fio de azeite de oliva

300 g de cebola com casca em pedaços

cenoura em pedaços

talo de alho-poró em pedaços

talos de aipo (salsão) em pedaços

dentes de alho com casca levemente amassados

bouquet garni (amarrado com louro, alho-poró, tomilho, salsa, alecrim)

Pimenta-do-reino preta em grãos a gosto

litros de água

Aqueça o azeite em fogo médio e refogue a cebola, a cenoura, o alho-poró, o aipo e os dentes de alho até dourarem levemente.

Adicione os demais ingredientes e deixe cozinhar por 30 minutos. 

Coe em uma peneira fina ou cônica (chinois) e utilize ou armazene.

Salt and pepper

Place the ribs in a large pot with the cumin, achiote salt, pepper, and the water.

Bring to a boil, reduce heat and simmer for about one hour. Place the garlic, onions and scallions in a blender with 1/4 cup of water and blend for about 1 minute. Add this mixture to the pot and cook for 40 minutes more.

Add half of the cilantro, potatoes and carrots. Season with salt and pepper and cook for 25 to 30 minutes more or until the potatoes are tender.

Sprinkle with chopped cilantro and serve warm.

Sonora Cheese Soup

potatoes (about 4 medium, peeled and diced (about 3 cups))

chicken broth

Heat the oil over medium heat in a large, heavy soup pot. When hot, add the potatoes and onions and cook, stirring often, until the onions are soft and translucent, about 4 to 5 minutes. Add the tomato, prepared Anaheim or poblano chiles, and salt, and cook until the ingredients are softened, 4 to 5 minutes more.

Add the chicken broth, bring to a simmer and cook for 10 minutes, or until the potatoes are completely tender and the broth has thickened a bit. Taste and adjust salt. Reduce the heat to medium-low, slowly add the milk and bring back to a gentle simmer. Gradually crumble the cheese into the simmering soup and stir until cheese is completely melted – or serve in bowls with cubes of the cheese in the bowls adding the soup on top. Taste again for salt and serve hot.

Caldo de Papa Con Queso

Heat 2 tablespoons of oil in a large pot to medium heat. Add the  onion and garlic.. Season lightly with salt and pepper. Saute for 3 minutes. On the back burner, combine the broth and milk in a sauce pan and heat on low.

To the pot of onions and garlic, add the potatoes and butter. Add a pinch of salt and saute for 5 minutes. Add in the tomatoes, poblano and corn and saute for a 3-5 minutes.

Mix in the warm broth and milk from sauce pan.. Bring up to a light simmer and cook until potatoes corn are cooked all the way through. Taste for salt. Mix in the parsley.

To serve, add some queso fresco or panela to the bottom of the bowl. Ladle in some hot soup.  Garnish with cilantro and avocado. Yields 6 hearty servings.

lbs of thinly sliced top round steak, cut into 1 inch pieces

lb bacon, each strip

cooked and drained bayo or pinto beans

spring onions, bulbs only

Begin by filling a medium-sized saucepan with water,  enough to cover the tomatillos and serrano peppers. Bring the water to a boil. Meanwhile, remove the husks from the tomatillos and wash them thoroughly. Once the water is boiling, add the tomatillos and serrano peppers to the saucepan. Boil about 10 minutes until their color slightly changes. Once done, remove the saucepan from the heat and set aside to cool.

While the tomatillos and peppers are cooling, take a large skillet and fry the bacon over medium-high heat until evenly browned. Once done, transfer the cooked bacon to a plate lined with paper towels to absorb excess grease. In the same skillet with the remaining bacon fat, add the spring onion bulbs. Sauté for approximately 7-10 minutes, or until they’re softened. Once softened, remove the onions from the skillet and set them aside with the bacon.

In a blender, combine the cooked tomatillos and serrano peppers with cilantro, 2 garlic cloves, 1 cup of water, chicken bouillon, cumin, and oregano. Blend the ingredients until smooth, then set aside.

Season cubed steak with salt and pepper and set it in a large pot over medium-high heat. Once the steak begins to brown and release its juices, reduce the heat to medium and add the cooked bacon, spring onions, and drained beans.

Next, add the prepared salsa, along with 4 cups of beef stock and 2 cups of water, into the pot. Stir everything together until well combined. Cover the pot with a lid and let the mixture cook for about 15-20 minutes.

Once the flavors have melded together, ladle the stew into bowls. Garnish each serving with onion, cilantro, radishes, and a squeeze of lime. Serve alongside warm tortillas.

500 g de acém moído

500 g de alcatra moída

envelope de MAGGI® Caldo em Pó Carne

colheres (sopa) de água fria

pães de hambúrguer

ovos

xícara de farinha panko

Em um recipiente, coloque as carnes moídas, o MAGGI Caldo em Pó Carne e a água.

Misture muito bem para temperar por igual.

Modele 10 hambúrgueres médios (cerca de 6 cm de diâmetro) e empane, primeiro passando no ovo e, em seguida, na farinha panko.

Leve os hambúrgueres para a Airfryer a 200ºC por cerca de 20 minutos, ou até estarem dourados e cozidos.

Modo de Preparo

Cuando necesitamos calor o nuestro cuerpo está cansado no hay nada como tomarse una taza de caldo de pollo. Si lo elaboramos en casa disfrutaremos de ese momento aún más, ya que estaremos consumiendo un plato con ingredientes frescos y totalmente saludables.

Doramos con muy poco aceite todo el pollo en una olla

Una vez dorado, agregamos todos los ingredientes del caldo a la olla

Dejamos hervir durante 1 hora y 30 minutos

Al poco de hervir, con una espumadera, sacamos la espuma que forma el pollo al hervir. Vamos clarificando nuestro caldo

Cuando haya pasado el tiempo de cocción, dejamos reposar el caldo durante 30 minutos

Colamos nuestro caldo y lo enfriamos en la nevera durante 1 día

Quitamos el resto de grasa que se habrá formado en la superficie con una cuchara

Esto pollo no lleva nada de grasa, ahora cuando la elaboremos lo vereis.

Pollo al horno con naranjas y cerveza


kg. contramuslo de pollo

dientes ajo troceado

poco de perejil molido

hojas laurel

pizca pimienta molida blanca

pastilla caldo

unos 30 gr de mantequilla en cada pieza

el zumo de 6 naranjas

lata cerveza

Disponemos el pollo en una bandeja rectangular para horno, poner encima un poquito de mantequilla, sal, perejil, pimienta molida y las dos hojas de laurel.

Meteremos en el horno aproximadamente uno 45 minutos para que la carne se vaya asando.

Una vez pasado este tiempo añadimos el zumo de naranja y la cerveza, esperamos otros 45 minutos para que se termine de hacer y reduzca la salsa, lista para servir.
