Campbell's Red Lentil Dahl with Kumara

Tbsp Vegetable oil

Brown onion

Cloves garlic, chopped

tsp ginger

Tbsp Mild curry powder

Tbsp Tomato paste

litre / 4 cups Campbell's Real Stock – Vegetable

400 g Kumara, peeled,

Baby spinach leaves

Tbsp coriander

Yoghurt and toasted/warmed roti bread, to serve

Heat oil in a large saucepan. Add onion, garlic, and ginger. Cook, stirring occasionally, for about 3 to 4 minutes, or until soft. Add curry powder. Cook, stirring for a further 1 minute.

Stir in tomato paste, lentils, stock and sweet potato. Bring to boil. Simmer, uncovered, stirring occasionally, for about 12 to 15 minutes, or until sweet potato and lentils are tender. Remove from heat. Stir in spinach and coriander.

Lightly flavoured with honey and mustard in a nice creamy sauce

Copper Pennies (Marinated Carrots)

carrot,

medium onion, finely diced (about 1/2 cup)

green pepper, finely diced (about 1 cup)

(10 3/4 ounces) condensed tomato soup

vegetable oil

sugar

white vinegar

yellow mustard

Worcestershire sauce

salt

pepper

Place the carrots in a 3-quart saucepan and cover with water. Bring to boil; reduce heat to low and cook for 5 minutes or just until the carrots are tender. Drain the carrots; cool for 10 minutes then stir the carrots, onion and pepper together in a large bowl.

In sauce pot, bring the soup, oil, sugar, vinegar, mustard, Worcestershire, salt and pepper over medium-high heat to a boil. Remove the saucepan from the heat and let the soup mixture cool to room temperature.

Pour the soup mixture over the vegetables. Cover and refrigerate for at least 12 hours. Serve the vegetable mixture hot or cold.

Easy beef braise

Tbsp Butter

Tbsp Oil

850 g Beef, cross-cut, diced (Main)

500 ml Campbell's Beef Stock (Main)

Tbsp Flour

Onions,

Tbsp Brown sugar

Bay leaves

Lemon parsley

Heat the butter and oil in a flameproof casserole dish. Toss the diced beef in flour, salt and pepper. And fry in the casserole dish until brown on all sides (this might need to be done in batches). Remove to the side.

Add the onions to the casserole dish and fry a couple of minutes to brown (adding a little more butter and oil if necessary).

Stir in the tomato paste, Worcestershire sauce and bay leaves.

Add the stock, stirring to bring everything together, and to pick up the brownings from the base of the casserole. Bring to the boil, cover the casserole and cook in the oven for 2 ½ hours or until meat is tender.

Serve with a sprinkle of lemon zest and chopped parsley.

Slow-cooker lamb shanks with Mediterranean flavours

Lamb shanks

Tbsp Olive oil

Onion, chopped

Garlic cloves, sliced

Rosemary

Tbsp Chopped oregano leaves,

Anchovy fillets

Olives, pitted

tsp Chilli flakes

Chopped tomatoes, 400 grams

Tbsp Honey

Heat the oil in a large frying pan. Toss the lamb shanks in the flour and fry the shanks until brown all over. Reserve the excess flour. Place the shanks in the slow cooker

Add the onion and garlic to the frying pan and stir-fry for 3 minutes. Add the excess flour to the frying pan, stirring well before adding a little of the stock to deglaze the pan.

Pour in to the slow cooker with the rosemary, oregano, anchovies, olives, chilli flakes, tomatoes and beef stock. Drizzle the honey over the top of the shanks.

Serve with juices from the pot, crispy potatoes and winter greens.

Homemade Copycat Spaghettios

O-shaped pasta

tomato sauce

tomato paste

garlic powder

paprika

onion powder

thyme

salt ((plus salt for pasta water))

honey

milk

salted butter

cheddar cheese, (optional)

Start by cooking the pasta according to the package instructions.

While the pasta is cooking, add all of the other ingredients (except the shredded cheese) to a sauce pan.

Over medium heat, whisk the ingredients together and cook until the butter is melted and the sauce is simmering. (If you are adding the shredded cheese, do so now. Use a rubber spatula to fold it into the sauce until melted and fully incorporated.) Continue to simmer, stirring frequently.

Drain the cooked pasta well. Transfer it to the saucepan with the sauce. Stir the pasta into the sauce and evenly coated. Turn off the heat. Plate the pasta and enjoy.

Creamy Chicken Rice Casserole

chicken breasts

Campbell's cream of chicken soup ((or 1 large can))

Minute (or quick cooking rice (Uncooked))

chicken broth

sleeves Ritz crackers (crushed)

Preheat the oven to 350F.

In a large bowl, mix cream of chicken soup, cubed chicken breast, (uncooked) rice, chicken broth and sour cream together until everything is incorporated, then spread the mixture into a 9x13 baking dish.

Pour the Ritz crackers into a zip top bag and roll over them with a rolling pin. Open the bag and pour in butter and then reclose and shake it around until the cracker crumbs are evenly coated in the butter.

Spread the cracker mixture over the top of the casserole, then place in the middle rack of the oven and bake for 40 minutes, or until the crackers are golden and the rice is tender. Enjoy!

Made this tonight, substituted one can of the cream of chicken with cheddar soup. Otherwise followed exactly and it turned out so good! Family loved it

Easy Green Bean Casserole

green beans (thawed (see note))

can cream of mushroom soup

soy sauce

French fried onions ((2.8 ounce container))

Preheat the oven to 350˚F.

Combine the green beans (frozen, canned or fresh), cream of mushroom soup, milk, soy sauce, and garlic powder together in a mixing bowl and mix to combine.

Transfer green bean mixture to a small casserole dish and spread evenly.Top the green beans with french fried onions.

Bake for 20-30 minutes or until the edges are bubbly and the onions are crisp.

Let sit 5 minutes, then serve warm.

(28 oz) can crushed tomatoes, drained

oz velveeta, cubed

(8 oz) package cream cheese, cubed

mozzarella cheese, shredded, divided

Mom&#8217;s Tomato Soup Dip

In an 8x8-inch baking dish, combine tomato soup and crushed tomatoes.

Place cubed velveeta and cream cheese on top and bake for 15 minutes, or until velveeta is soft.

Mix in 1 cup of mozzarella, basil, and garlic powder and then top with remaining mozzarella cheese.
