really enjoyed this. I usually pan fry the chicken, and was wary of baking it, but it was easier, tastier and less washing up! 
The croutons were delicious and used up some bread that would otherwise have gone in the bin... 

Changes: I used M&S roasted garlic mayonnaise in the dressing and a bit (lot) extra parmesan. I also only used two romaine lettuce (one pack) and it was easily enough.

Delicious dressing, I too added some Greek yogurt and as had no anchovies, added extra Parmesan which worked fine.

We make this almost weekly and it’s incredible every time - have evolved it to use 1/3 mayo and 2/3 Greek yoghurt, add avocado, add crispy onions, shave the Parmesan straight into the salad, and use garlic granules in the dressing

Loved this!! I added some garlic to the sourdough croutons, and they turned out amazing
