Prep. Finely chop the onion, mince the garlic, and chop the bell pepper.

Mix the paprika, black pepper, American chili powder, and cumin in a small bowl.

Cook. In a small saucepan, melt the butter or fat and gently cook the onion over medium heat until translucent.

Add the garlic, bell pepper, and the spice mix. Stir, and cook for two minutes to extract the flavors.

Add the stock and the rest of the ingredients. Stir until well blended. Simmer on medium for 15 minutes. Taste and adjust as needed.

Use. Divide it in half and use half to mop the meat when cooking. Use the remainder to splash on the meat when you serve it.

Prep. In a small bowl, mix the American chili powder, black pepper, and salt. In a large bowl, mix the ketchup, mustard, vinegar, Worcestershire, lemon juice, steak sauce, molasses, honey, hot sauce, and brown sugar. Mix them, but you don&#039;t have to mix thoroughly.

Finely chop the onion and crush or mince the garlic cloves.

Cook. Over medium heat, warm the oil in a large saucepan. Add the onions and sauté until limp and translucent, about 5 minutes. Crush the garlic, add it, and cook for another minute. Add the dry spices and stir for about 2 minutes to extract their oil-soluble flavors. Add the wet ingredients. Simmer over medium heat for 15 minutes with the lid off to thicken it a bit.

Taste and adjust. Add more of anything that you want a little bit at a time. It may taste a bit vinegary at first, but that will be less obvious when you use it on meat. I recommend you run with my recipe the first time and then you can make it your own. Strain it if you don&#039;t want the chunks of onion and garlic. I like leaving them in, they give the sauce a home-made texture.

Serve. You can use this sauce immediately as you would any other BBQ sauce, but I think it&#039;s better when aged overnight. You can store it into clean bottles in the refrigerator for a month or two.

Separate each bun into 2 halves. Place 7 bottom bun halves, cut sides up, in single layer in 9-inch springform pan; press gently to form even layer. Brush with about 1/3 of the butter. Cover with 10 wiener halves, cutting into smaller pieces as necessary to form even layer.

Spoon ketchup into small resealable plastic bag, then spoon mustard into separate bag. Cut off small piece off one bottom corner of each bag. Use to drizzle 1/3 &lt;u&gt;each&lt;/u&gt; of the ketchup, then mustard over wieners in pan.

Place 2 bun bottoms and 4 bun tops, cut sides up, over wieners in pan. Brush with half of the remaining butter. Top with layer of 10 of the remaining wiener halves. Drizzle with half &lt;u&gt;each&lt;/u&gt; of the remaining ketchup and mustard

Cover with remaining bun halves, cut sides down. Brush with remaining butter.

Cut remaining wiener halves crosswise in half. Arrange on top of wiener &quot;cake.&quot;

Bake 10 min. Cool cake 3 min. before removing rim of pan. Top with relish, and swirls of the remaining ketchup and mustard.

Blend 1 cup chicken broth with 2 cups pineapple, garlic and ginger in blender until smooth. Add ketchup, Worcestershire sauce, Sriracha sauce and cornstarch; mix well.

Place meat in shallow dish. Pour 1-1/2 cups pineapple sauce over meat. Refrigerate 2 hours to marinate. Meanwhile, bring remaining pineapple sauce to boil in saucepan, stirring constantly; cook and stir 1 min. Remove from heat; cool.

Heat grill for indirect grilling: Light one side of grill, leaving other side unlit. Close lid; heat grill to 350°F.

Remove meat from marinade; discard marinade. Place meat, fat side up, on grate over unlit area. Grill 2-1/2 to 3 hours or until meat is tender and done (180°F).

Meanwhile, reserve 1/2 cup of the cooked pineapple sauce for serving with the cooked meat; refrigerate until ready to use. Combine remaining pineapple sauce with rice, peppers, remaining chicken broth and remaining cut-up pineapple; spoon onto center of large sheet of heavy-duty foil with sides of foil turned up. Fold foil to make packet. Refrigerate until ready to grill.

Remove meat from grill; cover. Let stand 15 min. Meanwhile, place foil packet on grate over lit area of grill; cook 12 to 15 min. or until rice is tender.

Cut slits in foil to release steam before carefully opening packet. Fluff rice with fork. Add onions; mix lightly.

Cut meat across the grain into thin slices; place on platter. Drizzle with reserved pineapple sauce. Serve with the rice mixture.
