Combine ingredients in a cocktail shaker. Fill with ice, and shake briskly for 10 seconds. Strain into a chilled cocktail glass.

Don’t let the sugar cube and dainty bubbles fool you: This is a very stiff drink.

Place sugar cube in a coupe glass and soak with Angostura bitters. Add a handful of cracked ice cubes and Cognac; top with Champagne. Drizzle with Chartreuse. Add ice until almost brimming.

This classic 19th-century cocktail’s name means “jewel” in French, in supposed reference to its combination of gem-colored spirits: diamond-clear gin, ruby-red sweet vermouth and emerald-green Chartreuse. While the original — often attributed to Harry Johnson, who published a recipe in the 1900 edition of his “New and Improved Bartender’s Manual” — called for equal parts, this variation skews the drink toward modern palates by reducing the amount of green Chartreuse. The final drink is balanced and dry, yet still plenty herbal. Serve and sip as is, or split between two very small, very pretty glasses for a petite-in-stature, big-in-flavor nightcap.

Fill a mixing glass or a cocktail shaker with ice, and add the gin, vermouth, Chartreuse and bitters. Stir for 30 seconds, then strain into a chilled coupe or Nick and Nora glass. Garnish with a Maraschino cherry.

An herbal variation on the classic Bees Knees, this gin cocktail is made with Yellow Chartreuse, honey, and lemon.

Yellowjacket (Gin and Yellow Chartreuse Cocktail)

oz gin ((I used Malfy con Limone))

½ oz Yellow Chartreuse

lemon juice

½ oz honey syrup ((recipe in Notes below))

Combine all ingredients in a cocktail shaker and fill it 3/4 with ice.

Shake until chilled, then strain into a cocktail glass.

Garnish with a lemon twist.

This crisp, herbal cocktail is perfect for autumn with white rum, green Chartreuse, and a homemade apple cinnamon syrup.

First Frost (Rum and Green Chartreuse Cocktail)

1½ oz white rum ((I used Cruzan Aged White Rum))

oz lime juice

½ oz Green Chartreuse

dry vermouth

½ oz apple cinnamon syrup* ((syrup recipe below))

Shake until chilled, then strain the liquid into a coupe glass.

Garnish with an apple rose or apple fan.

Chartreuse de poule faisane : le montage

Une poule faisane

Un chou vert frisé de taille honorable

navets et carottes

blancs de volaille de 100 g

oeufs pondus de fraîche date

la moitié de leur poids en crème fraîche

une demi morteau ou 150 g de lard fumé

une pointe de muscade râpée

Sel et poivre du moulin

Etape 1

Etape 2

et placer en alternance les bâtonnets de carottes et navets blanchis. A vous d'imaginer des décors.

Etape 3

Dans le fond continuer le motif ou tapisser avec des légumes taillés en triangles ou des rondelles de saucisse de morteau en rosace.

Peu importe le motif, à ce stade déjà on jubile !

Etape 5

Ensuite on fixe ce décor à la poche à douille. avec de la farce mousseline qui doit se tenir et que vous avez réalisé à l'étape 1 avec les blancs de volaille.

Etape 6

Lisser à la spatule trempée dans l'eau froide pour éviter l'adhérence.

Etape 7

Et on place pour commencer une mince couche de chou braisé et quelques lardons juste raidis.

Etape 8

On enchaîne avec une couche de poule faisane. On équilibre avec des morceaux de flanc et de cuisses (attention aux tendons très coriaces des cuisses).

Etape 9

Puis on répète l'opération en alternant successivement le chou et la poule...

Etape 10

... jusqu'à atteindre le sommet, le Nirvana !

Une astuce : terminer avec le reste des légumes cuits.

et on finalise en fermant avec de la farce mousseline. La chartreuse est prête à être cuite.
