This Amazing Chicken Quesadilla has been a favorite in our house for so many years. &nbsp;This is great for a week night meal, but it's also such a crowd pleaser, serve it at a Mexican-themed dinner party or at your next party. &nbsp;And go with the homemade taco seasoning, it's easy to make and is so good!

Amazing Chicken Quesadilla

olive oil

lbs boneless, skinless chicken thighs

Salt and pepper,

tbsp taco seasoning

tbsp flour

chicken stock

vegetable oil

flour tortillas

cheddar cheese, shredded

scallions (green onions), chopped

green enchilada sauce (optional)

green chiles ((we like Old El Paso))

garlic cloves, peeled ((we prefer

Salsa and sour cream,

Pre-heat oven to 200°F.

Heat the olive oil in a large skillet over medium heat.

Lightly salt and pepper the chicken pieces.

Cook the chicken in the oil until no longer pink, about 8 minutes.&nbsp;

Add the taco seasoning and flour and stir to coat the chicken pieces.

Add the chicken stock and simmer for about 8 minutes, or until slightly thickened.

Using a slotted spoon, remove the chicken from the skillet to a medium bowl, and pour the sauce into another bowl. &nbsp;Set both aside.

In a non-stick skillet, heat 1 teaspoon of the vegetable oil and when hot, add 1 tortilla.

To the tortilla add a handful of cheese, then a pinch of scallions, then about 1/2 cup cooked chicken.

Moving quickly, spoon over a couple spoonfuls of the cooked sauce and green enchilada sauce (if using).&nbsp;

Using a garlic press, press one garlic clove over the top, or if not using a garlic press, sprinkle about 1/4 teaspoon of the minced garlic over the top.&nbsp;

Top with another handful of cheese and top with another tortilla.

Using a spatula and carefully holding the top tortilla, flip the quesadilla.

Cook until nicely browned on both sides. &nbsp;Remove from skillet and place on a baking sheet and place in oven to keep warm.

Repeat the process for remaining 3 quesadillas.&nbsp;

Cut into fourths and serve with salsa and sour cream.

INSTRUCTIONS FOR MAKING THE BEST CHICKEN QUESADILLA

Quesadilla (Beef, Vegetable or Chicken)

tortillas

(200 grams) shredded Monterey Jack cheese ((or other of choice) (Note 1))

coriander/cilantro

corn kernels ((frozen thawed

ONE Filling of Choice, below ((beef, chicken

tsp each onion powder, dried oregano, salt

tsp each cumin powder, paprika

tsp each black pepper, cayenne pepper (optional)

garlic (, minced)

onion (, finely chopped)

beef / mince

red capsicum/bell peppers (, diced)

tomato paste

(65 ml) water

500 g/1 lb chicken thighs (, skinless boneless (Note 2))

onion

red capsicum/bell pepper (, diced)

onion (, diced)

black beans, drained ((400 grams/14 ounces))

capsicum/bell pepper (, diced (any colour))

corn ((canned drained or frozen thawed))

Place tortilla on work surface. Sprinkle one side with a bit of cheese, top with Filling of Choice. Sprinkle with corn*, coriander and top with cheese. Fold in half.

Preheat non stick skillet over medium low heat (no oil, if pan is not non-stick use 2 tsp oil).

Place quesadilla in skillet, press down lightly, cover with lid. Cook for 3 minutes until underside is super golden brown and crispy.

Carefully flip over the folded edge (see video). Press down lightly. Cook for 3 minutes until crispy (no lid).

Transfer to cutting board, cut in half. Serve immediately!

Dipping Sauce options: Sour cream, salsa, Avocado Sauce (pictured)

QUESADILLAS

Mix ingredients in a small bowl. Use for one of the Fillings Options below.

Spice Mix:

Heat oil in a skillet over high heat. Add onion and garlic, cook for 2 minutes.

Add beef and cook, breaking it up as you go. Once it changes from pink to brown, add capsicum. Cook for 1 minute.

Add tomato paste, water and Spice Mix. Cook for 2 minutes. Transfer to bowl, cool.

Beef Filling:

Drizzle chicken with 1 tbsp oil, toss to coat. Sprinkle over Spice Mix, toss well to coat.

Heat 1 tbsp oil in a large skillet over high heat. Add onion and garlic, cook for 2 minutes. Add capsicum and cook for 1 minute. Transfer to bowl, cool.

Return pan to stove, reduce to medium heat. Add remaining 1/2 tbsp oil. Add chicken and cook for 3 minutes until deep golden. Turn and cook for 3 minutes until cooked through.

Transfer chicken to cutting board, rest for 2 minutes then dice and cool. Combine with capsicum mixture.

Chicken Filling:

Heat oil in a skillet over high heat. Add onion and garlic, cook for 2 minutes.&nbsp;Add capsicum, cook for 1 minute.

Add beans, corn, tomato paste, water and Spice Mix. Cook for 2 minutes. Transfer to bowl, cool.

Best Quesadillas I’ve ever had...or made.  I used packaged, cooked chicken breasts from Costco.  Just added the chicken and spices to the peppers and onions,  so yummy.  I will definitely keep this recipe and make it again.

Delicious!! Loved the seasoning on the chicken it really gave it that mexican flare. I shredded up the chicken to make it all flow together better. And I used a pre-shredded four cheese mexican blend but I am sure freshley shredded cheese would melt a lot easier and make the cheese and ingredients come together a lot nicer. Loved this! Chicken Quesadilla Recipe

Whisk together mayo, taco seasoning, garlic salt, and hot sauce. NOTE: You can use whatever hot sauce you prefer. We love to keep around the mild sauce from taco bell, so I always use that plus my husbands favorite, Valentino.

Spread mixture on one side of tortilla. Sprinkle desired amount of shredded chicken on top, then cheese. Add sauce to a second tortilla and place on top.

Heat in the microwave for about 20 seconds, then put on the stove, until nice a crisp. If you have sauce left over, use for dipping!

Chicken Quesadilla

A cheesy chicken filled tortilla is pan-fried until crisp for a quick meal.

olive oil (plus extra as needed)

small bell pepper (red

onion (diced)

chicken

taco seasoning (or fajita seasoning)

monterey jack cheese (or mexican blend, shredded)

Heat 1 tablespoon olive oil over medium-high heat. Cook onions 2-3 minutes or until softened. Add bell peppers and cook an additional 2-3 minutes.

Stir in chicken, seasoning and ¼ cup water. Simmer 3-4 minutes or until most of the liquid has evaporated.

Lay out the tortillas and sprinkle with ½ cup cheese on one half of the tortilla. Add ¼ of the chicken mixture. Fold half of the tortilla over the filling. Brush the outside of each tortilla with olive oil.

Heat a non-stick pan over medium-low heat (or a griddle). Lightly brown each quesadillas 3-4 minutes per side or until golden and cheese is melted.

Cool 2-3 minutes and cut each tortilla into 3 pieces.

These Chicken Quesadillas made with leftover rotisserie chicken are one of my go-to, easy dinner ideas for busy weeknights!  When I want to make something that my whole family will eat but I don&#x27;t have much time or energy left for any REAL cooking, it&#x27;s this chicken quesadilla recipe to the rescue.  The edges are nice and crispy with loads of melted cheese inside!

Heat oil or melt butter in a large pan or griddle over medium heat.

Working quickly, add 1-2 tortillas to the pan and sprinkle about 1/3 to 1/2 cup of the shredded cheese over each tortilla.  Add 1/3-1/2 cup of shredded chicken, along with a couple of tablespoons of beans, and a generous sprinkle of chopped green onions and cilantro.

Fold each tortilla in half on top of the fillings, then cook until golden brown on the bottom.  Flip and cook on the other side until golden brown, the cheese is melted, and the fillings are hot.

Repeat with remaining tortillas, cheese, and filling ingredients.

Slice into wedges and serve with sour cream, guacamole, and pico de gallo or salsa.

Easy Chicken Quesadilla Recipe

Colby Jack cheese (shredded)

Add the Colby Jack cheese and sharp cheddar cheese to a medium bowl, and mix to combine.

Find a frying pan large enough to fit a large flour tortilla flat on the pan (alternatively, you could use smaller flour tortillas).

Place the pan over medium heat, and when the pan is hot, add a tsp of butter to the frying pan, spreading the melted butter on the pan.

Place the flour tortilla flat on the pan so one side of the tortilla is in contact with the buttered pan.

Add ½ cup of shredded or chopped chicken to the flour tortilla and then add half of the cheese mixture over the chicken.

Add half of the peppers, tomatoes, and onion on top of the cheese.

Fold the tortilla in half and cook on each side for 2 minutes, allowing for the cheese to melt and all ingredients to cook together.*Be careful not to let the quesadilla burn. If the pan is too hot, remove it from the heat for one minute, then return it to the heat. You want the tortilla browned but not burnt.

Repeat the steps to complete the second quesadilla.Tent the first chicken quesadilla with aluminum foil to keep it warm (or in a 200 degree oven) until both are ready to serve.

Plate and serve with your favorite sides and quesadilla dipping sauces.
