Chicken Pasta Salad

Boneless Skinless Chicken Breasts

1½ Tbsp Olive Oil

Garlic Clove (minced)

salt and black pepper

oz Dry Penne

2-3 Tbsp Chopped Fresh Thyme

Tbsp Fresh Chopped Oregano (or dried)

Cups Cherry Tomatoes (halved)

Yellow Bell Pepper (seeds removed, thinly sliced)

½ Cup Green Olives (sliced

Red Onion (thickly sliced)

⅓ Cup Ground Parmesan Cheese

Cups Packed Arugula (roughly chopped)

Tbsp Extra Virgin Olive Oil

Tbsp White Wine Vinegar

Tsp Honey

Garlic Cloves (pressed

In a small bowl, add all the dressing ingredients and whisk until well combined. Set aside.

Meanwhile, cook the pasta in a pot of boiling salted water, according to the package directions. Drain, rinse with cold water and transfer to a large mixing bowl. Set aside.

While the pasta is cooking, prepare the chicken. Slice the chicken breasts crosswise to create long (0.5-inch thick) strips.

In a mixing bowl, combine 1 tablespoon olive oil with the thyme, oregano, garlic, and a pinch of salt and pepper.

Add in the chicken pieces and stir to coat. Heat a large non-stick pan over medium heat. Add the chicken in a single layer, and cook for 6-8 minutes, or until cooked through and golden on the sides.

Transfer the chicken along with any accumulated juices to the pasta bowl. Add the pepper and onion, cherry tomatoes, olives, parmesan, and arugula.

Pour over the dressing and toss to combine. Season to taste with more salt and pepper, if necessary, and serve warm or chilled.

I made this pasta salad for my husbands birthday and he loved it! After trying the dressing ratio in the recipe, I did 4 TBLS red wine vinegar and 1/3 cup olive oil just to make it a little less dry (the next time I made it). It was a huge hit. We’ve taken this on several picnics. This will be a recipe I make for the rest of my life. Highly recommend.

I'm not a fan of pasta salads at all. However, our family hosted a large gathering for Christmas and I decided to try this one as a "side" dish. I have to admit, it was pure deliciousness! Everyone loved it! I've made it 4 or 5 times since then and it's my definition of pasta salad. So easy to make. I followed the recipe, just added more chicken. Give it a try, you'll love it.

We have tried several pasta salad recipes and they are always lacking. I resisted my urge to change the recipe the first time and I am glad I did. The only change: I doubled it, because it’s so nice to have leftovers for our family of four and this was a hit! Great pasta salad! I added a yellow bell pepper, skipped the bacon and dill, and used white wine vinegar instead of red but it was delicious! My husband raved about it!

Really great recipe!  I had to make substitutions due to a lack of interest in running to the store, but it was still amazing.  Left out the dill since I was out, and added diced, fresh mozzarella instead of feta (due to husband's preferences) but will try again with the feta for sure!  Also, added some grilled zucchini, roasted red bell pepper and a little extra bacon and garlic.  Seriously a good recipe for a hot day when any hot food sounds too heavy.  Grilled the chicken and used my instant pot for the pasta so kitchen stayed cool, and my husband and daughter ate two bowls each!  Win!

the first time i made this, i had to substitute the red wine vinegar with balsamic, and after making it again using red wine vinegar this time, i would suggest trying balsamic! i left the rest of the dressing the same of course. overall though this is a great recipe!! really good for picnics!

Chicken Pasta Salad Recipe

oz spiral pasta

c Italian Salad dressing

mayonnaise

bacon

c cubed Colby Jack cheese

c green bell pepper (chopped)

oz cherry tomatoes (halved)

avocado (peeled, pitted, chopped)

Boil water in a medium pot. Add the pasta and cook until firm, about 10 minutes. Drain and rinse with cold water. Set aside.

Add the Italian Dressing and Mayo to a small bowl. Whisk together until smooth.

In a large bowl, add pasta, chicken, bacon, cheese, green bell pepper, cherry tomatoes, and avocado.

Pour the dressing over the top and stir until evenly covered.

Pasta (gluten-free if needed or whole grain)

Italian salad dressing (homemade or store-bought)

Plain Greek Yogurt

Cook pasta according to the package instructions, stirring occasionally, until pasta is cooked to al-dente. Once cooked, drain well in a colander and run under cold water to stop the cooking process.

In a mixing bowl, whisk together Italian salad dressing, yogurt, and pesto sauce until smooth.

Rub the chicken with seasonings and olive oil. Heat a large skillet over medium-high heat.

Add chicken and cook undisturbed for about 5 minutes, then flip and continue to cook for 3-5 minutes more (depending on the cooked chicken to a chopping board and slice.

Cut the tomatoes in half and set aside. To a large salad bowl, add the cooked pasta, basil leaves, shredded chicken, and tomatoes.

Sprinkle parmesan cheese and pour the dressing on top, toss well to coat.

Garnish with some more parmesan cheese and freshly cracked black pepper. Serve and enjoy!

Chicken Pasta Salad with Creamy Dressing

salt ((to cook pasta))

chicken (, shredded or finely chopped (Note 1))

/ 5 oz bacon (, chopped)

celery (, finely sliced)

red capsicum / bell pepper (, finely diced)

green onions (, finely sliced)

carrots

shredded cheese (cheddar, tasty, Colby)

avocados ((small/medium),

mayonnaise egg

sour cream (, full fat (low fat ok too))

tbsp cider vinegar

Dijon mustard

tsp sugar

tsp salt

tsp pepper

Cook pasta: Bring a large pot of water to the boil. Add salt, then cook pasta per packet directions. Drain well, let cool.

Dressing: Mix Dressing ingredients in a bowl. Set aside 10 minutes+.

Cook bacon: Place bacon in a cold non-stick skillet (Note X). Turn stove on to medium high, then cook bacon until golden. Drain on paper towels.

Toss! Place cooked pasta in a large bowl along with all the Pasta Salad ingredients, reserving some bacon for garnish. Pour over Dressing, then toss well.

Set aside for 20 minutes. Transfer to serving bowl, sprinkle with remaining bacon. Serve!

Storage: Keeps for 3 - 4 days in the fridge. Best to bring to room temp before serving!

In a small bowl, whisk all ingredients together until dressing is well combined and smooth.&nbsp;

In a large skillet bring I inch of water to a boil. Add asparagus pieces and cook about 3 minutes, or until still a little crunchy. Drain and rinse with cold water. Cool to room temperature.

In a large bowl combine all ingredients and add dressing and toss well. Chill for 4 hours. Toss salad. Add 2-4 Tablespoons of olive oil, as needed, if dressing has absorbed into the pasta. Serve.

Cook Pasta - Cook the pasta according to package directions, then set aside to cool.

Chicken

Cook Chicken Breast - Heat oven to 450°F. Toss chicken breasts in olive oil and balsamic vinegar. Season with salt &amp; pepper. Bake chicken breasts according to their size: 5 oz (12-15 min), 7 oz (15-20 min), 10 oz (20-25 min), or until the internal temperature reaches 165°F.

Kale

Prepare Kale - Use a paring knife to separate the kale leaves from the stem. Tear into bite-sized pieces, then wash in cold water. Spin until dry.

Vinaigrette

Vinaigrette - Shake together all vinaigrette ingredients in a small jar or salad dressing shaker.

Layer

Layer- Divide between four 1 pint or larger jars in the following order:vinaigrette (bottom)chickenpastakalesunflower seeds, feta cheese &amp; dried cranberries (top)Seal and refrigerate for up to 4 days.

Serve- To serve, shake everything out into a bowl and toss up until coated in the vinaigrette.

This Kale Chicken Pasta Salad will convert a kale hater into a kale lover! It's perfect for meal prep, a picnic or dinner! With a delicious balsamic vinaigrette, dried cranberries, crunchy sunflower seeds and salty feta, it's packed full of flavor.

This is one of my favorite ways to eat kale! Kale can sometimes be bitter, so I'm sharing my tricks to get the bitterness out of kale, and to keep it fresh for meal prep.

INSTRUCTIONS

01:52 - Chop, wash and dry kale.

02:39 - Toss everything together and enjoy!


Jar Salads

1. Place the ingredients into the four 1-pint jars in the following order: balsamic dressing, chicken (cooled completely), pasta, kale, cranberries/feta/sunflower seeds.
2. To serve jar salads, shake out into a clean bowl and toss up in the vinaigrette.

Storage
------------
1. Stored in jars or separately (not tossed in vinaigrette), this salad can keep for up to 4 days in the fridge.
