Easy burrito bowl recipe loaded with juicy grilled chicken and ready in about 30 minutes

Grilled Chicken Burrito Bowl

Boneless, Skinless Chicken Breasts

Cup Cooked Brown Rice

Lime

Avocado (sliced)

Cups Mixed Greens

½ Cup Black Beans

½ Cup Canned corn, drained (or grilled)

Tomatoes

Tbsp Greek yogurt

½ Red onion (diced)

Jalapeno Pepper (sliced)

Sea salt and black pepper,

cilantro,

Tbsp Olive oil

lime juice

Paprika

½ tsp Ground Cumin

¼ tsp Chili Powder

¼ tsp Garlic Powder

¼ tsp Onion Powder

¼ tsp Dried Oregano

In a ziploc bag, mix all marinade ingredients until smooth. Add chicken, seal the bag and shake until chicken is evenly coated.

Heat a grill pan or an outdoor grill over medium-high heat. Add chicken and cook for about 5-7 minutes on each side, or until cooked through and no longer pink in the inside.

Remove from the grill and let it rest for 5 minutes before slicing.

In a small bowl mix cooked rice with lime juice, chopped cilantro, sea salt, and freshly ground black pepper.

Toss to combine then set aside. To assemble the bowls, add the greens at the bottom of each one, then 1 sliced chicken breast.

Divide the remaining ingredients among the 2 bowls. Garnish with fresh cilantro and jalapeno and enjoy!

The refried beans makes it juicy inside without being soggy, adds flavour and holds it all together so the filling doesn&#x27;t come tumbling out when you pick it up!

Chicken Burrito

tortillas (, flour (approx 20cm/8" wide))

tsp each onion powder, dried oregano, salt

cumin powder, paprika

tsp black pepper

tsp cayenne pepper ((optional, adjust to taste))

/ 1.2 lb chicken breast

olive oil (, separated)

onion (, chopped)

garlic (, finely minced)

red capsicum/bell pepper (, diced)

400 grams/14 ounces refried beans (, canned (Note 2))

water

white rice (, plain (cooked, Note 3))

Mexican Red Rice ((the best for Burritos!))

corn

(150 grams) cheese (, shredded (Mexican blend, cheddar, tasty, Montery Jack))

coriander/cilantro (, finely chopped)

Avocado sauce

Sour cream

Salsa ((restaurant style, smooth))

Burrito Seasoning - Mix Seasoning ingredients. Drizzle 1 tbsp oil over chicken, mix to coat. Sprinkle with Seasoning, toss to coat.

Cook chicken - Heat 1 tbsp oil in a large skillet over high heat. Add chicken, cook 2 minutes. Turn and cook 1.5 minutes. Remove, rest 2 minutes then chop.

Saute onion - In the same skillet, add onion and garlic, cook 1 minute. Add capsicum, cook 2 minutes until onion is translucent.

Finish Filling - Add refried beans, diced chicken and water. Stir and cook for 2 minutes until reduces slightly. Should be thick and juicy, not watery and not dry/stodgy! Let cool 5 minutes - will thicken.

Gently warm tortillas in microwave (makes them pliable), lay on work surface.

Place rice on lower third, top with Chicken Filling, corn, cheese then sprinkle with coriander. Fold up, burrito style.

Toasting: Either pan fry over medium high heat (no oil) for 2 minutes each side to make tortilla crispy and melt cheese a bit OR wrap tightly in foil and bake in oven 10 minutes at 180°C/350°F.

Dunk in sauce(s) of choice or douse with hot sauce of choice, and devour! Suggestions: Avocado Sauce, Guacamole, sour cream, Restaurant Style Salsa, Queso, Nacho Cheese Dip.

Chicken Burrito Recipe for busy people! Meal prep 17 chicken burritos in an hour in Instant Pot or on the stove and freeze for later. Or turn chicken burrito into a low carb burrito bowl.

green or red cabbage (thinly shredded)

17 large whole wheat tortillas

In Instant Pot, add brown rice, black beans, chicken breasts, taco seasoning, cumin, garlic powder, salt and broth or water. No need to stir.

Close the lid, turn pressure vent to Sealing and press Pressure Cooking on High for 20 minutes. In the meanwhile, chop cilantro and onion; shred cabbage and cheese.

After Instant Pot has finished cooking, do Quick Release by turning the valve to Venting. If beans look a bit dry on top, it's OK. They will soak up more liquid as you stir.

Shred chicken using 2 forks right in the pressure cooker. Then add salsa, corn, cilantro and green onion. Stir. Your chicken and rice burrito filling is ready.

Instant Pot

The only difference is that you will have to use 2 x 15 oz cans of low sodium black beans, rinsed &amp; drained.

In a large pot, add brown rice, chicken breasts, taco seasoning, cumin, garlic powder, salt and broth or water (everything but black beans). Cover, bring to a boil, reduce heat to low and cook for 45 minutes or until water is absorbed.

Shred chicken right in the pot. Add canned black beans, salsa, corn, cilantro and green onion. Stir. Your chicken and rice burrito filling is ready.

Stovetop

Tear 17 sheets of aluminum foil for wrapping the burrito.

Place tortilla on top of foil. Add 3/4 cup of filling below the center and near to the edge closer to you. Top with some shredded cabbage and cheese.

Fold up the bottom to almost cover the filling. Then fold up the edges. Roll up tightly and then roll again in foil. Picture tutorial above will help.

How to Wrap Burrito

If frozen, thaw first overnight in the fridge.

Bake at 450 for 20-25 minutes. It takes a while for burritos to get warmed through and cheese to melt. I was surprised as well.

That's why I like to broil for 10-15 minutes.

You can also warm burritos up in a microwave without tin foil. Keep your eye on it as ovens vary. I would start with 2 minutes.

Healthy Chicken Burrito Recipe

Quick and easy dinner that everyone will ask for again and again!

Preheat oven to 400°F and spray a 9x13&quot; casserole with non-stick spray, set aside.

Remove skin from chicken and pick the meat off in bite-size pieces. Place into a bowl.

Set a 12&quot; skillet over medium heat, add burrito filling ingredients. Stir to combine.

Cook the burrito filling mixture until it’s warm, about 5 minutes.

Add in the chicken and stir to combine. If there is a lot of moisture in the skillet keep cooking over medium just until the water cooks off.

Add an equal amount of chicken to the center of each burrito and top them equally with 1 ½ cups of the shredded cheese (reserve ½ cup).

Roll them up burrito style and set them seam side down in the prepared casserole dish. Spoon the salsa over the burritos and top with remaining shredded cheese.

Add the dish to the oven and bake for about 15 minutes or until the cheese is melted and the burritos are warm throughout.

Marinate

Marinate the chicken: In a bowl or sealable plastic bag, combine the chicken, chili powder, cumin, oregano, salt, pepper, garlic, and vinegar. Marinate for at least 30 minutes or as long as overnight.

Cook

Cook the chicken: Heat the olive oil in a large skillet over medium-high heat. Saute the chicken pieces for 8-10 minutes until golden brown and cooked through. Remove the chicken from the pan.

Vegetables

Prepare the fajita veggies: To the same pan, add in the olive oil, peppers, onion, oregano, and salt. Sauté for 5-6 minutes until softened and caramelized.

Beans

Prepare the beans: Add the beans, chili powder, cumin, and lime juice to a saucepan over medium heat. Cook the beans for a few minutes, stirring occasionally. Taste and add salt if needed.

Rice

Prepare the cilantro lime rice: Prepare the rice according to package directions. Once cooked, stir in the olive oil or butter, lime juice, and cilantro.

Assemble

Assemble the burritos: Place the tortillas between damp paper towels and microwave for 30 seconds to make them soft and pliable. Place each tortilla on large squares of tin foil. Place portions of the chicken, rice, veggies, beans, and any extra fixings in the middle of the tortilla. For each burrito, bring the bottom half of the tortilla up over the pile of fillings and tuck the bottom edge under the pile. Fold each side of the tortilla into the middle and roll up the burrito so it’s seam side down and in the middle of the tin foil. Package up the burrito in the tin foil. Enjoy!`

In a large bowl add chopped lettuce, corn, beans, rice and cooked chicken

To make the chicken, stir together oil, lime juice, chopped chilies, adobo sauce, garlic powder, and salt in a large bowl. Add chicken and toss to coat. Cover and let sit in the refrigerator for at least 2 hours or up to overnight.

Heat a large pan over medium-high heat. Remove chicken from marinade, and add to pan. Cook, stirring, until cooked through, about 5 minutes. Set aside.

To make the rice, add salt and rice to a pot of boiling water. Return to a boil, then reduce heat, cover, and simmer until water is absorbed and rice is tender, 15-18 minutes. Uncover and fluff with a fork, then toss in lime zest, lime juice, cilantro, and additional salt to taste.

To assemble, arrange rice and lettuce in the bottom of a serving bowl and top with the chicken, diced tomatoes, diced avocados, corn, black beans and red onions.
