Simple, unique, and flavorful is what this Moroccan carrot salad is all about! Tender cooked carrots are tossed with fresh herbs and warm Moroccan spices like cumin and harissa, then dressed in lemon juice, extra virgin olive oil. The final touch, a sprinkle of toasted sesame seeds!

Moroccan-Style Carrot Salad

water

Kosher salt

carrots,

celery stalk, chopped

tsp harissa spice

tsp cumin

tsp coriander

tsp sweet paprika

garlic cloves, minced

celery

cilantro

lemon juice

tbsp Extra virgin olive oil

tbsp toasted sesame seeds, optional

Bring a large pot of salted water to a boil. Add carrots and cook for about 20 minutes until nice and tender. Drain.

Transfer the cooked carrots immediately to a large mixing bowl. And while nice and warm, season with a dash kosher salt, and the spices (harissa spice, cumin, coriander and paprika.) Add minced garlic, celery, cilantro, lemon juice and extra virgin olive oil.

If you like, add a sprinkle of toasted sesame seeds. Give the carrot salad a good toss to combine. Set the carrot salad aside for a bit before serving (it's best served at room temperature.)

This simple carrot salad with raisins gets an upgrade with a slightly spicy, slightly sweet, and very addictive sauce. It brings out the sweet freshness of the carrots and makes the whole dish sing. We are tempted to pour it over all of our salads from here on out.

Five-alarm spicy!!!  If you're new to using harissa, start with just a pinch and taste before you decide to add more.  I made the recipe as written, and apparently my store-bought harissa was highly potent.  Our mouths were on fire.  The next time I adjusted the recipe to about 1/8 tsp of harissa and 1 1/2 Tbsp honey, and everyone thought it was delicious -- just the right combination of sweet, smoky, and spicy.  I'll be putting this in our regular rotation with the adjusted measurements.

Carrot Fries Are The New Sweet Potato Fries

A quick and easy lamb recipe – this supper beats the takeaway version hands down.

Lamb tikka with spiced carrot salad in flatbread

tbsp plain yogurt

ginger,

curry powder

lamb leg steaks,

olive oil

tsp black mustard seeds

cherry tomatoes, halved

coriander,

round flatbreads, chapatis

Tomato relish

Mix the yogurt, ginger and curry powder together in a large bowl. Add the lamb cubes, turn to coat, then leave to marinate for 10 minutes.

Heat the oil in a frying pan, add the mustard seeds and cook over a medium heat until they begin to pop. Remove from the heat and transfer to a large bowl. Stir in the carrots, lime zest and juice, tomatoes and coriander with the extra-virgin olive oil and salt and pepper to taste.

Preheat the grill to medium and thread the lamb onto 4 skewers (see tip). Lay the skewers on a baking tray lined with foil. Season and grill for 4 minutes, turning halfway, until cooked but still juicy.

Spoon the carrot salad onto the flatbreads, top with the lamb and some relish and roll up to eat.

Carrot Salad

mayonnaise

(20-ounce) can crushed pineapple, (well-drained)

raisins

pecans, (coarsley chopped)

 In a small bowl add mayonnaise, lemon juice, salt and sugar and whisk until well combined.

 In a medium bowl add carrots, pineapple, raisins, and pecans.  Pour mayonnaise mixture over carrots and toss until well combined.

The Best Air Fryer Sweet Potato Fries Recipe

sweet potatoes (or 4 medium sweet potatoes)

cornstarch

garlic powder

paprika

tsp sea salt

tsp black pepper

Peel

Wash and peel your sweet potatoes.  Slice the sweet potatoes in half lengthwise with a sharp knife on a cutting board.  Then cut each half in half again lengthwise.  You will have 4 sections of sweet potato.  Cut each section into fries.  You want them to be quite small, about ¼-inch wide.

Soak

Place the sweet potato fries into a large bowl, and cover with cold water.  Let them soak for a minimum of 1 hour or as long as overnight.

Drain the water out and place the sweet potatoes on a towel on the counter.  Pat dry with paper towels.  You want them to be as dry as possible.

Season

Place sweet potatoes in a large bowl.  Add about 3 tsp of cornstarch, ¾ tsp of garlic powder, ¾ tsp paprika, ½ tsp of sea salt, and ⅛ tsp of black pepper. Use a large spoon and mix up the cornstarch and seasonings into the sweet potatoes.  The white cornstarch will disappear. Add 3 tbsp of olive oil, and mix it up again.

Cook

Preheat your air fryer to 400 degrees Fahrenheit.  Add the sweet potatoes to the basket of the air fryer in a single layer, with space between them to allow the hot air to circulate. Do not overcrowd the basket.  Cook in small batches so that they cook evenly and get really crispy.

Shake

Set the cooking time for 15 minutes, and be sure to give the air fryer basket a good shake every 5 minutes.

Serve

That&#39;s it! Serve hot with your favorite dipping sauces.

This Carrot Raisin Salad is studded with cashews and tossed in the most flavorful Indian curry dressing.  Simple to make, healthy vegan, this carrot salad recipe is so addicting!

Carrot Raisin Salad

carrots, grated or matchstick

lime or orange zest (or some of both)

garlic clove, finely minced garlic

cashews

scallions

lime juice (or sub apple cider vinegar)

tablespoons, maple syrup, honey

pepper

½ teaspoon ground turmeric

yellow curry powder

cayenne

Place all ingredients in a bowl and toss well. Taste. Adjust salt, acid and sweetness to taste.

This will keep up to 4 days in the fridge.

Crunchy nutty Quinoa Salad with Carrots, Almonds, Cilantro and Raw Apple Cider Vinaigrette - a simple flavorful vegan salad that can be made ahead- perfect for potlucks, gathering and midweek meals!

Carrot Quinoa Salad 

quinoa,

——-

celery, sliced

scallions, sliced at a diagonal

cilantro, chopped (tender stems ok)

garlic, finely minced

almonds,

½ teaspoon cayenne or aleppo chili flakes

allspice, optional

apple cider vinegar and pepper

sprouts-

apple cider vinegar (with the “mother” in it)

raw honey (or maple syrup)

Dijon mustard

Place 1 cup of rinsed quinoa in a medium pot with 1 3/4 cups water and a pinch of salt. Bring to a boil, cover, simmer on low heat 12-15 minutes (or until water is gone). Turn heat off, let stand 5 minutes, then let cool uncovered.

While the quinoa is cooking make the Raw Apple Cider Vinaigrette. Place all ingredients in a small bowl and whisk, or in a small jar, sealed with a lid and shaken.

Place carrots, celery, scallions, cilantro, garlic and almonds in a large bowl.

Toss with the vinaigrette and the cooled quinoa.

Add more salt, pepper and vinegar to taste.

Sprinkle in the cayenne and optional allspice.

Toss well and serve, or refrigerate until serving.

Such a delicious and easy lunch! I didn’t have celery on hand so I subbed sliced purple cabbage. I’ll definitely make this again.

Wonderful recipe and the result is a very very tasting salad. A new favorite for sure!

I did not had almonds in my pantry but found a bag of walnuts and used them instead. That worked well too! The all spice was missing too, so after a quick google I made my own.
 I have to say, adding all spice really lifts the salad to another level! Yum!
